Weekend Cook and Tell Round Up: Squash Invasion!

Last week on our Weekend Cook and Tell challenge we asked all of you for your favorite squash recipes for a challenge we called Squash Invasion! Since marrows are so plentiful this time of year the challenge ended up being quite well received, giving us lots of ideas for how to tackle mountains of squash. Let's take a look at some of our favorite squash creations.

The supply of squash coming from strawberrypepper's garden is seemingly endless making squash creativity is a must. Check out this Vegan Summer Squash Galette and Zucchini, Beet, and Potato Latkes next time you are in need of some squash inspiration.

When TheKitchenWitch commented that she had made a zucchini appetizer that was downright sexy, I had to see it for myself. Turns out this Sexified Zucchini stuffed with herbed goat cheese and spinach is a pretty hot little number.

Eight ball squash are possibly the cutest squash around. sillyscorp stuffed hers with Tomato, Basil, and Quinoa for a adorable vegetarian ladies' night dinner.

MadelynRodriguez used her haul of zucchini to make a tasty Burrito Filling with Rice and Roasted Tomato Salsa.

kaatbaro's solution to squash overrun is preserve, preserve, preserve. This educational post is filled with ideas for cooking, freezing, and pickling zucchini.

Forgoing the ubiquitous zucchini bread, Mattrat incorporated a whopping two cups of shredded zucchini into tasty Zucchini Brownies.

Keeping it sweet, newRDcook has been baking up a storm with squash. Sweet Kabocha found its way into Raspberry Oat Bars and these Zucchini Chocolate Chip Cookies are a must try for cookie lovers.

daniela shared perhaps the most obvious squash recipe out there: pumpkin pie. ]Her savory version includes fresh pumpkin, ricotta, and pistachios.
