I'm going to guess the assembly just for fun. (bottom - top):

cottage cheese,
black beans,
green tomatoes / tomatillos,
white onion,
cucumber,
red tomatoes,
orange tomatoes,
feta cheese.

is this right? :D LOL

I think the bottom layer's corn, and the top is probably cotija/queso fresco. I like the cheese idea--I think I'll have to try that with my quinoa version.

@meleyna - of course! why would someone put cottage cheese in this.
I have never ever tried cotija/queso fresco but you have to be right. I should see where I can find this.

I'm SO DOWN with a quinoa version: its one of my favourite things. You should share it with us when you do!
