Snapshots from South Korea: Vegetarian Temple Food at Sanchon

Last month I visited Seoul, South Korea, for the first time. Here's a look at something I ate from my one-week trip.

It wasn't until I had asked friends for food recommendations in Seoul that I first heard of temple cuisine, traditional vegetarian (or vegan, to be more specific) food served at Buddhist temples. Because I can't just eat fried things and noodles all the time, I was grateful to come across Sanchon ("Mountain Village"), one of the most famous restaurants in Seoul (and worldwide) that specializes in temple-inspired cuisine, while walking around Insadong with Rachel Yang and her mother on my last full day in South Korea. The restaurant was opened in 1981 by Kim Yon Shik, a former Buddhist monk, who aside from being a restaurateur has also written three cookbooks about vegetarian cuisine. When I was leaving the restaurant, I saw a man gluing on each petal by hand at the checkout counter.

The restaurant is located at the end of a winding path in an old-fashioned house, making for a calm, secluded atmosphere in what is generally a busy area. After taking off your shoes you enter the house's courtyard—aka the dining room—decorated with beautiful handmade lotus-shaped lanterns. You have the choice between sitting at a regular table with chairs or low tables with cushions on the floor, but when I was there everyone chose the latter. (I preferred it; it made me feel closer to my eating companions and my food.) Keeping with Buddhist tradition, the utensils and most of the serving dishes are made of wood from the zelkova tree.

For ₩22,000 ($17.84) per person, the prix fixe lunch provided us with more than 20 dishes. They were mostly small portions of seasoned vegetable dishes, or namul in Korean, but it was still a lot of food. And to be honest, I don't know exactly what I ate. There were many unidentifiable forest and mountain vegetables seasoned with sesame oil, one of my favorite seasonings. Aside from the variety of seasoned vegetables, there was also japchae, pan-fried pancakes, soybean stew, and tofu.

My favorite dish was the sweetened fried kelp for its initially crisp texture that melted into softness at first bite, and combination of sweet and salty. The hearty tofu stew was especially comforting to eat during that cold, drizzly morning. And then there was the fun of having a miniature buffet of well prepared vegetables at my fingertips. While I could never love the more bitter greens, I loved having such a wide variety of flavors and textures, and, for a rare moment, not feeling bloated and fat after my meal ended.

If you're curious enough though, here's the full menu as it was written by the restaurant with my comments in brackets:

1. Appetizer: Porridge of the season [lightly seasoned rice porridge]
2. Watery plain kimchi
3. Radish mushrooms, peppers, and other vegetables wrapped in thin vermicelli pancake [We were given something else instead of this dish, a mixture of rice and vegetables wrapped in spinach-like leaves]
4. Seven wild vegetables, each with its own seasonings
5. Kimchi
6. Seasoned fresh lettuce
7. Cooked roots of balloon flowers and fern braken
8. Fried kelp
9. Steamed bean curd with burdock, mushrooms, and carrots
10. Jelly [acorn]
11. Small potatoes glazed with soy sauce and millet syrup
12. Seasoned wild mountain roots
13. Special chopsuey [japchae] made with various vegetables and mushrooms
14. Three kinds of fritters of fried seasonal vegetable
15. Seasonable Buddhist monk's favorite vegetables
16. Three kinds of pan fried seasonal vegetable pancakes [basically like #14, but with different vegetables]
17. Rice with beans, millet, etc
18. Soybean stew with mushrooms, radish, red peppers, bean curd, etc.
19. Tea
20. Sticky rice pastry [one of my favorite Korean desserts, a fried puffed rice snack called yugwa]

The menu also notes that they use certain ingredients called "The Five Stimulants" ("osinchae" in Korean) that you wouldn't find in traditional temple food: onions, green onions (scallions), baby garlic, green peppers, and honggo (dropwort). You can specify that you want dishes without the stimulants. (I found other sources that didn't list green peppers as one of the five stimulants, but included leeks, chives, and while rocambole. I would assume that anything in the onion and garlic categories aren't allowed, but that the five stimulants specifically refer to Korean ingredients.)

Although Sanchon's menu is pricier than most of the other food I ate during my trip, it's far from unreasonable. As one of my favorite meals during my trip, it's a place I'd return to if given the chance.

THis would be the perfect place for me! I also dined at a vegetarian restaurant like this in Seoul. But I forgot the name...I think it was up the hill and there was entertainment as well.

wow -- what a wonderful experience that must have been! my family and i ate at a terrific korean restaurant yesterday (i had dol sot bi bim bap, hubby had cham pong) and i love the little vegetable dishes they give you with the meal. those are often the most surprising taste sensations ever! lucky you -- i've truly enjoyed your culinary journal!

This is spectacular. Of all the places you've been to so far, if I had to choose just one to experience I think it would be this.

OMG midnight pork... That would be the yin to the vegetarian meal's yang.......... Let's see it, I did say "so far" :)

@chokpocky: I've thought about going there before...buut..have yet to. A bit pricey.. >_< But I should use a special occasion as an excuse to go there sometime.

Does Hangawi serve temple cuisine?

Can I ask what camera / lens / settings / light source you were using to take these? Some of the pictures are pretty amazing given the lighting looks like it would've been pretty bad...

@looren: I use the the Canon 20D with a Sigma 18-50mm F2.8 EX DC macro lens, probably on the fastest shutter speed with highest ISO, but Photoshop-ing the photos is what makes them this bright and whatnot. ;)

I ate at Sanchon regularly when I lived in Seoul and worked in Insadong. The food really is amazing there.

Now I am back in NYC and back to eating at Hangawi once again. Yes, the cuisine they serve there is as close as you can get stateside. It is temple food, although it has a full menu and you have the option of ordering a la carte or a more set menu like at Sanchon. The set menus are not quite the temple food (I believe they use onions and garlic), although many similar dishes could be selected. It even has a transporting experience, complete with being seated on the floor.

It isn't quite the same, though. Without having to step from rock to rock over water, and without being forced to order the set Buddhist menu, it couldn't be. However, short of a 14 hour flight, it is as close as I get to going back.
