For last week's Weekend Cook and Tell challenge we wanted to know what all of you were eating to keep healthy. We were curious to see what types of vitamin rich, antioxidant filled superfoods all of you were incorporating into your diets that are both delicious and beneficial. Healthy eating seems to be weighing heavily on everyone's minds and this was one of our most popular Weekend Cook and Tell topics yet. Let's take a look at some of our favorite responses.

Rocquie likes to grind sesame seeds with salt into gomasio. This Japanese condiment is rich in minerals, amino acids, dietary fiber, and wonderful sprinkled over a bowl of rice.

Kale was one of the most popular vegetables this week and why not? Barbieri13 sautés it with caramelized onions and sweet potatoes and kale chips are one of keltrue's favorite snacks.

jennywenny has jumped on the greens train as well. Her local CSA has been heavy on the greens and she's been feeling the benefits.

MadelynRodriguez is what you can call a superfoodie. Take a look at her recipes for kamut pasta and watercress salad.

Garlic is LaserLiza's superfood of choice. Not only does it have health benefits but it makes most savory foods taste better.

leebo referred to avocados as "God's butter." Who knew guacamole could be considered a health food?

DessertByCandy doesn't subscribe to the superfoods philosophy but keeps it healthy by eating foods that span the color wheel: red beets, orange squash, yellow mangoes—you get the idea.

kirbie incorporates her favorite antioxidant, green tea, into her cook routine in many ways. Her green tea muffins and green tea yogurt cakes looks particularly intriguing.

For Giasbash6260 every night is a superfood night. Some favorites include nori, spaghetti squash, eel, and salmon.

Finally BobbieAnne listed dark chocolate as a favorite, and yes, with all of its antioxidants and serotonin it does count as a health food.

Thanks to everyone who shared their healthy eating tips for this week's Weekend Cook and Tell. Be sure to head over to Talk and read about next week's challenge: Catastrophic Cupboard Cleanup.
