20090803100bestvegetarianrecipes.jpgIt seems like vegetarian meals are always met with back-handed compliments. "This nut loaf is so delicious, I don't even miss the meat!" Or "those portobello burgers were divine, almost as good as a real cheeseburger!" Too often vegetarian dishes try to compensate for their lack of animal-based protein with meat mimicry. In my opinion, this emphasis on meat simulation is part of why vegetarian cooking has developed such a bad reputation over the years.

I was a strict vegetarian for almost ten years and I have eaten countless veggie burgers, soy dogs, and buffalo "wings." A Tofurkey graced my Thanksgiving table for more years than I would care to admit. I am currently a happy omnivore who thoroughly enjoys tofu and vegetables but I can honestly say that these meat impersonators have not reappeared in my life since.

As someone who has spent considerable time on both sides of the meat-eating fence, I've found that the most satisfying vegetarian meals don't try to put on airs and pretend they are something they clearly aren't. These dishes are vegetarian for the simple fact that they are made from vegetables—they are delicious in their own right.

Carol Gelles has put together one of the smartest and most useful vegetarian cookbooks I've seen in a while. 100 Best Vegetarian Recipes is a collection of simple, flavorful, and easy to prepare dishes that appeal to vegetarians and carnivores alike. The recipes don't require a trip to the health food store for hard-to-find ingredients like TVP, seitan, or egg substitute. Every single item called for can be found in any grocery store. My fav meatless dish would be penne pasta with zucchini, yellow squash, & mushrooms in tomato sauce. Basic and delicious!

I seriously enjoy portobella fajitas. And this recipe from the Moosewood cookbook for stuffed zucchini. And this recipe for an eggplant fusilli with capers, pine nuts, and currants.

Falafel sandwich!

I have to limit it to one?! I'm not sure I have a single overall favorite.

On a perfect sunny day like today my favorite meatless meal would be a mix of green zebra and Cherokee chocolate tomatoes hot from the vine, basil from my garden, some made-this-morning mozzarella from the local creamery, with a drizzle of spicy green olive oil and a few drops of good balsamic. Put that next to a glass of Prosecco and I'm in heaven.

I love meat a LOT, but I do enjoy eating vegetarian even now and then, although usually it's a retrospective sort of doing so (i.e. "huh, nothing I ate today had meat in it. Cool."). In the same way, my favorite meatless meals are the ones where meat would actually make it taste *less* good. Fettucine alfredo for one, or a concoction that I whipped up for Tet one year—caramelized firm tofu, long beans, candied walnuts, black soba noodles, soy sauce, hoisin sauce. Mmmmm...

Vichyssoise. Hot or cold, it never disappoints.

i second falafel

Old fashioned spaghetti marinara, but with olives. I also adore spanokopita, but I like it really cheesy.

This is hard! I love broccoli rabe with a bit of pasta, or sauteed oyster mushrooms in some butter and cream and a poached egg with some polenta or good bread, or huevos rancheros, or...i could go on forever.

Fried green tomato sandwich.

On the grill, roasted vegetables with balsamic vinaigrette. Inside, love a good minestrone.

Vegetarian lasagne, without a doubt. It's all in the sauce.

A nice portobello mushroom, mozzarella, and roasted red pepper sandwich accompanied by a corn and avocado gazpacho is a perfect summer vegetarian meal to me.

The Healthy & Delicious Grilled Zucchini and Quinoa recipe! I made it for some quinoa skeptics and they thought it was delicious.

Veggie chilli, with portobellos substituted for the meat. I throw in fresh corn and whatever chiles I can get my hands on.

Any pasta with veggies dish is great to me. I don't even miss the meat.

I honestly enjoy a good salad as much as a good burger. But add a falafel or a grilled cheese with tomato, it becomes a real meal!

Only one? Pizza with mushrooms, onions and green peppers. Lots of mushrooms. Olives and other veg are optional.

Potato and leek soup

a pizza margherita is probably the most perfect meal i can think of, and it just happens to be meatless.

Something I made for the first time yesterday: basil pasta ravioli filled with Gorgonzola, zucchini, oyster/crimini/shitake mushrooms, and Parmesan; topped with a zucchini Puttanesca sauce and Gorgonzola crumbles.

favorite vegetarian meal would have to be either black bean burgers, a yummy spicy tempeh/potato/tomato ragout, or a greens and bulghur casserole. Yum!

Just made it last night and loved it: red bell peppers, spinach, tofu, garlic, ginger, and soy sauce - excellent!

This would be wonderful. My daughter is a vegetarian ; my wife and I are not. Despite trying her food so we only have to fix one meal rather than two I find most of the recipes at best tasteless and at worse yuck.

I am going to try these as they come up this week. Fingers crossed

in lil five points in atlanta, there is this veggie place that serves the most amazing tofu to taste like fish, chicken, duck, etc. it is so flavorful and delicious.

Falafel, guacamole, panzanella salad, or a colorful veggie lasagna

Our favorite cool weather veg. meal is a middle-eastern sort of lentil stew, with roasted squash & lots of onions, garlic, aleppo pepper & tomato cooked down into a dense flavoring to stir in. Braised greens or reg. salad with sharp dressing on the side. In this short stretch of hot New England weather, we've been making variations of corn risotto with lots of vegetables cooked in a kind of succotash-style salad to go with it. And the region's peaches are ready, so we're eating those several times a day. Gelles' new book sounds very interesting.

So, I didn’t enter last week because I already have 660 Curries and recommend it to all my friends, usually over dinner of 3 or 4 dishes from it. Favorite? Maybe sorshe chana, yogurt-tart chick peas with mustard greens. Or what I made for lunches this week, gujarati-style yellow and black chick peas. Or brussery, plantains and sweet potatoes in coconut sauce.

It varies with season, and I go through phases. Right now it's cold noodles with lots of veggies and peanut sauce.

i love a good channa masala, bean burrito, or pasta e fagioli.

Roasted tomatoes and pablanos, garlic and onion sauteed and eaten over toast or pasta.

Falafel, hummus, tabbouleh - mixed together with a splash of tahini and a dollop of hot sauce.

Ah!! YUMMY!!! I love vegetarian recipes that don't pretend to be something else. :) I'm loving an old carrot soup recipe from Moosewood Restaurant right now. I'm also trying to invent the perfect pizza crust for my goat cheese and caramelized onion pizza!

Pasta with wild mushrooms.

My favorite is a sweet and sour cabbage dish braised in the slow cooker--I toss in some meatless sausage with about an hour to go to make it a full meal.

In the summer, it would be fresh cherry tomatoes, corn and zucchini over pasta and in the winter, a pile of roasted root vegetables with polenta.

A broccoli feta sauce thats flavored with lemon and served over pasta. I'm also a sucker for bean and cheese nachos with salsa and guacamole! My favorite recipes lately have been meatless.

I make a delicious sweet potato, leek pasta with toasted almonds and Parmesan. What makes this dish work is that it was never meant to use meat. In fact, my husband -- an avid carnivore -- asked me to add chicken to the dish. Even he agreed it just didn't work! Plus, it tastes great the next day!

There are so many, but my favorite meatless meal of late the smoked tofu from vegan yum yum. It makes a delicious dinner and lunch the next day (stuffed in a pita with some spinach and mustard - yum).

I love lentil soup made with onions, carrots, celery, lentils, vegetable broth and a few handfuls of elbow pasta. Reminds me of my Italian grandmother!

Well, I'm a vegetarian, so I have a lot of favorite meatless meals! Standouts include oven roasted tomato sauce with pasta. Or homemade pizza. Or tofu panang curry. Or...

Red lentil burgers with some fresh avocado.

My favorite vegetarian meal also happens to be my first all vegetarian meal ever. Tabouli and Falafel. We went to a friend's house for dinner and when I heard it was going to be a vegetarian meal, I was skeptical of what we'd find served to us. But it was great. It's still the only meal where I don't feel the absence of meat when I eat it.

Falafel, hummus, tabbouleh and babghanuj

I frequently crave the exotic flavors of tom yum soup (I believe the version with chicken is called tom yum gai). My local vegan restaurant makes it in a vegatble broth base with kaffir leaves, lemongrass shoots, bok choy, plum tomatoes,straw mushrooms, lime juice and a hint of chili. If I'm having it as my main course I'll have them add tofu. YUMMMM!!! (great, now I have to have this for lunch!)

Stirfried tofu dish I tried for the first time last friday

one of my favorite things to cook, meatless or meatful, is tofu, spinach, and shiitake mushrooms flavored with garlic, soy sauce, and sesame oil. yum!

A riff on alfredo, with gorgonzola: Shallots sweated in olive oil, a cup of heavy cream, a cup (or more) gorgonzola, salt, white pepper. Toss with pasta (I prefer rigatoni), and garnish with chopped parsley and toasted walnuts.

Veggie tacos. Usually make them with sauteed zucchini, peppers & onions nothing else is really needed.

My delicious (and easy!) Veggie Pizza:

1/2 head (or a whole head if you're feeling saucy) of roasted garlic smeared onto a whole wheat Boboli crust with some good olive oil.

Top with lots of:
- caramelized red onion
- sauteed baby portabella mushrooms
- sauteed red pepper
- fresh, chopped and seeded Roma tomatoes
- mozzerella and feta cheeses

Drizzled on top with a good balsamic vinegar and baked until the cheese is melted and bubbly.

Delicious!

Chile rellenos, for sure.

Right now I'm obsessed with this vegan sandwich I made up. It's 8 grain bread with roasted red pepper hummus dip, black olive tapenade, slices of tomatoes and red onions with spring mix.

Pesto pasta with potatoes and green beans.

Red beans and rice, with some cheese grated over. A spinach and mozzarella sandwich, on crusty bread, with the mozzarella just melted, and a sprinkling of parmesan and basil. Cheese and bean burritos with lots of spicy, tomato-y rice and peppers and sour cream. Spinach and ricotta cannelloni, baked in a thick tomato sauce with mozzarella. Broiled Portobello mushrooms stuffed with peppers and Gorgonzola, served with proper frites and a side of Aioli. A really good salad...all fresh produce, and something interesting, with a nice and light dressing. A pan of rice with diced tomatoes, garlic, peppers, cream, onions and cheese cooked until it's almost soup, eaten with fresh bread.

I use meat substitutes a lot, but only in sauces. I make a mean pasta sauce with fake meat, and the fake chicken bits are good in Alfredo or other cream sauces. The sausages aren't bad, either, but you have to be very careful how you cook them...they need steam heat, like a micro, or they get a bit gummy.

I could also live off hummus and falafel with some good flatbread and maybe some olives.

Potato anything. No meat needed.

Definitely a tie between veggie fajitas with mushrooms, zucchini, squash, bell peppers and onions or a caprese salad. Anything with fresh mozzarella, basil and tomatoes is a hit.

When it's cold out, I love a good soba noodle soup with veggies. I could live off rice with black beans, tomatoes, corn, lettuce, cilantro and lime (and of course guacamole!). Then there's always my bowtie pasta with veggies in a light garlic cream sauce with a side salad. And speaking of salads, marinated and grilled tempeh with veggies and grapefruit sections on a bed of greens makes a satisfying hot weather meal.
I'm also always happy to make (and EAT!) dal and rice and saag paneer or chana masala.

Avocado and brie with ripe tomatoes and alfalfa sprouts on crusty whole grain bread. Fabulous sandwich.

I could never limit it to one either, but I recently had a butternut squash and swiss chard lasagna that was to die for. I also make a delicious Moroccan inspired stew that's served over couscous. Love falafel too, especially on a huge Greek salad; and another favorite would have to be Thai vegetable curry over rice.

I love a nice black beans and rice with some red and yellow peppers garnished with avocado!

Anything with beans or avocados or corn or tomatoes. So I guess that means veggie burritos!

Pea and Mint Soup

Eggplant parm. So tasty and the eggplant just gives it the right mouth feel!

It's not possible to name just one. Quinoa with sauteed kale topped with grated pecorino.
Broccoli rabe pesto with toasted baguette.
Pommes Dauphinoise -- yes, that qualifies as a meal.
Caesar salad; and if I can't have the anchovies I still love it.

When I was in Italy I had a Parmesan Flan with roasted vegetables and Balsamic glaze. I think my exact words were "Oh my God", and having been a vegetarian for the past 14 years, those reactions are very special.

Falafel is wonderful, and there are MANY great vegetarian pasta dishes. I almost voted for a recipe I have for a stacked fritatta--3 different veggie fritattas layered with herbed cream chese and topped with a drizzle of marinara sauce. But it IS summer after all, so I'd have to vote for a plate full of whatever bounty the farmer's market offered that day. Just the other night I served my family a salad of corn, tomatoes, avocado, and red onion tossed in a lime vinegarette with ancho chile and cumin for good measure, along with cucumber and sour cream salad and a simple baked potato. Delicious!

It would either have to be vegetable fajitas with beans, guacamole and fresh salsa or beans and rice (made in a variety of ways).

Shoot- or falafel..... I know. That's two too many, but I have such a long list....

Fresh pasta topped with olive oil, garlic, fresh chopped tomato and basil and a dusting of parmesan cheese. (You can stir some fresh ricotta in for a creamy dish too. Delicious.)

This is easy: my homemade basil pesto (with excessive amounts of garlic) paired with whatever pasta suits my fancy at the moment (currently wagon wheels).

Well, since my boyfriend is a vegetarian, I have been experimenting more and more with meatless protein. Memorable meals include: a "stroganoff" made with mushrooms, crumbles and goat cheese; fresh pasta with fresh basil, olive oil, summer squash, zucchini, parmesan, fake Italian sausage (the next time we added a tomato sauce to the leftovers for further tastiness); buttermilk biscuits with a huge salad; our homemade pinto bean burritos on fresh tortillas and so much more.

Ethiopian feasts sans meat!

I've been vegetarian for about 20 years and grew up on a small farm where we ate meat, so I occasionally enjoy the texture of the vegetarian alternative and found, through a friend at work, a great recipe for vegetarian meatless meatballs.

A simple recipe of ground nuts - walnuts/pecans, seasoned breadcrumbs, eggs, shredded cheese, a bit of onion and garlic, minced - and water. Mix thoroughly and allow to sit in the fridge for about 30 mintues for the ingredients to absorb the moisture. Form into 2-oz ball shapes - dip hands in water while making and the mix won't stick - and bake in 350 for about 25-30 minutes till brown and crusty.

Place into any tomato sauce/gravy and serve with pasta...these are excellent and I serve them every Christmas Eve to vegetarians and carnivores alike and nobody misses meat.

The dough mix can also be formed into a loaf and baked off. Serve with potatoes, green beans and a salad and you have a great Sunday dinner! Leftovers are great in a sandwich with a bit of mayo and lettuce!

Goes good with everything growing in my garden.

Israeli-style falafel- in a warm pita with hummus, tzatziki, israeli salad (tomato/cucumber), cabbage salad, pickles, a little hot sauce, and french fries....makes me hungry just to think about it!

My godfather is a sophisticated eater and committed omnivore, but has recently been told to cut down on eating animal products significantly due to health reasons. I'm looking forward to seeing the Shepard's Pie recipe. Can yall feature any other main meals that might be more geared towards filling (non-pasta) dishes? We're starting to run out of interesting/new items to try. This is certainly a book I'll consider getting. Thanks!

a vegetarian buddhist meal that i had at the giant buddha in hong kong. mmm black bean and garlic eggplant with rice. the vegetable dumplings were delicious as well. a little sesame oil goes the best way.

Vegetarian meals can totally hang with the gangstas and be bad-ass. I've been one for over 10 years (a vegetarian, not a gangsta)...

Mmmm...penne pasta with a creamy, cheesy tomato sauce, garnished with scallions and black olives. Yum, yum, yum!

as much as i love meat, theres too many vegeratian things i like too! daal, baigan bharta, pretty muhc any kind of vegetarian indian curry, meat-less sopes and tostadas, eggplant parm (easy on the cheese please), warm hummus...i can go a whole week without eating meat. my bf thinks im crazy.

Hands down: rice with black beans, onions, tabasco, and orange (thick strips of zest cooked right in with the mix), served lukewarm with cold sour cream.

It would have to be anything involving chickpeas. Smashed chickpea sandwiches, chickpea salads, chickpea and potato stews. And of course, hummus.

I absolutely love the nutty flavor of it, and it provides loads of good nutrition as a bonus.

It's got to be my bean chili with rice. Perfect protein, low-fat, filling, and YUMMY! I could eat it every night :)

I just became a vegetarian last week. Also I've never won anything in my life. Oh, yeah, my favorite meatless meal... hmmm... I'd say Roasted Pepper Tacos with Cream, with homemade flour tortillas. My recent vegetarian favorites... making homemade hummas, pitas, and falafel

I absolutely love making ad-lib veggie sautes, where I take onions and caramelize them on the stove, throw in some herbs, and then add whatever fresh veggies I have on hand. Let it all simmer together for a few minutes. Sometimes I add balsamic vinegar to make a quick and flavorful sauce, and sometimes I add some tomato sauce for extra zing. Sprinkle some fresh Parmesan over the top, spoon into a large bowl, and serve with a slice of grainy bread and a dollop of cottage cheese for added protein. DElicious!!

I love almost all Indian vegetarian food!

Indian food, Thai food, Vietnamese food, and sometimes just a simple salad with fresh greens. I've been a vegetarian for years and I don't miss meat one bit!

Since becoming vegetarian, I have come to really love vegetarian meals -- so much so, that it would be impossible for me to limit it to just one!

Gazpacho! Or maybe I'm just feeling that way lately because it's summer. In the winter, herbed risotto is a favorite. Also red onion soup (like French Onion Soup only better--with vegetable stock and red wine and red onions instead of beef broth, topped with gruyère and toast.)

Edamame plus rice plus soy sauce plus sesame oil = heaven.

I rarely eat meat, but my definite most favorite thing to make (and also really easy) is pasta (any shape) with tomato sauce with zucchini slices and peas and corn and tomato chunks. So wonderful for the summer too!

Every meal I eat is meatless, so this is tough. I love vegetable lasagna with homemade sauce, falafel with tahini sauce, fresh pita bread, and tabouli, and honestly, a good veggie sub. I could eat a sub for lunch every day.

Mushrooms definitely top my list in any form. I'm especially fond of grilled portabellas and mushroom/spinach quesadillas. Yum!

Vegetarian Chili.....w/corn muffins

It's so hard to choose just one, but it would probably be "doubles"--a Caribbean dish that consists of a spicy chickpea potato curry, served on "fry bake" (fried bread dough) with Calypso sauce (distilled habanero peppers). But you have to like it spicy!

I like to keep it simple: a whole wheat pita stuffed with fresh spinach, thin sliced cukes, tomato, sprouts and some hummus. In cold weather nothing beats a hearty tomato soup and a grilled cheese.

My favorite meatless meal is Shrimp and Arugula in Lemon Oil. Amazing, Fragrant, delicious!

It all comes down to pizza -- a few slices from Totonno's or Sally's washed down with a quality American pilsner such as Budweiser. If I have to pick something homemade it would be mac & cheese.

I found a recipe a while back from a local mushroom farm for Mushroom, Goat Cheese and Black Bean Fajitas. So SO good.

My favorite veggie meal will probably always be the Sweet and Sour "Chicken" lunch meal at Bamboo Gardens in Seattle. It was my first experience with fake meat and I was in love.

my friend had given me a recipe for spaghetti and 'meatballs' - the meatballs were made of a tofu & spices mixture. It was really wonderful!! Although we didn't cook the 'meatballs' slowly so it was more of a meat sauce.

I love Marinated Tofu sticks dipped in guacamole. That might sound more like a snack than a meal, but as much as I eat, trust me, it qualifies as a meal.

I eat mostly vegetarian, so I have lots of favorite dishes, especially pasta and bean dishes. I especially love black bean quesadillas with melted extra sharp cheddar.

My favorite meatless meal is shitake bread pudding---infused with broth from boiled shitake stems, added to lots of shitakes sauteed in shallots and butter, then enriched with heavy cream and eggs, then poured over slices of toasted egg bread or brioche. After baking, it's fabulous!

well so many from pastas to salads which all involve cheese, mushrooms, and yummy tomatoes. however my ultimate favorite would have to be the korean soybean paste stew with potatoes, onions, cubes of tofu, and most importantly, hot peppers inside! have this with a steaming bowl of barley rice and steamed cabbage and it will keep you full and satisfied for hours as well as cleanse your system. so healthy and good!

my mum's mac and cheese, glazed carrots and spinach with butter and vinegar- my favorite meal my entire life, and very possibly what made it easy to go veg!

Tex Mex lasagna. Basically black beans, cheese, a little rice, salsa and corn layered in between the noodles. I also love eggplant macaroni and cheese. Really, I love eggplant anything.

my favorite vegetarian meal is a vegetable udon noodle soup made with a mushroom broth, but having been a vegetarian for 7 years, I have a lot! polenta "lasagna", chickpea and spinach curry, and a really fresh tomato, basil, and mozzarella sandwich are all on the top of my list as well.

Roast veggie pizza...roast any mix of veggies w/ a little basalmic and olive oil, then put them on pizza w/ provolone or goat cheese.

Since I eat veg every day, it's hard to narrow it down. Right now, it's an eggplant, chard and chickpea ragout. But only because we grow the former two in our community garden, so they're uber-fresh.

falafel is up there, waay up there. But I gotta say a home made pizza with good cheese, seasonal veggies and maybe some good wild mushrooms beats just about anything.

One of my favorite fall/winter meals is roasted veggies. Whatever is on the cheap rack at the local fruit stand gets tossed in salt, pepper, and olive oil then dumped on a heated cookie sheet.

Potatoes, peppers, cauliflower, broccoli, onions, garlic; I don't care. As long as it is nicely caramelized.

i love soups and some of the best are vegetarian. this soup recipe with butternut squash is my favorite.

I make some killer Vegetarian Chili: pintos, black beans, chickpeas, and kidney beans, corn, onions, spices, more spices. The secret is a can of Texas beer. Well...I guess it's not that secret.

With some fritos and cheese, you just can't compete.

West-Indian dal with roti is really delicious.

Ratatouille over rice or couscous. Or a spicy tofu stir-fry, with the tofu nicely seared and crispy.

If it's something I eat at a restaurant, it's tofu with chinese curry sauce, mushrooms, snow peas, and basil. Add on the veggie dumplings, and it's heaven!

Ooooh, ourside of mattar or palak paneer, these middle eastern zucchini fritters I make (celebrating the thousands of other renditions of the same), rendolent with scallions and dill, enriched w/ toasted nuts and feta. Tzaziki atop.

Wait, then there are my Ukranian Grandma Vera's pierogies, with the over-the-top finish of panfrying in butter with sour cream and browned onions alongside .... aaaaah ....

Being a vegetarian it's hard to pick my favorite meatless dish. But I guess that roasted vegetable anything (salad, rice, pasta) is up there.

I love lentils in every way shape or form.

I like portobello mushroom stuffed with tomato and brie cheese and topped with seasoned breadcrumbs and baked. Yummy!

Definitely falafel with a lemony tahini sauce.....

A giant plate of fresh peas and tarragon butter

I love making veggie burritos with tofu, black beans, corn, tomatoes, onions, peppers, and whatever veggies I want to use up. Add some spice, maybe some brown rice. I take a package of flour tortillas, make up as many burritos as I can, and individually wrap and freeze them. Makes for a delicious, quick meal when you get home late or don't have a lot of time.

Almost all the pizza I make is vegetarian. Made a delicious pizza last week with charred cherry tomatoes, fontina, and fresh basil. If I had it, I'd use home made fresh mozzarella.

The Indonesian vegan potato and "chicken" curry from Padmanadi in Edmonton is WONDERFUL. As is basically everything else from there.

I'm also one of the only omnivores I know who voluntarily drinks soy milk and enjoys the taste. I know a tall glass of unflavoured soy milk from the Asian supermarket doesn't exactly count as a meal. But still, yum.

I enjoy making indian vegetarian meals and my favorite dish of the moment is the chole from Manjula's Kitchen because of the addition of chickpea flour in the sauce. I always add some raita on the side.

As a vegetarian for the last 10 yrs, I live for meatless meals... my favorites: any combination of bread and cheese - pizza, pastas, mac & cheeses, grilled cheese sandwiches, quesadillas, quesitos, pastelillos... must I go on????

as a veg, my go to meatless meal is eggplant (or broccoli or any veg i have on hand) with ginger, garlic, and chili in a stirfry/soy sauce and rice or noodles. mmm..

hmm... I eat almost meatless all the time. but my staples are; baked sweet potato with chipotle hot sauce and brown sugar/honey in the winter and grilled farmers market veggies in the summer. also my day is not complete without salad of some kind!

My favorite, hands down, is an invention from my mother, involving rice, zucchini, tomato, corn and onions. It is so simple, easy to make and so astoundingly delicious. Of course, I've changed it around some: I use brown rice and I don't peel or core the zucchini, and I have to saute the zucchini and onions in canola oil rather than butter, but it is still wonderful--possibly better!

right now, it's probably huevos rancheros, with the egg perched atop a cheesy black bean quesadilla and just slathered in sauce. mmm.

Favourite right now - a salad made with cucumbers, radishes, carrots (all local from farmer's market) and tofu ('dry' tofu) with an asian-esque dressing. I eat this almost daily in the summer.

I go meatless a couple of days every week. I love tomato soup and a grilled cheese sandwich or just mac & cheese. My super favorite is a pizza loaded with veggies. The best I ever had was on Amelia Island, FL at a little French deli. The pizza crust was whole wheat. The toppings were boursin cheese with salmon. YUM!

Anything South Indian - dosa, idli, sambar. Mmmm.

I love so many meatless meals (I could live at Asheville, NC's Laughing Seed restaurant!) but my all-time favorite is Russian vegetable pie from one of the Laurel Katzen cookbooks. It was my birthday dinner of choice for years and years, much to my brothers' chagrin!

Absolutely, my hands down favorite is Quinoa and Red Kidney Bean salad from the book, Some Like it Hot. I have made this over and over and over and I never get tired of it.

i've been a pesco-vegetarian for 12 years and one of the things i've learned is that looking to traditional foods that have a long history of vegetable-centric meals is the way to go for best flavor. my favorite veggie meal is either something indian or something eastern med.

for indian i'd do a dal with ginger and apple raita, chapati and some lemon or lime pickle. for eastern med i'd do a fava been dip, strained yogurt with cucumber and lots of dill, and of course a roasted eggplant, garlic and tomato dish!

that said, i love deborah madison's version of mushroom pate but it is seriously time consuming to make - so i am really intrigued by the recipe from 100 best vegetarian recipes - it looks so much easier!

Mmmm. Stuffed portabellos maybe, or Pizza alla Margherita. Total toss-up between the two.

I am totally in love with Gallo Pinto at the moment. It is a Costa Rican rice and beans dish. So freakin' yummy!

Oh man, just one!? Eggplant parm, veggie pizza (on the grill, preferably), meatless chili...I could go on and on!

hummus, babaganoush, taboulleh, tapenade, grilled eggplant sandiwches, baked spinach with cheese, falafels, the list goes on and on. and yes, the best vegetarian recipes are the ones that don't include fake meat, or anything trying to imitate meat.

I'm a vegetarian and I do eat some of the fake burgers, but prefer to eat vegetables. One of my favorites is fettucine with spinach pesto and roasted red peppers.

My favourite vegetarian meal was at my local Café called "Stellas" that made a super-deadly (and perfectly seasoned) veggie-chili. They served it over this really nice bed of white/wild rice and topped with melted vegan cheese---oh so good!

Omgomgomg... the best vegetarian meal I ever had was at the Green Zebra in Chicago. Ricotta gnocchi in lemon crema with grilled ramps and green garlic. Oooooh mama, that was a good time. We normally only eat meat one day a week in our house so there's a lot of vegetarian food that we love. I think tonight I might have to make this balinese tofu recipe I have. Coconut milk, nom nom.

I had this amazing Cambodian dish at the Farmer's Market in Ithaca, NY made with tofu and sweet potato chunks with a sauce based on coconut milk. I still dream about it!!

Toasted cheese sandwich- hearty rye with cheddar, sliced vine ripe tomatoes, sliced fresh garden cukes, Gulden's mustard and a cup of Irish breakfast tea with milk and a bit of sugar. A fine lunch indeed.

Greek salads - red tomatoes, olives, feta (so not vegan), chopped lettuce, red onion, cucumbers, no peppers, with olive oil and red wine vinegar.
Maybe a side of taramosalata (depending on whether you eat fish roe...)?

-Grilled "cheese" with tomatoes. It includes yeast flakes, onions, carrots and cashews. I like to add juicy slices of cherry tomatos instead of the large ones.

Homemade black bean burgers fixed on the grill with grilled sweet potato "fries" and -- in season -- sliced tomatoes seasoned with Old Bay seasoning on both the "fries" and the tomatoes.

Field peas & snaps over rice with a dash of green Tabasco sauce.

I'm happy with a nice tabouleh salad (light on the parsley, heavy on the fresh tomatoes) on grilled flatbreads, with some tzaziki drizzled over the top.

My favorite meatless meal is a perfectly ripe heirloom tomato, preferably from my garden, sliced and covered with basil leaves and maybe some fresh mozzarella, the tomatoes are great either way. To complement the tomato and basil, a simple vinaigrette  & some sweet Maryland silver queen corn, roasted or better yet boiled - no more than five minutes. When I'm preparing to plant my garden in March I'm thinking about tomatoes in August, fat, red, meaty . . . yeah!

I love mashed potatos between a grand biscuit for a quick easy and yummy meal.

I make a killer bean burrito -- tons of flavour and very satisfying for me, a carnivore, and my husband and stepsons who are vegetarians.

Oh easy, falafel OR bagels with cream cheese, which also happen to be my two favorite foods on the face of the earth. I don't eat a lot of meat in general, so I'd looove the book!

Like many have said, I don't lime ones where the veggies are suppose to be fake me. I like the meals that just don't need meat. Home-made pizza, bean enchiladas, roasted vegetable bake.

Tough one.....but I'd have to say chickpea-pasta soup. Sauteed onions and garlic, broth, tomato sauce and seasonings, chickpeas, and in the last five minutes, you toss in 1/2 cup broken-up angel hair pasta. Some grated parmesan on top, and you've got the perfect meal for a winter weeknight.

My absolute favorite veggie meal is roasted winter vegetables: potatoes, beets, carrots, onions, and brussels sprouts, tossed in a little olive oil, salt and pepper and roasted in a hot oven until browned and crispy. I make lots so I can have leftovers for lunch.

I am not really a vegetarian but would like to eat less meat. I am also a bad cook so if this would help, that would be wonderful. The only meatless meal that I can this of right now would be spaghetti. I am trying a few recipes but again not a great cook. Thanks.

Has to be a chipotle-butternut squash soup that I make from the freshest squash in the garden. The sweetness and silky texture of the squash from a quick roast is balanced beautifully with the heat on the back on of the palate from the chiles. I tell you what, top that bad boy with a bit of chipotle-sour cream and you will be in veggie-heaven.

I prefer my pasta without meat. One of my favorite pasta dishes is spaghetti tossed with roasted tomatoes, peppers, garlic, onion, and zucchini.

My mother makes a great eggplant parmesean with tofu slices between the layers of eggplant, casserole-style. She uses ricotta cheese in between the layers and mozzarella on top.

I like vegetarian lasagna!

I think penne tossed with vodka sauce has become my favorite fast, easy and delicious meal that has no meat. Even adding in some sautéed mushrooms adds a little more sustenance and doesn't overly complicate it.

My current favorite vegetarian meal is a salad made with tomatoes, day-old bread, olives, baby lettuce and aged provolone cheese. Add a dash of olive oil and you're set!

Just had spinach and goat cheese ravioli the other night -- really yummy. But one of my ultimate comfort foods is something I used to cook when I had just moved into my new apartment and didn't have much in the pantry: pasta, oil, garlic, parmesan.

Near my house in Los Angeles, there is this decadent vegetarian restaurant called Elf. The food they cook is vegetarian, but it is not executed with the mindset that they are limited because of the lack of meat. Instead, the food is enhanced by it's vegetarianism. They have a savory crepe of chevre and mushrooms, and a kale salad dressed in what seems like no more than lemon juice, that are outstanding. I am currently trying to cut back on my meat eating, and would love to learn to cook like the magicians at Elf.

I have been trying to eat more vegetarian dishes. Currently, almost all of my vegetarian dishes include copious amounts of cheese. Veggie nachos, veggie pizza, Monterey spaghetti (to which I add artichokes, spinach and artichoke cream cheese and green onion sour cream), and pierogi. I'm always on the lookout for non-cheeseflagration recipes.

My meals are all meatless... Lately a favourite is a toasted black olive ciabatta roll spread with homemade hummus and filled with roasted veggies (eggplant, zucchini, onions) and juicy juicy sliced tomatoes.

Spaghetti with diced fresh tomatoes, a handful of torn basil, salt, and olive oil. For the rest of my life.

My favorite meatless meal is Extra Fancy Baked Beans!

I've been a vegetarian for years, so it's hard to think of one favorite meal....probably either some kind of baked dish with layers of vegetables and a cheesy crust; lasagna; or quiche, because they all feel like a real entree despite being meatless!

Cold peanut noodles. Or black bean burritos. Both so simple, but so good when it's hot out!

In the summer when we get fresh veggies from the garden I never miss the meat. Two of my favorite meatless meals are: green beans, new potatoes, fried yellow squash, sliced tomatoes, cucumbers and onion, and cornbread; fried green tomatoes, creamed corn or corn on the cob, potatoes, sliced ripe tomatoes, crowder peas, and either corn bread or biscuits. Another one is corn on the cob, fried okra, and sliced tomatoes. Of course I also like veggie gumbo made with okra, tomatoes, and corn.

I can't pick one. Spring and summer vegetable stir fry dishes stand out as well as anything with young eggplant. There is no particular meal, just ingredients to meld. Yumm.

With all the great summer produce available now, it has to be ratatouille. Warm or cold, with crusty bread, cous cous, or just a spoon. Yum!

Hmm, there are just so many vegetarian recipes that are so delicious! However, one of my favorites is quiche with caramelized onions, broccoli or spinach, and pecorino romano.

My favorite meatless meal is a supposedly greek dish called Kolsun, which is basically spinach stuffed in a pastry. I have never been able to find a recipe like it though. It is spinach (mixed with a little something extra) stuffed into an oily pastry dough. The edges are crimped and then baked till the edges are golden brown. It is actually my favorite meal, but that is probably partially due to the fact my mother made it only rarely during the year. I have figured out how to make it myself now :)

For comfort food, it's macaroni and cheese, for more gourmet meals it's ratatouille (preferably with homegrown veggies.) I use Julia Child's recipe, modified slightly depending on what I have on hand.

Oh this is hard. I love vegtarian food. Ona cold day--Ratatouille with some good crusty bread. Maybe just out-of-the-fryer falafel or paneer and garlic naan too. So many delicious options!

....a visit to the farmer's market will always produce a flavorful and healthy combination, as you can not go wrong, anxious to return for more!

It's a tossup between the Vegetarian Cassoulet in March '08 Gourmet or my an Asparagus and Porcini Risotto.

We have been learning some delicious vegetarian recipes since my son became one at age 10 (he's 13 now). Our family favorites are Spinach/Artichoke/Mushroom white lasagna and an Heirloom Tomato Tart (w/feta!).
Our simple ones are vegetarian crockpot chili and taco salad, seasoning the black beans with cumin, coriander and cayenne.

One of my favorite vegetarian meals is also one of the fastest: a piece of crusty bread topped with wilted kale or chard and a poached egg - delicious.

Man, I dig on some chickpea stew.

I make a killer minestrone from Martha that's not your average kind. It has red onion, cabbage, cannellini beans, green beans, potato, basil... It's such a different taste than regular minestrone, but just so satisfying. I could eat it for days straight, and I usually do.

A culinary achievement for me is to make vegetarian meals that are just as rich and satisfying as the steak and potatoes I had growing up in the Midwest. I utilize tomatoes, any other vegetables I have on hand, a little red wine, and a dab cream and butter to make an amazing veggie stew that can be put on some gnocchi or penne, or thinned out with some vegetable stock or water to make a satisfying soup.

My simplest, most favorite vegetarian meal is a pasta dish I make with whatever vegetables are on hand. I love it with mushrooms, artichoke hearts, grape tomatoes, olives, capers, spinach and a squeeze of lemon. It's easy, fast and is a great fridge clearer!

Farfalle with a sauce of ground toasted walnuts, garlic, chopped herbs, a little cream and a little pasta water to loosen it up, and lots for Parmegiano of course!

For a light meal pasta with pesto. For a filling meal beans with cornbread and a purple onion.

My favorite meatless dish is cubed tofu, marinated overnight in teriyaki sauce, saki, steak sauce, fresh garlic, scallions and cilantro-pan fried and tossed with rice vermicelli, fresh cucumber, parsley, green onions, a spoonful of tahini, a spoonful of rice-vinegar and topped with roasted sesame seeds. Delicious and chop-stick worthy. Nom nom.

Too many to choose from! This evening it's soba with eggplant, tomato, and peanut-sauce. But who knows what tomorrow will bring?

I love stuffed veggies (peppers, eggplants, mushrooms, tomatoes, etc.) with quinoa, beans, and more veggies. It doesn't get any better than that!

It has to be a toss up between bean chile, and lasagne made with a fetta, olive and fresh tomato sauce. Decisions, decisions. I think the lasgne wins out on the comfort food side of things, but you really can't beat chile for simplicity...

We eat a great many meatless meals around here, though we are not vegetarians. This week, I've been hankering for a veggie version of pad thai, using tofu as the protein. Our local thai restaurant does this especially well; yum!

I usually have a hard time with meatless. I will intend to go vegetarian and then forget and add some anchovies or chicken stock. But this week I made vegetarian enchiladas with bell peppers and chayote squash and it is my new favorite meal.

Tofu Pup hot dogs smothered in ketchup and dijon mustard.

Lentil soup or hummus with pita and tzatziki! Falafel is right up there, too.

Marinated/grilled portebella mushroom burger with havarti, avocado and sprouts or lettuce on a grilled wheat bun or

Roasted edamame seasoned with garlic salt, cayenne and seasoned salt, then topped with some cheddar or

Sprouts, cucumber, avocado, tomato, little bit of hummus, cheddar and muenster, little bit of ranch dressing on wheat.

Cranberry and almond string beans - simple and delicious! Saute string beans and cranberries with a touch of oil and a splash or red wine, toast almond slivers (or pine nuts) and drop them in. Mmm my absolute favorite!

I think Asian food does veggie best.. I could eat buckets of eggplant and basil, pad see ew with tofu, fried tofu, leek dumplings, seaweed salad.... and on and on.

I LOVE the ultra-simple, ultra-comforting, mujadarrah---Lentils, Rice and caramelized onion. YUMMMMMMM.

Must I choose only one? Hmmm...As of right now, my favorite veggie meal would be ... Ratatoullie served with fresh crusty bread and a leafy green salad with garden cucumbers and a homemade vinigrette.

I'm not a vegetarian but my dear friend is and she would love this book. She loves to make a pasta dish with fresh veggies.

I try to eat vegetarian at least 3 times a week and my favorite is eggplant parmesean.

I make a fake meat using tofu, TVP(Textured Vegetable Protein), soy sauce, & garlic pepper salt. I use it to make veggie "meatballs", veggie "meatloaf", tacos, burritos, in chili, ect..

I love zuchinne casserole! Mmmmm. In fact we just had it yesterday. In the winter I lover butternut squash soup and tomato soup also.

We love spinach and mushroom rissotto.

I was in Edinburg recently and had a fantastic vegetarian scottish haggis. I really don't understand why they need to link this delicious dish with something as vile and heinous as hagus but what can you do. Have to learn to make this myself because not sure when I'll be back in Scotland. Cheers!

I'm not a vegetarian, but my sister is a pescetarian. My favorite vegetarian dish that I make is a pasta salad with vegetables with an oil and vinegar dressing.

Pasta and zucchini. Slice the zucchini as you wish. Sautee garlic in a fry pan. Add zucchini, salted on both sides. When lightly browned remove from heat. Cook angel hair according to directions. Plate. Pour the zucchini and olive oil over the pasta.

I love pasta cause it tastes so good and filling.

Indian curries. Specifically a warm plate with a spoonful of Palak Paneer - mild spinach and cheese, alu gobi - spiced potatoes and cauliflower, saucy soft eggplant curry, dhal - lentils, sweet mango pickle, hot chillies, refreshing raita - yogurt and cucumber and hot naan bread. Pure heaven.

My favorite recent vegetarian meal was spaghetti with marinara sauce, sauteed eggplant, and lots of fresh basil. So good.

My favorite meatless meal is taco salad with the meatless crumbless (like ground meat...but not). SOOOOO yummy and so healthy!

Korean soybean soup dwenjang jjigae. It's heartier and more fermented than miso soup and a great comfort food. Yumm, makes me want some now ^_^

My favorite meatless meal would have to be the Lebanese stew a good friend of mine made for a dinner party once - such a hearty mix of carrots, potatoes, tomatoes, leeks, onions, radishes, and spices, and I really couldn't have enough. Now that I have the recipe I make it all the time as a real comfort food type of meal. Thanks!
