Celebrate 'Sneak Some Zucchini onto Your Neighbors' Porch' Day

What do you do with that truckload of zucchini you grew and have no use for? Foist it onto someone else! That's the point of Sneak Some Zucchini onto Your Neighbors' Porch Day, which takes place tomorrow, August 8. The creators of the holiday, Tom and Ruth Roy, share suggestions on how to get rid of excess zucchini at Wellcat. If you'd rather use your zucchini instead of give it away, here are some recipes to get you started:

Zucchini is $2 a pound or more at the local farmer's market - I've always thought it should be more of a "gift with purchase" ...

I've got a bunch and am thrilled.

Tonight were' making grilled pizzas- some all vegetable and some with pesto cream sauce, chicken and zucchini and mushrooms.

Picked up some gorgonzola on special to make the farfalle and gorgonzola tomorrow. (Yay!!)

Making zucchini potato pancakes with eggs for Sunday breakfast.

And my go-to weekend snack will be parmesan breaded, oven fried zucchini.

Might even do a succotash style pan fry substituting zucchini for lima beans. mmmmm-mmmmm!

I'm happy camper.

When I moved to Vermont last year, the town I lived in has Zucchini festival every year... my roommate told me that if i was in town and didn't lock my car, that I shouldn't be too surprised if I found a zucchini sitting in the seat when I got back. She said that so many people are always overrun with them, that they just start sticking them in people's cars. Unfortunately, I never had one left.
