Weekend Cook and Tell Round Up: Pumpkin Invasion!

Last week's Weekend Cook and Tell challenge was about our favorite gourd, the pumpkin. We asked you to share your favorite pumpkin recipes and the results were truly pumkintastic. Here are some of our favorites:

Inspired by two beautiful pumpkins that she picked up at her local farmers' market, ChristineB made a Thai Spiced Pumpkin Soup topped with pumpkin seeds roasted with raw sugar and sea salt.

Onepot took those adorable mini pumpkins and made them into something both nice to look at and eat. Take a look at these Polenta Stuffed Mini Pumpkins.

One gourd didn't suffice for joyyy, she made pumpkin peanut butter cookies and Roasted Corn Pudding in Acorn Squash from 101 Cookbooks.

football foodie cooked up a batch of Healthy & Delicious Pumpkin Turkey Chili for the game last Sunday.

saj1139 isn't a big Rachael Ray fan but this Pumpkin Sausage Lasagna turned out to be a hit.

orchidgirl made her first foray into the world of pumpkin cooking with this Indian-Spiced Pumpkin, Bulgar, and Lentil pilaf.

dbcurrie made dueling pumpkin desserts, pumpkin cookies with peanut butter chips and Paula Deen's Gooey Pumpkin Butter Cakes.

Taking a cue from Orangette, hmw0029 replaced pumpkin puree for sweet potatoes in these biscuits.

kirbie wins the golden pumpkin award for sheer dessert industriousness. Here are just a few of the pumpkin treats that have been featured on Kirbie's Cravings: Pumpkin Mochi, Pumpkin Chocolate Chip Cookies, Pumpkin Tea Cake, Chocolate Chip Pumpkin Bread, Pumpkin Spice Chocolate Chip Cookies, and Pumpkin Bread.
