Rising Hipster Trend: Obscure Deli Meats

John Houder of The Gainesville Sun recently predicted up-and-coming hipster fads, and cold cuts made the list. Apparently the counterculture has come full circle and wheat gluten is too mainstream but mechanically sliced meats are back!

The classic “weird” meats like liverwurst and head cheese still fall under the umbrella of “establishment food," so hipsters will have to improvise with creations like zebra hoagies or capybara wraps. Combining animals will provide for even more individuality and, as is the case with ham radios and mopeds, will require searching for specialized and customizable gear that can be used to impress others. Hipsters will spend their time discussing the relative merits of different cuts of puma while grinding their own penguin-rhinoceros chorizo.

Extra points if the meat is so underground it doesn't even exist at the deli yet. The pictured mortadella might not be esoteric enough.

i take offense at hinting that my beloved mortadella is hipster meat !
its classic, traditional and i adore it and have for ages - maybe its a new york thing - or an italian american thing - but there is nothing better than fresh super thinly sliced imported mortadella on warm bread so the blobs of fat melt a little....also how can you not love something that translates to "little death"......ok i think i just decided what im having for lunch - thanks :)

I think to be truly hip you have to stick to cold cuts that are made out of non-food stuffs, like a loaf made out of library paste and shredded yellow pages books, seasoned with finely ground gravel. The trick is to make the cold cuts out of things that won't actually kill you.

I just had fire roasted mortadella at Motorino...drool.

I was just gonna say, since when is mortadella obscure? But then I read the end of the post.

Anyway, it may not be weird, but mortadella is pretty gross-looking, what with those huge fat pockets and everything. Though I may be biased against it after a dream where my skin turned into the stuff.

On what planet is mortadella weird?? Certainly not Earth anywhere near Bensonhurst or Bay Ridge.

I hate mortadella, but I LOVE shincken speck. MMMM. Despite the deliciousness of most deli meats, hipster or otherwise, I am currently revolted by carnivores. There is no need to gobble down every living creature just because it schmecks!

Ewwww. For all intents and purposes, mortadella is fancy bologna. I'll take soppressata over boloney-with-green-nuts any day.

For a nice change of pace, try a halal or kosher mortadella made with chicken and beef. It's pretty easy to find in delis or Middle Eastern markets.

Why would anyone turn to this in Gainesville person for news on hipness? And why all the weird rare animal jokes? So sad. Why is print doing bad again?

obscure? lol...what about those of use raised in bensonhurst brooklyn? i've been eating every cold cut under the sun since day 1, ain't nothin' hip about it, just how it is....

my fried bologna sandwiches are going to be the third wave of charcuterie.
