20090720-chc.jpgPhotographer-editor-writer Christopher Hirsheimer and editor-chef-writer Melissa Hamilton are no slouches in the food-media world, so it's noteworthy when they team up to self-publish the stunningly gorgeous Canal House Cooking, Volume No. 1, the first in a series of seasonal cookbooks coming out of the Canal House studio the two share in Lambertville, New Jersey.

Christopher (the only woman I've ever met named Christopher) is extraordinarily accomplished; she was one of the founding editors of Saveur, she is one of the great food photographers anywhere (her stunning photos grace the pages of The Young Man and the Sea, the book I co-wrote with Dave Pasternack), and she has written four cookbooks on her own, including The San Francisco Ferry Plaza Farmer's Market Cookbook. Hamilton co-founded her family's restaurant, Hamilton's Grill, and worked as an editor and test kitchen director at Martha Stewart Living, Saveur, and Cook's Illustrated. Why self-publish with resumes like that? Christopher says, "Working in our beautiful studio we are able to produce exactly the book we set out to do, without interference. With a few exceptions, we use ingredients that are readily available and found in most towns throughout the United States. Gazpacho is my hands down favorite thing to "cook" in Summer.

Anything barbecued, and anything spicy. Preferably the two together.

Peach ice cream made with beautiful farmer's market peaches.

Basil straight from the plant when I am water the garden, corn on the cob is great too, and nothing beats a lobster bake.

Just a sliced heirloom tomato with sea salt and freshly cracked pepper. And maybe a drizzle of super awesome balsamic vinegar. Deeeelish!

Iced avocado soup, or any other cold soup, really. ^_^

A huge heirloom tomato, layered with fresh mozzarella and basil. Predictable but delicious.

caprese pasta salad is a great crowd pleaser, and i've also recently found a classic gazpacho recipe that my boyfriend and i can't get enough of.

Salads. Salads made out of anything I have in the house. Not a recipe, I'm afraid, but in the heat it's about all I want to eat...

a new favorite i picked up on smitten kitchen: bell peppers, red onion marinated in red wine vinegar, feta cheese, grape tomatoes, zucchini. topped with the vinegar the onion was marinated in and olive oil. i've been making this every week!

also, a simple fresh tomato with balsamic never gets old.

panzanella. tomatoes, bread, basil, olive oil, vinegar and whatever else is on-hand. the perfect summer meal!

Dungeness Crab pasta. The simpler the better.

Anything with a tomato and some grill marks!

A huge bowl of cherries, freshly washed and purchased at the market. (Or pick-your-own). Once I've grown weary of that (which takes a while), pies, pies and pies. And homemade ice cream.

Souvlaki skewers, grilled over charcoal, wrapped in a fresh pita and served with onions, tomatoes and homemade tzatziki. *drool*

Sour cherry jam and blueberry cobbler!

LOBSTER. on a roll or in the shell. preferably with a side of onion rings and ocean view.

Thai chicken salad on cumin bread. Preserved lemons on broiled.

Bacon, lettuce and tomato sandwiches!

Pasta with olive oil, garlic, lemon, and whatever herbs look good on the patio.

Manchego cheese with quince paste

Strawberry shortcake, the way my husband's family makes it: Bisquick shortcakes, fresh from the oven, slathered with butter and piled high with sugared strawberries and whipped cream--yum!

Cucumber salad, tomato sandwiches, grilled zucchini, blueberries

Cook's Illustrated panfried crab cakes, made with local blue crab. Served with a spicy remoulade sauce on the side & a light salad (butter lettuce, avocado, tomato, brioche croutons, and shallot-lemon vinaigrette), this is the perfect summer recipe!

Tomato pie, with garden tomatoes and basil. Served with a light salad, it's the perfect dinner.

Definitely mint ice cream, with mint fresh from the yard.

My favorite is caprese salad with sweet, juicy corn on the cob. Nothing says summer better -- though a bowl of vanilla ice cream with blueberries or strawberries won't hurt, either.

peanut butter or sesame cold noodles. This year, I have some tahini paste, too. I'm super excited.

Grilled vegetable caponata, super fresh corn on the cob and strawberry shortcakes made with biscuits and freshly whipped cream.

I love doing a nice couscous w/summer veggies like patty-pan squash and some carrot and parsnip, seasoned w/saffron and cumin and cinnamon. It just melts in your mouth!

Sweet corn salad with a lime/cumin vinaigrette. Yum.

One really good tomato, sliced, one a piece of really good bread, toasted. Sprinkle on a little salt, and if everything is perfect, it doesn't need anything else. Although a little goat cheese on the bread doesn't hurt!

Romaine and Herb salad with goranzola, red onion, kalamata olives and sliced steak

Basil cocktails -- think Corpse Reviver #2 (roughly equal parts gin, Lillet, Cointreau, and lemon juice with a drop of absinthe) shaken with a couple of fresh basil leaves and a small dose of real (i.e., pomegranate) grenadine. It's really smooth and refreshing, especially for such an alcoholic drink.

There is not much need for recipes in the summer-just fresh fruits and vegetables.

A BLT with tomatoes from the garden or the farmer's market.

As of about an hour ago, the gazpacho w/ shrimp and avocado posted here a few days ago.

fresh fruit smoothies...just fruit (especially berries), water and ice mixed into a slush-yum!

I grew up spending my summers barefoot in rural Georgia, helping my great uncle pick cucumbers (with a little vinegar on them - who needs to jar pickles?), squash of all kinds, corn, butter beans, fresh tomatoes that we ate on slices of white bread with mayo, salt, and pepper. But my birthday is in August, and my favorite summer meal remains a birthday breakfast of a slice of my great uncle's pound cake and a few scoops of my grandaddy's home-churned banana ice cream. They're both gone now, but that's what I'm having for breakfast to celebrate this year; I can taste it already!

I like my New Jersey tomatoes, sliced, basil leaves from my garden topping the slices, fresh mozzarella slices on top, drizzled with olive oil, then sprinkled with cracked pepper and sea salt.

I have so many favorite summer veggie recipes but one I look foward to each year is warm green bean and tommy toe salad. For those who don't know tommy toes are cherry tomatoes. Of course I also look foward to fried green tomatoes.

My favorite summer recipe is grilled corn on the cob with some garlic butter and a little rosemary. SOOOO GOOD!!

BBQ chicken on rotisserie on grill, corn on the cob cooked in husk on the grill, foil wrapped thinly sliced potatoes cooked on grill. yum!!

anything that highlights the delicious, local, fresh produce... or, you know, involves avocado. not so local, but still totally delicious.

Any type of fresh salsa, really, though I'm currently on a roasted corn salsa kick.

Something simple like grilled corn with butter and lime zest/chili pepper...or just a really juicy peach. Guess that's not a recipe but you can't beat that for summer eating. I think the fact that it doesn't last long makes it taste better.

Lately, I've been eating a lot of my own bastardized version of tabbouleh. I use a seven-grain pilaf instead of bulgur and add plenty of fresh lemon juice, olive oil, parsley, mint, scallions, and whatever veggies I've got laying around in the fridge. Makes a fabulous summer meal!

I love to have a large variety of small tomatoes, mixed with a bit of olive oil, sea salt, fresh herbs of your choice, minced garlic, and fresh mozzerella. Over this, pour al dente noodles, preferrable fresh if possible. The hot noodles cook the tomatoes just enough. Allow this to sit for at least five minutes, then dig in!
I also love a fresh sweet corn salad, with whatever veggies you have around chopped up, and couscous if you have it, with apple cider vinegar, sugar, fresh herbs, salt and pepper. MMMM!

My favorite summer recipe is fresh corn on the cob, barely cooked, with butter and salt.

Fresh corn soup pureed until creamy (but not strained!), and then topped with toasted pumpkin seeds, a drizzle of good EVOO, and chopped fresh parsley.

Love ceviche in the summer.

Avocado with a little soy, a squeeze of lime, and a fork.

Fresh tomatoes sprinkled with sea salt, some fresh basil and any type of salty cheese, with some fresh baked bread and good buttter

Fresh salsas and practically anything grilled.

I've been digging Martha Stewart's Gnocchi with Summer Vegetables. Lemon, butter, cheese, zucchini, squash, and cherry tomatoes tossed with gnocchi. So bright, summery, and delish!

Sweet Potato Salad - potato salad with sweet potatoes add jalapenos, bacon and a little brown sugar with lots of cilantro. Mmmmmmm.

A baguette just a bit past its prime, cubed, with fresh tomatoes, cucumbers, sweet onion, fresh basil and a bit of olive oil - a salad that's a meal, particularly if you add a cube or two of fresh mozzarella.

When the native tomatoes come out - toasted and buttered whole wheat bread with a sliced native tomato and you have a simple, tasty and fresh sandwich.

A hunk of bread, some good cheese, a few fresh tomatoes and cucumbers with a little olive oil and balsamic vinegar and basil all eaten with your hands on the beach watching the setting sun. maybe some berries and whipped cream for dessert...

Chicken thighs, skewered and coated in hosin sauce. Barbecued. Served with a mixture of grilled peppers, sweet onions, corn, and asparagus.

For summer, I like to keep it simple: strawberries with a touch of aged balsamic vinegar.

In the summertime, My sons and husband love eating fried bologna sandwiches.made with spread of mayo, fried bologna, sliced organic tomatoes, salt and pepper.

lemon + sugar syrup + fizzy water + ice = what I live on during the summer. Sometimes, I throw in some mint. Sometimes i use lime instead. But lemonade is what makes summer bearable.

When temperatures rise and even grilling is too hot my thoughts turn to salad nicoise and a nice cold chardonnay! Fresh raspberries drizzled with melted chocolate and a small glass of ice wine finish the meal al fresco.

BLT's and Pasta Salad with Seafood.......had to choose two.

Pesto when basil is in abundance...slathered on grilled baguette and served with sliced and salted tomatoes and fresh mozzarella.

Fresh vegetables (corn, green beans, tomatoes) from the garden.

Watermelon Gazpacho...or BLT's!! Summer is all about the almighty tomato.

Nothing beats fresh corn.

Veggie dinner consisting of fresh green beans, vine-ripe tomatoes, cantaloupe and cornbread.

With summer produce, the less cooking the better. Sweet and raw sugar snap peas, cantaloupe with proscuitto, early girl tomatoes with burrata and basil. If the grill is on, a grilled vegetable panzanella salad is a perfect side dish to pretty much anything.

Delicious summer tomato recipe!

Ingredients
1-Folded refrigerated pie crust
2-3 cups Shredded mozzarella cheese
5-6 Medium-Large Garden ripe tomatoes
1-Tablespoon Dry basil
1-1/2 cloves minced Garlic
Âľ cup Mayonnaise or salad dressing
½ cup grated Parmesan Cheese
ÂĽ teaspoon ground White Pepper

Directions
Unfold pie crust according to package directions. Place in a 9” deep-dish pie pan. Flute edge; press with the tines of a fork, if desired. Pre-bake according to the package directions. Remove from oven. Sprinkle with ½ cup of the mozzarella cheese and rest of ingredients. Cool on a wire rack. Cut tomatoes into bite size pieces; drain on paper towels. Arrange tomatoes over the melted cheese in the baked pie shell. In a small bowl combine the minced garlic and basil. Mix well. Sprinkle the mixture over the tomatoes. In a medium mixing bowl, combine the remaining mozzarella cheese, mayonnaise, Parmesan cheese and white pepper. Spoon the cheese mixture over the basil mixture, spreading to evenly cover the top. Bake in a 375-degree oven for 40 to 50 minutes or until the top is golden to brown and bubbly. Serve warm.

I actually just learned how to make this fantastic Mediterranean pepper salad -- just half a dozen fresh veggies diced up and tossed with some pickled onions. Simple and fresh, and amazingly delicious.

Grilled summer squash and super-ripe tomatoes...nothing can beat 'em!

Corn, shrimp, pea salad.

a big bowl of somen (Japanese cold noodles), piled with julienned cucumbers, tomato chunks, shiso chiffonade, chopped scallions, chopped up bulgogi (courtesy of your local Korean market), a sprinkle of roasted sesame seeds, finished with a drop or two of sesame oil. Slurp away.

Very basic... homemade salsa with very fresh vegetables.

Greek salad- tomatoes, cucumber, onion, feta, salt, pepper, a dirzzle of olive oil and maybe some oregano. Yum!

For me it's all about simplicity in the summer and just letting the quality of the backyard grown tomatoes shine. A little Balsamic. A little Extra Virgin Olive Oil. Kosher Salt. Feta if I'm feeling frisky. Yesterday I sliced up some tomatoes and cucumbers from the backyard and topped them off with a Feta Vinaigrette I made with some feta, red wine vinegar and olive oil.

Cold Udon dressed with seseme oil, rivce viniger, and tossed with cucumbers and crab :)

Curried chicken with chicken breast, apples, celery, curry on top of fresh salad!

Avocado, cherry tomato and corn salad with lots of freshly squeezed lime juice, grated lime peel, olive oil and a dash of salt and pepper. Fresh, sweet, zingy, summer.

Caprese with Burrata and heirloom tomatoes...

Mom's cucumber salads: 1)cucumber, onion, oil, vinegar, garlic, sugar, salt & pepper or 2)cucumber, onion, mayo, vinegar, garlic, sugar, salt & pepper. Now my kids crave 'em too!

Favorite recipe? Cherry tomatoes, ripe to almost bursting, still warm from the sun + just a pinch of dirt still dusting the top. Remove from vine, pop into mouth, CLOSE mouth when chewing (Important - or seeds will fly!). Serves one - happily.

Tomatoes, warm from the garden, and cucumbers all diced up in their own juice, with maybe a splash of rice vinegar, and some freshly ground pepper. Makes a good and easy summer salad.

Yellow squash
Cherry/grape or chopped fresh tomatoes (whatever looks best)
Marjoram
Little onion diced
Olive oil
Parmagianno
Pasta of your choice cooked in salty, salty water

Heat olive oil. Add onion til tender/translucent.
Slice grape tomatoes in half.
Add squash to skillet and cook until starting to color and get tender.
Add tomatoes and chopped marjoram.
Throw in the pasta and toss.
Add a little olive oil, pasta water (if necessary) and some grated parmesan cheese. Mix well.

Serve with more parmesan for grating at the table.

Mmmmmm.

My favorite summer recipe? Here goes..

Garden fresh ripe red tomatoes, garden fresh basil, and mozzarella made that very day all layered up prettily.
Then, take olive oil, balsamic vinegar, and honey. Shake it all up and pour over the tomatoes, mozz and basil. Eat right away with fresh crusty homemade white sourdough. Be sure to dip bread into the dressing after the tomato mix is gone.

It isn't summer until I've had this. So for me, it isn't summer yet because my garden is extremely slow this year. I blame the fact that june lacked sunshine and warmth.

A club tomato sandwich on toasted sourdough with a little mayo, crisp peppered bacon, some fresh baby arugula and sliced avocado.

Cold Hungarian stringbean soup followed by thick slices of summer tomato on Brioche or Challah spread with mayo.

Sink sandwich: Good bread with Hellman's canola mayo, lots of thinly sliced fresh tomatoes piled high, and plenty of salt and pepper.

Bulghur Pilav Salad

Indredients
bulgur pilav (steamed bulgur with salt, pepper, basil, bay leaf, and rosemary)
small onion
carrots
green beans
salt & pepper
balsamic vinegar
fresh basil
cherry tomatoes
fresh basil
toasted almonds

I kind of make this part up as I go. But the basic ideas is to saute veggies in olive oil then add the basic bulgur pilav into the pan. You can use all kinds of fresh summer veggies here, like red cabbage, peas, zuccini, peppers, etc. Stir and add salt and pepper until mixture is hot. I toss in fresh herbs (basil, or margoram, or whatever), a little balsamic vinegar, and cherry tomatoes in a bowl after i'm done cooking. Sprinkle toasted almonds on top. Serve warm or cold.

Chicken and Fruit Salad: Grilled Chicken Breast, Peaches and Plums tossed in a Balsamic Mustard Vinaigrette served over a bed of greens.

I take wonton wrapper squares, brush them with butter and sprinkle them with brown sugar and cinnamon, and then bake them in a muffin tin to form little cups. Once they're cool, I fill them with a whipped mixture of mascarpone cheese, honey, and grand marnier. Then, just top them with your choice of berries or tropical fruits and add a few snips of fresh mint.

The last time I made these, I gave my guests the option to build their own fruit cups! They LOVED them!

I have a minor rule that I try to follow to always try new recipes and only repeat the amazing things. So usually I make something new. And for the past few summers I've been obsessed with Rhubarb. So this summer I saw a take & bake pizza place offer it on pizza. I couldn't get one then, so when we had a pizza party, I made a rhubarb sauce. I think I was the only one to actually try it, but it was amazing! With a little bit of gorgonzola, mozzarella, sage from our garden and an olive oil base, it was fantastic.
