D'Artagnan is a purveyor of many things delicious—from pâtés to sausages, foie gras to wild mushrooms, game meat to truffles. But right now we're especially interested in their turkeys.

D'Artagnan's certified organic birds are fed organic grains and pure spring water—no protein supplements, no added poultry or fish byproducts, no pesticides or herbicides, and no antibiotics or growth hormones. The result is a bird with great flavor, tenderness, and a 25 percent lower fat content than standard commercially raised turkeys.

We will be giving away 12- to 14-pound organic free-range birds for the duration of the contest. Contest is open only to participants in the continental U.S. Details after the jump.

What's a girl got to do around here to get a free turkey?!?! I will be meatifying the wild mushroom stuffing recipe from Seriously Meatless this week with some good quality chicken stock and maybe a taste of slab bacon. Ridiculously excited to eat it.

Umm... this is my FIRST time making Thanksgiving for a large group of people. Pressure much??? I've been so inspired by all the recipes here, but the Perfect Mashed Potatoes are the ones I think I might not totally screw up. O.M.G. What happened to the days when I would just sit patiently with a plate to be filled??? I'd love to be able to at least say... Oh! And the turkey is organic. Please, save your applause for after the meal... ;)

The Classic Menu, probably with a couple of tweaks, i.e. James Beard's turkey with stuffing on the side. But I can't wait to make the Spiced Pumpkin Pudding Pie. And I'm sure I'll add some more vegetables as side dishes. But JB's method of cooking the turkey rules!

We always do a brined turkey, Bittman's favorite bread stuffing (though we do "dressing" around here and sub Brazil nuts for the pine nuts), two gravies (giblets, and giblet free) mashed potatoes, Brussels sprouts, green peas, Bittman's cranberry relish, Sister Shuberts yeast rolls, and the guests are in charge of dessert. This year it's sweet potato pecan pie with bourbon cream!

Lingonberrys instead of the traditional cranberrys.
Tried them when I was in Sweden almost 30 years ago and now, its a MUST item for Thanksgiving.
