Cook the Book: 'Seasonal Fruit Desserts'
I'd been saving Deborah Madison's Seasonal Fruit Desserts for a time when seasonal fruit meant more than just apples and pears. And now that I've seen the first waves of rhubarb and strawberries (at least here on the East Coast) it really does feel like spring is here. It's just a matter of time before we're awash in peaches, plums, cherries, and all manner of berries.
Madison is a champion of seasonal eating and the recipes in Seasonal Fruit Desserts prove that. Instead of being concerned with baking precious, pretty desserts, Madison relies on fruit at the height of its season to make these recipes work.
Every Monday for the next four weeks we'll be sharing a dessert from Seasonal Fruit Desserts using seasonal fruit that's minimally altered and doesn't require any sort of pastry chef-worthy skills.
