Standing Room Only: That's-A-Burger

One of the best burgers in Chicago, easily.

That's-A-Burger

2134 E. 71st Street, Chicago IL 60649 (map); 773-878-9898
The Short Order: Perfectly proportioned burgers griddled to order.
Want Fries with That? These delicious, highly seasoned fries come with every order.
Want Ketchup? Not needed.

My wife and I drove past this location twice before we finally spotted the tiny neon sign in the window. There is no large indication declaring you've made it, or even a host to greet you at the door.

That's-A-Burger is definitely not a sit-down restaurant—It'd need some actual seats for that—but it's not exactly fast-food either. Orders can take up to 30 minutes since everything is made to order. It's this special attention to ingredients that also makes this easily one of the best burgers in the city.

That's-A-Burger's burger starts with a large, hand-formed patty of fresh beef that's been griddled until expertly seared on the outside. It's then stuffed into a squishy white bun that's also wrapped up with some fries. This is the burger place I've been dreaming about since moving to Chicago.

Inside, the place is small and as advertised, there are absolutely no seats. All the employees are behind glass and you receive your food through a rotating glass pedestal. The room has no decoration, just a large menu plastered on the bright yellow wall.

You can get your burger topped with any number of ingredients including eggs, bacon, griddled onions, and chili. Get it all together and you have a T.A.B. Special. Or you can opt for the Whammy Burger, which strips everything back to a burger, cheese, and an entire Polish sausage. Though intriguing, both burgers seemed more like a dare than an actual meal. So I ordered the cheeseburger with lettuce, pickles, and grilled onions. My wife settled on the turkey burger.

Now, I know the turkey burger sounds like a disaster. I was 100% against it before arriving. The only turkey burger I'll eat without fear is probably the one Kenji created. But I'll be damned if every single person in line while we were there didn't order a turkey burger. It's actually the top thing on their menu (even above the regular burger).

When you order you're given a ticket and an expected wait time. Since there's not much to look at inside, most people leave and come back or call their orders in, arriving precisely at the pick-up time. Since we were told it would be less than ten minutes, we stuck around. The whole order is packed up in a large brown bag and spun around in a pedestal to you.

Like Chicago's best hot dog stands, the fries come wrapped up with the burger, creating a package of greasy carnage. Eat it quickly or the whole mess may steam itself into oblivion. These fries, like a few other hallowed spots, are amazing.

Why does Chicago have so many places with great fries? That should be our cultural export to the rest of the nation. These are expertly seasoned, just a tad short of crisp, and easy to stuff in your face.

The burger is kind of stunningly good. Not nearly as greasy and overwhelming as it easily could be, instead it's perfectly proportioned. The great combo of the sweet griddled onions and freshly crisp vegetables helps. The patty could use a touch more salt, but that's nitpicking.

The turkey burger isn't as good—there just isn't enough fat to compete with the flavor of the cheeseburger. But it's still the best turkey burger I've ever ordered at a restaurant, easily. It's properly seasoned and still really juicy. My wife loved it, and I can see why so many others order it too.

That's-A-Burger may not be the most convenient place to eat on the South Side, but it surely has one of the best burgers in town.

Sorry but that looks disgusting. Especially the fries. They looks like someone sat down on them. Nothing worse than limp greasy fries, with skins left on giving them that bitter taste. The burger looks like it was reheated in a microwave. But I guess one would have to taste it. If Robyn can make disgusting food look delicious with her photography, I suppose an ugly burger and sad, stale looking fries could possibly taste good...

Love the bun!!
@ NickHow many ounces is the burger?

@simon: No need to say your sorry. Chicago has better fries than New York.

@Lvn4life: It's about a half pound. It's massive. Some peope opt for the double, but that just seems crazy.

I like my fries golden and crispy, not pale, limp and wrinkly. I especially can't stand them being seasoned or spiced in any way. Salt is all I tolerate, and ideally I prefer to salt them myself. If that's wrong I don't want to be right.

@simon: That's understandable. These are a little thicker than most fries, and don't have a perfectly crisp exterior like McDonald's fries or anything. I prefer this style because they have more potato flavor and proves that they were freshly cut and fried in house.

Any appearance issues, and there obviously are some, are directly related to wrapping up the fries with the burger. I'm not completely sure why stands in Chicago do this, but it's hallmark of the scene. Nearly all the best hot dog places do this, too. There is something really satisfying about opening the packaging and having it all there for you. Anyway, it certainly makes photography them a lot harder.

As to why you would ever want to salt your fries yourself...that I can't understand. Doesn't the salt just fall off each fry? Shouldn't fries be salted the moment they come out of the fryer?

@Nick - I concur; FRENCH FRY SALTING 101: salt fries as soon as they come out of the fryer! The salt will stick,..

Fries coming out of a 375* deep fryer will stay hot enough to be properly salted by me at my table if they are brought out immediately. So yes, I agree, they should be salted as quickly as possible. If they are not served to you immediately after coming out of the fryer then they are not worth eating. This is why I always wonder why people order fries to go or for delivery, or in places where the fries are cooked ahead and kept under heat lamps. I want them to come out of the fryer, tossed with salt if the cook is skilled enough to do so, and piled up on a plate. That's it. No paper cups, no plastic clam boxes, no wrapping up with other foods. A non crispy fry is a waste of a potato. May as well purée them.

Those pics sure don't seem to be same thing the author describes, but I'll take his word for it. Often times food doesn't photograph so well, as those don't look like 8oz patties, more like some sort of nuked into oblivion fast food burger and the fries appear like the type that have been sitting around forever. Sounds great, looks questionable!

Exactly what @Burger365 says. I screwed this one up. Take it out on me all you want. But let the record stand: That's-A-Burger has extraordinary fries.

I don't get it. Those fries look good to me. They remind of the fries they serve in the Greek Steak Houses in my area. If they taste anything like those, then they're damn good.

The burger looks tasty as well.

Not to pile on, but these fries do appear to be of the once-fried variety. Correct me if I'm wrong.

I might lose my mind.

The burger looks awfully dried out. Was it? Did you order it well done?

@hotdoglover: No, it was really juicy and delicious. My god. I'll apologize for like the forth time that the pictures don't do this place justice.

I don't know. That picture on the top looks great! The fries aren't my style but all in all it was a great review.

I think it all looks delicious to me, and if I had a car, I'd be there in a heartbeat. Man, all these people must be stressed out in anticipation of the holidays, because everyone is cranky and has nothing nice to say. @Nick Kindelsperger, if your wife likes turkey burgers, she should check out the one at Epic Burger in the South Loop: it is by far the best one I've ever had, and I'd more or less given up on them as a genre. And a lot of people like their fries, although I like mine thinner-sliced. But everyone's entitled to their own opinion! Geez!

I cosign...this place is the most slept-on high quality joint ever. I used to drag my ass from the far north side once a week for the EXACT SAME BURGER IN THE PHOTO. Don't let a lack of food styling make you question an expert...it's the real deal.

I don't know about Chicago, but come to Baltimore and eat the best burgers at Burger Bros in Towson, just north of Baltimore. I've had a lot of burgers, but these are wonderful.

I will have to say that these pictures and the "article" reaLly do Thats A Burger" no justice. I have eaten there many times and it is OUTSTANDING EACH AND EVERY TIME! While I have only had the turkey burger, I do HIGHLY recommend it! Im telling you IT IS THE ABSOLUTE B-E-S-T and you will not be disappointed!
