In Season: Squash

As the leaves turn to beautiful shades of gold, orange, and berry, a whole new selection of squash replace the summer squash we loved so much.
The many varieties of winter squash come in all kinds of shapes—round, elongated, oblong—and colors from honey to bright orange. Some of the most popular varieties are the acorn, amber cup, and butternut. No matter the variety, squash is a great fall vegetable and an excellent ingredient for all your delicious fall recipes.

Winter squash's arrival always marks the start of fall for me as it's the last vegetable from my summer garden. I particularly like my yearly dose of squash lasagna with spinach, mushrooms and a cream sauce.

My first big "thing" to celebrate fall is to head towards the lake (Lake MI) to a huge squash and pumpkin farm and buy a ton of whatever looks good.
I store it in my cool basement and use it whenever possible/all the time.
I seriously could eat it just about every day until January/February, and sometimes do!
I wish I was able to grow it, but walking the 2 acres of huge bins and piles of dozens of different kinds has become a fall ritual that I just love. It has gotten me to try some varieties I had never seen or heard of before, as well as having the best examples of my childhood favorites. Yum. So versatile--from savory to sweet, and I love keeping a reserve of good puree on hand for whatever baking idea pops into my head.

Sorry to say, but I just don't get much enjoyment from squash, just not much flavor to me. And don't even get me started on spaghetti squash, thats no more like spaghetti than a bunch of wet rubber bands.

I just got a squash at the grocery store today that is supposed to be a delicata varietal. It's oblong like a delicata, but is orange with yellow specks on the skin. Does anyone know what it might be? Thanks!

Nevermind - I found out what that squash was that I got... it is an orangetti squash. Not actually a delicata varietal, as the woman at the grocery store told me. It's actually a more flavorful version of the spaghetti squash.
