Cook the Book: 'Japanese Hot Pots'
The hot pot or nabe in Japanese is more than a meal—it's a social event, a reason for people to gather around the table and enjoy not just a meal together but one from the same pot.
In Japan there is a common belief that str sharing a meal forges closer relationships among diners. You might not have shared a steaming hot pot before, but anyone who has tackled a cheesy, bubbling pot of fondue with friends knows it's a fun, though a bit messy, way to eat with friends.
Japanese Hot Pots by chef Tadashi Ono and Harris Salat, Japanese food aficionado and creator of the comprehensive Japanese food culture bolg, The Japanese Food Report sets out to bring this Japanese dinner time staple onto all of our tables.
Japanese Hot Pots is full of beautiful photography. A quick perusal will make your stomach grumble for a steaming bowl of broth with all kinds of vegetables, proteins, noodles, and tofu. If your knowledge of Japanese is limited to California rolls and shrimp tempura, recreating these stunning hot pots at home might strike you as a daunting task. But let me assure you—these hot pots are a breeze to put together, most of them coming together in less than 30 minutes. Hot pots are more about assembly than complicated cooking. Even the soup bases don't require a long time to simmer.
After a weekend of cooking hot pots at home, I've come to realize that the basic principle is adding simple, flavorful ingredients to a stock and simmering them all together for a brief period of time so the bold flavors transform an otherwise ordinary stock.
Once your hot pot is ready, there are two final elements that complete the meal: the shime (literally translated as finish) are the rice or noodles leftover after the meal, and second, the variety of garnishes at the table. Popular garnishes include thinly sliced scallions, citrusy ponzu, and some shakeable peppers, sansho, and shichimi.

When I was little, we lived across the street from my paternal grandparents. Both my parents worked and if I was too sick to go to school, my grandmother would look after me. She would always make me a batch of her chicken noodle soup. I loved it because it was always full of shredded chicken in a broth that was flavored with celery and carrot. In her version, the noodles were macaroni, too. I thought that was the best part! I still make this whenever I need a comforting pick-me up meal.

My grandmother used to make vegetable soup for us every Friday night. It took a couple of hours to get to her house, but she always had a bowl ready for us. Tomato juice-based broth. Chunks of beef. Corn, peas, potatoes, carrots.
My sister liked macaroni in hers -- which she sometime added. But I liked mine without!

Some of my favorite meal soups are probably in this cookbook :o) Lots of family hot pot meal action growing up- love the use of fresh ingredients and simple seasoning that are trademarks of Japanese cooking.

RAMEN!
Something about the thick chewy ramen noodles with juicy slices of greasy pork swimming in a hot steaming bowl of broth which has been simmered for hours in pork bones... throw in some roasted nori sheets, chili powder, and if you are feeling particularly healthy that day a hardboiled egg, corn kernels, and some bamboo shoots.

My favorite soup still to this day is a home made veggie and beef soup my mom would make. Beef, rice, carrots, celery, and onions. Simple, but she would always use consomme for the base instead of like a beef cube, which I think made all the difference in the world.
The thing I will still remember most about the soup is that it seemed to stay hot forever, which made it great for winter meals gorwing up.

I like to make comfort Chinese soup during the colder season. I'd add a peeled red delicious apple (for nutural sweetness), fresh corn still on the cob, carrots, diced potatoes and lotus seeds. Boil everything together and you'll have a hearty and healthful soup.

I love my mom's mushroom barley soup. Just smelling it makes me feel cozy and full!
However, I just recently had Burmese food for the first time, and the samusa soup was incredible. Cabbage, broken up falafel, jalapenos, onion, a nice not-too-spicy kind of curry broth. DELICIOUS. I want it all the time now. Too bad there are no Burmese restaurants in Chicago...

I like to make soup using a chicken carcass for the broth base. First I boil the carcass in a pot of water and strain out the bones and skin. I also pick off any remaining meat and add it to the pot. Then I add noodles, spices and veggies. It is different every time, but very filling and satisfying.

I love love anything soup. My mother used to tease me when I was younger and call me a soupatarian. I grew up loving minestrone soup and eating my grandmother's arroz caldo. Now I love pho and udon. They're pretty much on my weekly rotation.

My meal-worthy soup memories are mainly not home-based. When my mother would try something with barley, it generally turned into a comical disaster due to the unanticipated expansion of the barley. I'm waiting for Pho to become as prevalent in suburban CT as it seemed to be on my last visit to Seattle...

there is a korean soup called soon doo-boo jigae, it has soft tofu, seafood, beef, and egg and it all simmers in yummy red spicy broth, and it comes in a clay bowl to keep it nice and hot during the meal

so many choices....pho is good. or chinese style beef noodle soup, with star anise and spinach and pickled mustard greens. or chinese style hot pot, or in my house, also known as, let's clean out our refrigerator and put everything into this hot pot on a portable butane burner. dipping sauce- raw egg yolk (don't worry- it gets cooked with when things are dipped into it...at least I think it does), soy sauce, sesame oil, and sacha (bull's head bbq sauce brand). so good for wintertime!

I was sick this weekend with a cold and made the Filipino Chicken Soup (penicillin) called Tinola. The best thing ever--like traditional chicken soup but with ginger and garlic. How could it not cure a cold?

“Sai Min” (saimin/saimen/saimian) is one of my favorite dishes that combines the best things in the world in one bowl of happiness and yumminess. I’ve had it at the hands of my island-famous great-grandfather (who used to own a store/restaurant in Hawai’i, and would cut the noodles by hand).
I thought it was a Cantonese dish, but after much research, I have found that it is unique to the islands! No wonder everyone I talked to about it had no clue what I was saying.

this is so weird, I just went to a shabu shabu place in Brooklyn yesterday. I had a hankering for flash cooker meats and we always see this place is packed. We were given strange looks and menus but I guess they never see two white guys and a handsome indian guy finish a whole pot of hot and spicy broth with a platter of meat in less than half an hour. But overall the place was great and food was so amazing.

My favorite meal in a bowl would have to be an unusual family concoction called mole soup. It's loaded with dark, rich mole, chunks of fried tofu, hominy, fresh corn, basil, honey, and tomatoes. The soup is thick and hearty. Sharp cheddar cheese and sour cream make the perfect toppings. I know the combination of ingredients sounds odd - but the taste is absolutely out of this world :)

Meal-worthy soup? It's a toss up between a good pho tai, tom kha gai, and chicken lemongrass soup.
But, if you want to have a soup that just makes you feel good, you cannot beat a nice big bowl of miso with spring onions and fried shallots.

I found a recipe for white bean, sage, and Italian sausage soup (kinda more like a thick stew, actually) a couple of years ago. I make a huge batch of it every fall when the rain starts, freeze most of it, and eat it for months. So rich and comforting.

My mom's thai style sukiyaki. When I was younger and got beef, it was marinated in fermented soybean paste and sesame oil, but now that I'm past 30, no beef for me. Chicken breast only, marinated in the same. Tons of vegetables, more soybean paste for the broth, glass thread noodles, its what I always ask for when I go home to visit.

Bak Kut Teh - Which literally translates to meat bone tea. It's a soup served in Singapore and Malaysia that's made by boiling pork ribs for hours with garlic, and various Chinese herbs and spices. There are many variations, some are dark like soy sauce and some are clear. My favorite version is clear with lots of garlic and white pepper.

My Mom makes a wonderful pot of homemade vegetable beef soup. She uses a huge pot and adds many wonderful veggies, including some home canned and frozen. She always gives each of us a half gallon or more to take home and sends jars full of soup to our neighbors. She says she can't make a small pot. Actually she usually makes three pots, one with everything for most of the family, one for my daughter without meat and one for my son without beans.

It's a charming coincidence that I made shabu shabu for a visiting friend just last week... ah the allure of the Iwatani stove and a beautiful nabe pot.
Soup as meal must include Borscht, I was raised on it... cream and crimson bliss. Pho, a quick cheap delicious lunch anywhere staple. Oh and lest I forget.... the gorgeous and ravishing Bouillabaisse! That is my triumvirate of sustaining liquid food ecstasy! Ahhh, I feel so much better now.

My mom makes the greatest chicken alphabet soup, hands down. Actually it's more of a sludge, its so thick. It's quick, easy, and the absolute best thing that you can have when you're sick or cold. It's one of the reasons I'm not living at college right now. So good.

In our family it's chicken soup, which I just made tonight. Either my mom's where she keeps the chicken out after it cooks, and keeps the vegetables large so you can mash them and eat them separate if you like.
Or mine where I chop everything small and serve with some ditalini pasta. Both are very tasty and filling on cool days.

My gramma used to make this soup she called "ga la tong" which was like a chinese-style chicken and dumplings. It used up leftovers from the previous night's dinner and she'd drop pieces of dough in to simmer into dumplings while also thickening the soup. It was so comforting and no one but her knows how to make it!

My favorite soup and one my mother always made me when I was sick is Okayu, a simple Japanese rice porridge. My mom would add lots of vegetables and egg. I still crave it when I get sick, now I just need to teach my boyfriend to cook it.

I'm a big fan of udon -- there's something about savory broth and thick noodles, I even like the fish cake -- but the meal-worthy soup that I make when I'm feeling unwell is a garlic-heavy take on chicken noodle... With broth I've made, grilled chicken pieces, carrots, lots of garlic, and gnocchi in place of the spindly pasta seen in canned and envelope varieties. It always manages to warm me up.

My favorite is a chinese soup my mom makes. It contains ox-tails, carrots, tomatoes, potatoes, and sometimes cauliflower and is simmered for almost 24 hours before it's done. The meat on te ox-tails is so tender and the soup is very flavorful.

I make a soup for Sukkot that is basic but very good. 2 c. soaked chick peas, 3 chicken breasts (boneless and skinless), a large can of diced tomatoes, 6 cup of chicken stock (or thereabouts), a large, diced green pepper, 2 diced zucchini, 2 or 3 diced carrots, cinnamon, turmeric, white pepper to taste. I usually put it in a crock pot and let it go for several hours before serving so the chicken's falling apart.

Cantonese hot pot. When all the meats and vegetables are done, all that's left is that pure, meaty broth that's amazingly sweet and full of tiny meat bits. Throw in some udon (no, it's not traditional but it tastes good), and it's seriously the best part of the meal.

Pho. My boyfriend's family is straight from Vietnam and his mother is an amazing cook. Now that the weather is getting cool again his mom has started to make pho during the weekends. It is so filling and the warmth stays with you. It is the best soup I've ever had.

I had my first taste of real Ramen soup on a trip to Japan last year. Like most Americans, I grew up with the terribly salty pre-packaged stuff. I was reluctant to go to the ramen restaurant in Sendai, Japan, but my friend insisted that it was delicious. Wow. The packaged stuff should not even be allowed to share a name with that delicious, comforting soup.

Part of business school I went to school in Niigata prefecture in Japan. It was like being in the middle of Iowa but surrounded by mountains. In the local, little bars, the mamasans would always serve us hotpot food along with beer, the food was never exactly the same. It usually consisted of vegetables, a really great beef broth, and meat. All I can say was that it was very stomach satisfying!!!!!!!

Always being weight conscious I would eat a salad for lunch at the chalet and would leave the hills at 4 o'clock Sunday's to beat traffic into Montreal and get home to my mother would have made her standard Borscht complete with flanken and tomatoes and onions and cabbage. I would scoff down two bowls and then lay down to watch sunday night tv....this was a routing that lasted from my early teens to my late 20's..... that borscht...and those ski hills..

When I was growing up, my dad used to make a family sized soup noodle out of a couple of ramen packets and whatever leftovers were in the fridge. Dinner for four in under 10 minutes.

I had a serious case of culture shock when I move to the Japanese countryside to teach English. But learning how to make miso soup and ochazuke and, indeed, hot pots, was my way-in to the culture, at least a small part of it. I feel such a sense of comfort whenever I make the traditional dashi. I know I am taking care of myself. I know I am surviving.

Turkey soup! when ever we cook a turkey, there is always way too much left over, and the best way to use it up is turkey soup. sometimes with noodles, sometimes with rice, and lots of veggies...YUM!

My fiance and I have a favorite soup we've shared with several friends. Italian sausage, small shell pasta, beans, thyme, and lemon combine to make a really delicious soup. We make at least once a month, even in summer. It's light, and yet very filling.

I have a friend who runs a Chinese restaurant in Northern California... her hot and sour soup is to die for. After a few years of harassing her, I finally got her recipe. I don't make it as well as she does, but man. It's good.

I LOVE homemade soups,but my family doesn't share the same enthusiasm for soup like I do,so I often make a small pot for myself.Usually 2 servings or so.I like to call my soup "the clean out the fridge soup".I start with homemade chicken stock,reduce it a little,then raid the fridge for any leftover meat or veggie.I usually saute the meats an vegs in a little olive oil or butter,then add the stock and either somekind of pasta or rice.Good soup,but not freakin' great soup,till I founf my secret ingredient that makes the soup absolutely heavenly.GUARANTEED to cure anything.Instead of sauteeing the meats n vegs in olive oil or burtter,try using LARD !!!!!!!! OMFG......what a difference.My soup now has a velvetty texture,bordering on silky,with a body to kill for.PRAISE THE LARD,which I made a few weeks ago from rendering down some pork fat that i got for free,just coz I know the butcher.

My grandmother's recipe for potato soup. It had bacon, onion, carrot, celery, potato's, milk, flour, salt and pepper in it.
Then it was topped in individual bowls with cheddar cheese.
Just add a hearty slice of rye bread as a side, or a biscuit and you were set.

I make a beef noodle soup that starts with chuck steaks boiled in the pot to make a nice soup base. Finished off with celery, onions, carrots, seasonings, the meat cut up, and a noodle that holds up good in soup.

Prime Rib soup with vegies made this the cooked / seasoned end cuts of the prime rib. It was a full meal in one large bowl with all those traditional vegies. Potatoes, bean, corn, onions, all the fall vegies. yummy and good.

A soup that never fails to warm me up in the winter: fermented glutinous rice porridge with small bits of mochi. My mom makes this a lot during the winter time, and I always liked to sneak bites of the fermented rice to snack on. Basically, it is cooked glutinous rice with a special type of yeast added to it. It is allowed to ferment at room temperature for a few days, and it becomes very sweet. It is slightly alcoholic, but children of all ages drink this soup in China. When the rice is done, you take a few spoonfuls of rice to boil with a pot of water. The water becomes infused with the sweetness of the fermented rice. Sometimes, we add tuanyuan, which are small pieces of mochi made with glutinous rice flour and boiling water. You roll the dough into thin rolls, and slice them into bite size pieces. They get cooked along with the fermented rice.

So many different soups I grew up with to choose from but I would have to pick foul nabet. My mother would make it once a year. It is a traditional Egyptian soup made from broad (fava) beans, that have been soaked in water until the germinate then cooked in a lemony garlicky broth.
After it was done, we'd fish out the the cooked broad beans and eat them edamame style, eat the tender insides and discard the tough skin and eat the tasty broth to which we'd add toasted pita bread "croutons".

I was village hopping in Southwestern China and one of the villages held a water buffalo fight as part of the welcoming ceremony. Later that day, my friend and I were fed this delicious hot pot meal, consisting of the losing water buffalo (sorry buddy). A few minutes into our meal, my friend pointed out that he and i had a single ball in each of our bowls that nobody else seemed to have. In short, eating a water buffalo testicle wasn't horrible...little chewy...i definitely haven't had any more since then. Overall, maybe not my favorite, but definitely one of the more memorable hot pot meals I've had.

When I was a little girl, my grandmother always made sure to prepare a pot of her decadent chicken soup whenever my sister and I went over to her house. With a recipe that calls for an entire silkie chicken, > four cups of water, and a sprinkle of goji berries, simmered for hours, the soup was an magical elixir to cure any ailment or maybe just to put a happy smile on the chubby face of a five-year-old glutton. To this day, almost twenty years since her passing, I still associate the wonderful memory of my beloved grandmother with her delicious chicken soup.
P.S. Despite following her recipe, not even my mother was able to recreate Grandma's soup. My guess is it really was magic...

A nice, warm bowl of beef or chicken curry (Japanese-style) cooked with just the right amount of veggies. It's not quite soup but I purposely thin it out so that it has that soupy feel to it. Warms you up and sticks with you all day plus leaves your house smelling wonderful for days. :)

I love to make a Korean soup made with fresh chicken cooked in water and spiced with plenty of grated fresh ginger. The chicken is shredded, and a cup or two of cooked rice is added to the broth and cooked until the soup has the consistency of "chowder." Serve in Oriental bowls and garnished with sliced green onions and Korean sesame salt. Delish, and very healing if you are suffering from respiratory "flu."

My Momma liked to make big ol pots of soups and stews. All us kids and our kids would come over and eat. Sometimes she'd be creative and add different things. My Daddy would smell it and come in and ask what she was cooking. She would tell him she was making "stuff". It was funny. She was a great cook.
