Culinary Ambassadors: Piadina, Street Food in Italy
Serious Eats' Culinary Ambassadors check in from time to time with reports on food fare in their homeland or countries of residence. Here's the latest! (Find out more about CA or join here!) —The Mgmt.

PIADINA!!! Piadina is a snack food from the Romagnola side of Emilia-Romagna. It's cheap, always made in front of you, and you can get just about anything in one. Its made out of thick flatbread that is cooked on the griddle and then folded in half. You can get salame, pancetta, sausage, prosciutto cotto, prosciutto crudo, hot dog, hamburger, chicken patty, mortadella, porchetta....
Provola, provolone, fontina, asiago, squaquerone...
Rucola, radicchio, fresh veggies, grilled onions, grilled bell peppers, grilled zucchini or eggplant. A variety of sauces.
They're pretty much anything you want them to be. They're often served in lunch trucks on the side of the road. My usual piadina is a sausage patty with provola, grilled onion and bell peppers, tomato, and mayo. For this piadina its €4.50, and it's big enough to make a full meal if you add beer. :-D
