To me the broccoli quiche sticks out like a sore thumb - has anyone ever eaten broccoli in France, or even seen it in the markets?

@Punch--I can't speak for what's there currently, but when I was in France in the mid 80s, I certainly saw broccoli in the markets and ate it in many homes and restaurants. Are you suggesting that broccoli is currently out of fashion in French cuisine or that broccoli is just not a vegetable true to their cuisine, that the French would eat?

no - I am suggesting that it is rarely eaten, at least in my experience. Perhaps the people I know are George Bush wannebes. I looked it up in Julia Child's first books, and she says the same thing: see p455 of vol.1, but of course that is a generation ago.

I celebrated yesterday making a stack of crepes filled with a spinach/bechamel sauce. The crepes are egg-free, so perfect for vegetarians.

I have also celebrated my love for anything French vegetarianizing some of my French favorites - niçoise salad minus the tuna, croque monsieur sandwich, French-onion soup , made with a delicious roasted vegetable broth...
