Freezing Eggs

Emilie of Freeze Happy, a blog devoted to freeze-friendly ingredients and recipes, enlightens us about freezing eggs. It's a handy option if: you bought too many and they're about to expire, you want to save the whites or the yolks after a recipe, or you don't live near a grocery store.

If you've decided you're not weirded out by freezing eggs, just crack them open, beat them up, and store them in a muffin tin. The little egg-sicles can be defrosted in the fridge. Note: Do not freeze them in their shells. Although, I feel like the third grade boy in everyone kind of wants to know what would happen.

I know what you mean (third grade boy thing). I'm assuming that as liquids expand in the freezer that the egg shell would crack and there would be an eruption of egg white. Hmmm. Mini frozen volcano in the freezer? Sounds like something my eleven year old son would like to see. I'll put the egg in a plastic tub though to save on clean up.

Im guessing, there wont be an eruption because of the air bubble. The inner membrane would break first and the expansion of the egg would fill that space?

Interesting. I've never tried it...but might have to one of these days.

I've accidentally frozen eggs before, nothing happened. Sorry for the lack of excitement.

I froze whole eggs once on accident - I was in a foreign country and didn't know which symbol on the fridge to turn the knob toward and ended up making the fridge into a big freezer.

The eggshells cracked, but the inner membrane did not. I was planning to boil them anyway, and they worked just fine.

Ooh, and maybe if you pricked the egg first, it wouldn't 'splode.

I've also accidentally frozen eggs before and had the same experience as MollieBeth. I just peeled off the shell and used them for scrambled eggs and I think, even in a baked good and it all turned out fine.

I had some eggs accidentally freeze in an old fridge at the cabin a couple of weeks ago. The shells cracked a bit, but otherwise the eggs were frozen intact. Kind of neat, like uncooked hardboiled eggs. I should have just peeled them and thrown the eggs in a ziploc freezer bag.

My refrigerator malfunctioned and the eggs froze, so I just hard boiled them. They were fine.
