Sandwich from Paseo Caribbean Restaurant, Seattle
Text from Carey Jones to Kenji Lopez-Alt: "We found a sandwich in Seattle SO GOOD we may Fedex you one to reverse engineer." After learning the hard way that sandwiches shipped across the country don't reheat well (see our article on In-N-Out Burgers for the scary results), the sandwich was instead hand-delivered by Robyn, broken down, reheated as individual components, reassembled, and consumed. Roast pork, pickled jalapeños, garlic mayo, roasted onions, cilantro, possibly the best sandwich of all time.

On the Road Again
Short Rib Torta from Rick Bayless' Xoco in Chicago. I'd like to be that little flag.
