Gourmet's Adventures With Ruth: "Jon Rowley's Seattle." John Rowley, the "Fish Missionary", shows how to fillet a 40 pound fish. Then he shows Ruth and her friend, actor Tom Skerritt, how to forage for clams and how to prepare a meal on the beach. Also in this episode, chef Greg Atkinson of Canlis Restaurant gives some tips on preparing fish and the differences between good and bad seafood. 3:30 p.m. ET, PBS

Julia and Jacques Cooking at Home: "Roast Chickens." Julia shows three ways to perfectly roast a chicken: whole rack-roasted, trussed and stuffed under the skin with a savory shallot sauté, and butterflied and roasted with a delicate spice rub. 4 p.m. ET, PBS

Avec Eric: "Artisanal." Eric explores the lifestyles of culinary artisans in Tuscany. He'll first go to a farm to gather chestnuts for cooking and for feeding the prize winning cows. Then he checks out the outdoor markets and the Il Palagiaccio dairy to learn about their cheese making process. After, he visits with restaurateur Giovanna Carcasci to where they make a traditional spinach ricotta ravioli. Back at home, Eric makes a French adaptation of the classic Italian linguini carbonara. 4:30 p.m. ET, PBS

America's Test Kitchen From Cook's Illustrated: "Southern BBQ." Alabama BBQ chicken with white barbecue sauce, tangy apple-cabbage slaw, and iced teas. 5 p.m. ET, PBS
