Wylie Dufresne's Garlic Bread
"We roast off several heads of garlic in foil and then put that through the food mill and blend it with some raw parsley and some butter. You get this really bright-green spread. We get some white hero rolls down the street, slice them lengthwise, toast them really well, spread the garlic butter on, hit them with some Parmesan cheese, and put them back in the toaster and get them nice and golden brown with melted cheese." I found this article quite interesting and almost sent it to some friends. The guy eats a lot of sweets, did you notice that? Interesting to read the types of foods famous chefs eat on a regular basis. I like this feature on their site.

i read the whole thing too... it was exhausting! i like how wylie is like "i don't eat on mondays and tuesdays" and then proceeds to describe the giant meals he ate on those days. he's great! love wd~50.
the new york diet feature is definitely great. there was another really good one awhile back from lydia bastianich.
