Arepas with Zucchini Salsa Verde. [Photograph: strawberrypepper]
Last week for our Weekend Cook and Tell we asked all of you to say goodbye to summer with a challenge entitled A Fond Farewell to Summer (Produce), a chance to celebrate the end of the season and share your favorite late summer recipes. Let's take a look at some of our favorite farewell dishes.
strawberrypepper used the last of her local zucchini to create a salsa verde for her Venezuelan Stuffed Arepas filled with black beans.
Not yet ready to say goodbye to summer, dbcurrie shared two summery recipes, a Warm Summer Vegetable Stew of zucchini, bell peppers, and tomatoes finished with za'atar, as well as a cool, chile-spiked Spicy Summer Squash Salad.
newRDcook gathered the last of the tomatoes from her CSA share, her backyard, and a neighboring garden to create this Meaty Fresh Tomato Sauce, perfect for ziti.
ElizabethS headed down to her local farmers' market for end-of-season tomatoes and exotic herbs to make a Raw Tomato Sauce with Purple Basil served over calamaretti pasta.

knowwhey's tomatoes were so tasty this year that it seemed unnecessary to doctor them up; a simple Caprese was the prefect way to these thick slices of very red tomatoes. And knowwhey's last of the season corn was incorporated into gorgeous little crocks of Maple Cornbread.
somaR used homegrown Hatch chiles to make this Roasted Hatch Chile and Corn Rice spiked with hot chili oil.
orchidgirl took our challenge to heart and created a The Last of the Summer Produce Salad with corn, tomatoes, and avocado chunks finished with crumbled feta.
MadelynRodriguez has been making the most of late summer with Avocado and Tomato Sandwiches made with her aunt's super buttery homegrown avocados.
Thanks to everyone who shared the last of their summer veggies for this week's Weekend Cook and Tell challenge. Be sure to head over to Talk and read about next week's challenge: Processor Power.
