Cook the Book: Pumpkin Baking

Rather than picking just one book for this week's Cook the Book, we went with five. What do they all have in common? Pumpkin, butter, miscellaneous other ingredients, and an oven. Basically our goal this week is to make you eat more pumpkin desserts. We rummaged through our cookbook library to find some favorite recipes: Pumpkin Walnut Cranberry Quickbread from The Sweeter Side of Amy's Bread, Pumpkin Whoopie Pies from Baked, Ginger Custard Pumpkin Pie from The Sweet Melissa Baking Book, Pumpkin Gooey Butter Cakes from Paula Deen's The Lady & Sons Savannah Country Cookbook, and Spiced Pumpkin Muffins with Pepitas from Cowgirl Cuisine.

My signature recipe is a KILLER pumpkin chocolate chip cake. I make it year round but it never tastes quite as good as in the fall. :)

I like to keep it simple with a nice warm bowl of pumpkin oatmeal in the morning! Just a bit of pumpkin, some sweetener, cinnamon, and nutmeg. Simple, yet delicious.

Dave Lieberman's pumpkin mousse is possibly one of the best pumpkin desserts I've ever had or made. I've made it for Thanksgiving, as well as for my annual "Thanksgiving in Spring" party. It's light, sweet, and super pumpkin-ey. And it's even better with crumbled gingersnaps on top. One of my guests literally said she'd swim in a vat of it!

Gotta be this recipe I have for pumpkin cookies. They're soft and cakey, I usually add mini chocolate chips to them, and then ice them with a browned butter cream cheese frosting. Amazing.

Pumpkin pie... not very innovative but yummy!

Chocolate chip pumpkin bread

My pumpkin pie recipe is a riff on the back of the Libby's can. I've never heard anything other than raves:

Use 1/3 cup dark brown sugar & 2/3 cup white sugar instead of all white
Use 1-1/2 cups heavy cream instead of evaporated milk (half & half is OK)
Double the spices, and heap the spoons a bit & add a teaspoon of nutmeg
Use 3 eggs instead of two


Hmm, I love pumpkin roll, pumpkin pie, even pumpkin ice cream.

My favorite is from DeeDee Stoval's Pumpkin book--say what you want about ingredient-focused books, but the "Traditional Pumpkin Pie" in there is pretty great. The secret? Saute the pumpkin (from a can, or steamed-and-mashed) before adding it. Really enhances the pumpkin flavor.

I love this recipe for stuffed pumpkin, it's awesome. Big hit with the family too. I served it with a rich peanut soup. I'm sorry, i can't remember where I found it.

Stuffed Pumpkin

Part 1
1 whole Pie Pumpkin (8-10 inches diameter)(or a hubbard squash)
1/2 teaspoon salt

Part 2
2 Tablespoons vegetable oil
2.5 lbs (1134 grams) Ground Turkey
1 Teaspoon Poultry Seasoning
1 Teaspoon White Pepper
2 Golden Bell Peppers, chopped (alt: can use regular green or red peppers)
1 large Red Onion, chopped

Part 3
1/3 lb (151 grams) Precooked Turkey Sausage
2 teaspoons olive oil
2 teaspoons minced fresh Oregano
2 teaspoons vinegar
1 teaspoon Black Pepper
1/2 teaspoon salt
4 cloves garlic, pressed

Part 4
1 1/4 cups (280 grams) Golden Raisins
1/3 cups (76 grams) Chopped Green Olives, stuffed with pimentos
1 400gram can (14 ounces) Chopped Skinned Tomatoes
3 Large Eggs, beaten

=========
Part 1 – Prepping the Pumpkin
With a sharp knife, cut out a circular top, about 5 inch diameter. Save the top for the lid.
Scoop out the seeds and scrape out the stringy guts until it is clean

Get a STOCK POT that is big enough for your pumpkin. Put the pumpkin in it and cover with water (Also fill the pumpkin). Add 1/2 teaspoon of salt to the water. The idea is to cook the pumpkin from both outside and inside. (If you have an electric cooking coil, place it in the pumpkin to boil the water inside.
Cover the pot, bring water to a boil, then simmer until the pumpkin meat is ALMOST tender when pierced with a fork, about 10-15 minutes
*Do Not Overcook! The pumpkin should remain firm enough to keep its shape. An overcooked pumpkin has the potential to collapse under the weight of the filling later, and it is also really hard to get out of the water.

Dry the outside of the Pumkpin

Part 2 – Meat Mixture
Heat vegetable oil in a large frypan or wok
Add Ground Turkey, Poultry Seasoning, White Pepper, Bell Peppers, and Onion. Cook over medium heat until the turkey is no longer pink. Remove from heat and set aside

Part 3 – Sausage Mixture
In a large bowl, mix together the Cooked Turkey Sausage, Olive Oil, Oregano, Vinegar, Black Pepper, 1/2 teaspoon of Salt, and Garlic

Part 4 – put it all together.
Add the Sausage mixture, Raisins, Olives, and Tomotoes to the ground turkey mixture in a wok or large frypan. Mix well. Cover the pan and cook over low heat for 15 minutes, stirring occasionally
Remove from heat and allow it to cool slightly
Add 3 beaten eggs and mix in thoroughly.

Part 5 – Stuff that Pumpkin
Fill the cooked pumpkin with the stuffing. Press stuffing lightly to pack it. Cover the pumpkin opening with aluminum foil. Place pumpkin in greased shallow baking pan and bake at 350f for 1 hour. When 15 minutes are remaining, replace the foil with the pumpkin lid.
When done, spoon off extra moisture. Allow to cool 15 minutes before serving. This will give the stuffed pumpkin time to firm up as well.
To serve, slice from top to bottom in fat wedges, and put wedges on a dinner plate. Spoon extra filling on top. The entire pumpkin is edible except for the woody stem.

For smaller servings, cut the pumpkin cleanly at the equator, flip the top half into another dish for cutting, and place the bottom half in the fridge for later.

My favorite pumpkin recipe is pie - but not just any old pumpkin pie - has to be the one I've been baking for umpteen years and nary a complaint from anyone.

I LOVE pumpkin pancakes, but the pumpkin spice bread that the cafeteria served at my college, The University of Tennessee, was probably the best pumpkin confection I've ever had. It was perfect for breakfast, dessert or an afternoon snack!

Yeasted pumpkin rolls... I make these every Thanksgiving. In addition to pumpkin, they have maple syrup (the real thing, of course, and I use Michigan syrup from the Upper Penninsula) and some grated orange peel. They even look like little pumpkins!

my favorite is the pumpkin roll recipe that i found on the libby's pumpkin website. although easy to do, it takes a bit more time then just a regular cake. but the spirally goodness of the cream cheese frosting with the pumpkin cake is well worth it! also, the how-to video on the website is hilarious!

Pumpkin French Toast

1 loaf unsliced french or italian bread
1 can pumpkin pie MIX
eggs
milk
powdered sugar
maple syrup
unsalted butter for frying
olive oil

In mixing bowl, mix together 1 cup pie mix, 6 eggs, enough milk to coat bread slices.
Pour one or two teaspoons of olive oil and several pats of unsalted butter onto griddle, heat.
cut bread into half inch slices and coat both sides in egg mixture.
Fry bread until egg mixture is firm.

Sprinkle toast with powdered sugar and drizzle with maple syrup.

my favorite pumpkin recipe would be fried pumpkin slices with soy-pepper flake sauce.
1. cut the pumpkin into melon like slices and cover with batter and bread crumbs.
2. fry them
3. dip them in the sauce (1/2 soy sauce + 1/2 apple vinegar + sprinkles of red pepper flakes)
...very simple yet satisfying : hits the spot for your sweet, salty, sour, spicy, and creamy taste buds

Pumpkin Gooey Butter Cake. A few years ago, we had a two pumpkin desserts at our Thanksgiving dinner -- a pumpkin pie a la Mom, and a pumpkin gooey butter cake made by my daughter. The Pumpkin Gooey Butter Cake one hands down. It is decadent, but it is Holiday-worthy!
