Rewind 100 years and consider what you would be eating this time of year. Probably not the juicy strawberries you got from the grocery store—instead, a jar of sugared strawberries or strawberry jam you made by preserving those berries for later, when the temperature dipped. Though pickling, freeze-drying, smoking, and other forms of food preservation were a way of survival before, now they've become more of fun, crafty projects.
