The Thrill of the Bean
Paupered Chef Nick discovers the thrill of 90-minute, no soak beans: "The beans were cooked. Every single one was tender and ready to go. . . How could this be? This question drove me mad, because I have been cooking beans nearly every week for the past year, and now I realize I've been doing it all wrong."

ok, it's more than two hours later and the beans still have a way to go. these were expensive organic designer beans from the union square greenmarket purchased a couple of months ago, so they are not old. i thought that this technique sounded too good to be true, and it is! bah humbug!

This makes sense, my mom prepared pinto beans once a week and never soaked them. I'm so trying the oven method, but have a question...will this work with garbanzo beans as well?
