Cook the Book: 'Bobby Flay's Burgers, Fries & Shakes'

You'd think that with access to a well-stocked walk-in and state-of-the-art kitchen they would eat exceptionally well, on par or better than the food that we pay for in their restaurants. You might think that it is all white truffles, foie gras, and vintage Bordeaux—but the reality is a bit bleaker.

Chefs are usually too busy preparing for service to sit down to a proper meal. Days start early, end late, and there is no lunch hour. When the clock strikes 10 or 11 p.m., or later depending on what time the restaurant closes, chances are the people who've made your dinner have had nothing more than a few spoonfuls of food (to ensure proper seasoning) and perhaps a few bites of family meal. This brings us back to the original question, what do chefs eat?

To answer this question why don't we look to a chef, or even better the celebrity chef Bobby Flay? In the introduction to Burgers, Fries & Shakes, Flay writes that his all-time favorite meal is a cheeseburger with fries and a shake. He likes to eat simple things, and most of his favorite foods fall into the late-night cuisine category: pizza, tacos, sandwiches, and of course, burgers.

We all know Bobby Flay. He's a huge television star, a celebrity chef, and a restaurateur with places in New York, Las Vegas, Atlantic City, and the Bahamas. His most recent venture, Bobby's Burger Palace, is a chain of burger joints with locations in New York, New Jersey, and Connecticut. Bobby's Burger Palace is a realization of a long time dream, a place that doesn't just serve burgers but is all about them (and the fries and shakes, too.)

Bobby Flay's Burgers, Fries & Shakes lays out the basic guidelines for making the perfect burgers, shakes, and fries at home and expands on them. Everyday this week we will be sharing recipes with you for basics like Bobby's Perfect Burger and Perfect Fries along with variations on these classics, such as the Bolo Burger and Plantain Shoestring Fries.

Don't worry—we aren't going to leave out the shakes or condiments either. How about a Fresh Mint-Chocolate Speckled Milkshake or some Homemade Dill Pickles to go with your burger? Caroline Russock

A good ol' mushroom and swiss burger, medium well, with A1 sauce. No lettuce or tomatoes...maybe some caramelized onions, but they aren't necessary. Big kosher dill on the side. Fried sweet potato fries...yum.

A big juicy burger topped with tomatoes, arugula, bacon, sliced avocado, sharp cheddar and chili mayo. DeLish! I use a fresh onion bulkie or sour dough bread to hold that baby together.

Make mine out of ground chuck with a little short rib added, applewood smoked bacon, mayo, lettuce, Mountain Gorgonzola on a fluffy, toasted, buttered potato bun. Medium rare, please.

We have burgers so often at home, I forget what a really good one tastes like. But a few weeks ago my husband and I went to a local diner and I had a patty melt, with lots of cheese and fried onions, and of course served on rye. It was one of the best burgers I'd had in years.

Buffalo burger. Nothing but lettuce, tomato, onion, ketchup, and some Dijon.

Can't beat the The Cheddar Cheesy at Chris Madrid's in San Antonio. Cheddar cheese ooozing out the sides, underneath a toasted bun!

Ahi Tuna Burger (with spicy asian slaw) from Taylor's Automatic Refresher in Napa/St. Helena. Yum!

Mushroom and Swiss with a garlic butter on the bun. No other condiments or veggies.

I have yet to find it - my local burger joint has a decent plain burger with lettuce, tomato, mayo, and ketchup.

Best burger I ever had was at this little Mom & Pop place in the middle of nowhere. It had "50's sauce" (some sort of thousand island dressing?), cheddar cheese, lettuce, tomato, and dill pickle, and the burger itself was juicy and delicious. Oh, and it came with seasoned lattice fries. SO GOOD

I like them simple. Ground beef with cheese, bacon, lots of onion, lettuce, and ketchup. Sometimes I use mayo and mustard, too. Definitely cooked over an open flame, though.

My perfect hamburger would just have lettuce, tomato, and LOTS of ketchup.

The Soul Burger at Paul's Palace in NYC...bacon cheese burger with fried onions and ham.

Freshly ground, not too finely, lots of fat with the beef sirloin, 2 inch thick, flame grilled on the outside and juicy, beefy, rare interior.

Grilled, buttered onion bun of medium thickness.
Liberally sprinkled with sea salt and freshly ground pepper. And finally, I will apply several thick slices of bacon.

Pretty much any non-fast-food burger makes me happy, as long as the meat is seasoned

I got this burger in Ypsilanti, Mi and it was to die for. It was a freshly ground all beef patty that they seasoned heavily with cracked black pepper. They topped it with a thick slice of Smoked Gouda and Apple-Wood Smoked bacon with the juiciest slice of tomato ever. I usually need to smother my burgers in Ketchup but I ate this burger 'straight-up'.

Sadly I have never been able to recreate this burger at home. :(

One of my favorites is a pork burger with bacon, garlic, oregano, and smoked paprika mixed in the patty with arugula, grilled peppers, and garlic aoli.

My favorite burger of all time came from Cheeburger! Cheeeburger!, a semi-upscale burger chain: 1/2 lb patty of beef, well-seasoned and cooked medium. Fried sweet onions, blue cheese sprinkles, thick-cut applewood-smoked bacon, and sweet-and-tangy Kansas City-style barbecue sauce. It's ecstasy on the tongue.

PJ Clarke's in Midtown is one of my faves. Pretty much any burger that is just beef, salt, and pepper, no bigger than 5 oz, medium rare inside is delicious to me.

My alltime favorite is a jalapeno bacon cheeseburger. Ive been making it for years. Its the most amazing thing.

My favorite burger is the Le Royale With Cheese at Django in Des Moines, Iowa. 10oz of ground-up New York Strip, molten cheddar and a Fried Egg on top. Add the duck fat fries, and I'm in heaven.

Home-made turkey patty melt with fresh bakery rye, good swiss, and grilled onions; oven-baked home fries on the side. Eaten outside on the patio while watching my 8 year old (very picky eater) son devour his!

best burger I ever had was at this roadside convenience store on the island of Aututaki in the Cook Islands. Big juicy patty, egg over-easy, bacon, special sauce, and a slice of pickled beet!

The veggie burger from Lucky's Burger in Hells Kitchen, NYC. It's crispy, flavorful, and the chipotle mayo is to die for.

Just recently enjoyed an outstanding burger at Red Coat Tavern in Royal Oak, MI. Friggin fantastic. It was juicy, cooked to order and came with this delicious zip sauce.

My favorite is the one I grill myself.

For a commercial burger, Hoodads in Ocean Beach, San Diego consistently has the best hamburgers I've tried. The mixture of meat, condiments, and surroundings make for a great burger experience.

Can't think of an all-time favourite but my current beloved is from a Serbian grill place run by a butcher-shop owner - veal/pork burger on a lepinya (flat, crispy-edged bun) with lots of veggies and their house sauce which is mainly roasted peppers, onions and feta. Nom.

I recently had the best hamburger at a Mexican restaurant-GRINGOS called the La Bom-bah burger. 1/2 lb Angus charbroiled, Monterey Jack, crumbled bacon, pico de gallo, avocado, green sauce (tomatillo based).

Normally i would say mustard, onion, tomatoes, chopped lettuce, pickles, jalapenos, thin beef patty. I like charbroiled best.

The first one I ever made -- nothing special, just 80/20 med-rare, but I was amazed it came out perfectly to temp AND well-seasoned. Ate it with sliced avocado, a squeeze of lime, dijon, lettuce, tomato.

Hands down, my favorite all time burger is a green chile cheeseburger from Blake's Lotaburger in New Mexico.

Knowlwood's in Anaheim, CA is my first and most lasting memory of a great hamburger. Plain cheeseburger with all the condiments.

As I've grown my tastes now include more variety in my choice of toppings, but I still remember my first burger as the best burger.

That would be a bacon cheeseburger with lettuce, tomatoes, jalapenos, ketchup, and mustard from Five Guys.

Lately I've been enjoying a burger that's made of lean, but not too lean, ground beef seasoned with A1 and Stubb's Spicy BBQ sauce, S&P, grilled over charcoal w. Provolone, dill pickles, mustard, onion, lettuce and tomato. I recently had provolone on a burger in desperation and realized that I think I prefer it to cheddar! So smooth and melty and delish!

My favorite burger is more about the place and the people than the meat. Give me a grilled burger on a late summer evening with a toasted onion bun, a cold beer, laughing friends and a pack of fireflies over a gourmet masterpiece every time. Of course, a slightly under medium, juicy, spicky patty with some crisp mustard doesn't hurt either.

8oz of 60/40 Wagyu, a pinch of salt and pepper, some sharp cheddar cheese all on a toasted roll with red wine garlic butter

Either buffalo sauce, bleu cheese crumbles, and watercress (as I tried at BBP) or teriyaki sauce and pineapple (veggies optional). Sesame seed bun is a must! And as far as a basic burger is concerned - ketchup with extra amount of extra garlicky pickle chips. Yum!

The best burger is one I've made myself. Ground sirloin seasoned with S&P, ketchup, mayo, roasted garlic, sauteed onions, crispy pepperoni and provolone cheese. Yummy!

The first time I had Shake Shack, no doubt

wapiti (elk!) burger in QUEBEC CITY! sounds totally ridiculous - but it was by far the best meat i've ever tried! ever! buffalo and lamb burgers are delish... but this burger took the 'cake'!

Shack Burger from Shake Shack and the Frenchie (6oz of beef, arugala, dijon mustard, and crisp pork belly on top) from DBGB are on top. The original five napkin burger served rare is a close 3rd.

A good chapli kebab makes a great burger... in a whole wheat bun with avocado and some coarse ground mustard and in-season tomatoes it's outstanding.

I call it a "deconstructed guacamole burger" - red onion, cilantro, jalapeno, and lime mixed in with the meat, grilled to perfection with pepper jack cheese, avocado and tomato on top. DELICIOUS!

Burger Joint in the Parker Meridan is my favorite burger spot. But my favorite burger is the one I make. 80/20 blend, salt & pepper, griddled until medium rare, served with sweet hot chipotle onions, bacon and guacamole.

Great question!

First, I start with grassfed 75/25 ground beef. Then mix in some chili salt, marash and aleppo peppers and tomato powder. I cook it to a rosy medium rare, slather it with a blanket of cheese during the last 2 minutes of cooking (mozza or marble will do) until it's completely covered.

Once it's cooked, I top with green chile and a little mayo on a sesame seed bun.

Nom!

My new favorite burger to make at home consists of ground turkey with dijon mustard, chopped fresh basil, red pepper flakes, salt and pepper. Melt some soft cheese towards the end of the grilling process and serve on an english muffin.

...but still, you can't beat a good breakfast burger - who knew a fried egg could make a burger SO GOOD...

Wow. This one's getting a lot of play. Bobby certainly has his followers... The foodies are probably going to hate me, but I love Fuddruckers burgers. Fresh, good texture, cooked perfectly to order, and a buffet of fixin's so you can do whatever you want. I usually go for grilled onions, mayo, shredded lettuce and tomatoes.

The Columbus OH staple The Thurman Burger would take my top sot. "3/4lb burger overloaded with ham, mozzarella, american cheese, lettuce, tomato, mushrooms, sauteed onions, pickle, peppers, and mayo with chips and a pickle spear." BEST BURGER EVER!

1/4 lb. of 80/20 ground round, loosely formed, charred on the grill, slightly pink in the middle, on a light sesame bun. Added junk, in order of importance: yellow mustard, thinly sliced red onion, one leaf of red-leaf lettuce, and one large, thin tomato slice.

Buffalo burger with bacon and sharp cheddar on a toasted bun with mayo, mustard and burger relish and a tiny peice of crispy lettuce.

Best burger? Hand made at home from ground chuck, medium rare with grilled onions on a Kaiser roll with nothing else, maybe cheddar cheese if I am in the mood. The burger will be juicy enough to forego the mayo, catsup, mustard, lettuce and tomato. The grilled onions add just that right hint of sweetness and the Kaiser roll holds the whole thing together perfectly. A good burger doesn't need too much to taste good.

My absolute favorite was one I discovered recently, or more accurately, finally became satisfied with, after years of tweaking. It involves lean (I know, bear with me) ground beef, american cheese, and a plain white bun.

It is homemade, and very simple. Heat a cast iron skillet good and hot. Take a 1 pound pack of lean beef, tear it into 4 chunks. Don't shape, form, press, or any other nonsense. If you want to make it roughly circular, do it gently. Salt and pepper, then into the pan seasoned side down. Use your spatula to press them to the desired thickness. Salt and pepper on the top side. Once you have a nice crust, flip em, add 2 pieces of cheese, and cook till they're done. Well done, please. Take them out to rest, grill the inside of the buns in the burger drippings, and you're good to go.

No toppings please. Meat, cheese, bun. Anything else and you've made a sandwich.

I swear, I'd never suspect a well done burger could do this, but biting into it the first time I got the formula right, the juiciness was simply astounding. I've always thought juicy burgers had to be high-fat cooked medium rare. After figuring out how to properly cook them, low-fat well done burgers are just so much better. I don't think I'll ever go back.

Mary Sue Milliken and Susan Feniger taught me how to make a burger during a cooking demo. Shallots are cooked down with a WHOLE bottle of red wine with some thyme leaves thrown in, then mixed with blue cheese and stuffed inside of a burger and cooked as you wish. Delectable!

At home: Jalapeno Ranch Burgers. They are glazed with a coffee-Worcestershire glaze and topped with bacon and a spicy ranch.
At play: Gotta have a 4H fair burger at the county fair every summer!

Just last week I made turkey burgers. BF made the request but truth be told, I had a craving for one. I usually get ground turkey from Fresh Market but that's a drive from here so I made my own.

I ground 2 turkey thighs ($2.53) from Publix and added:

diced poblano
diced carrot
diced red pepper
diced red onion
ground cumin
chili powder
chopped cilantro

Each burger weighed 8 oz. I wrapped the burgers and froze them, thawing as needed. To grill, lightly oil and sprinkle S&P. Grill until cooked through, add a slice of cheddar if desired. Top with a slice of nice ripe tomato, lettuce and hot pepper rings. Full of flavor and not resembling the thin cardboard usually sold as a turkey burger. Rounded out the meal with sweet potato oven fries.

My favorite burger is cooked on my Weber topped with a thick slice of a fresh home grown tomato, a thin slice of raw onion, lots of salt and pepper on the tomato, and some ketchup.

We have a place stuck smack-dab in the middle of the woods, about a half hour from the town that is called the Sugar Shack. I always get their Swiss-Mushroom Sugar Burger which has, besides swiss cheese and mushrooms, grilled onions and green peppers. It's always burn-your-mouth smokin' hot off the grill but it's legen(wait for it)dary.

my fantastic butcher once sold me a blend of ground beef, pork and veal, which made for the most delicious home-made burger I've eaten. save for when I added some chopped bacon right into the blend... gone. died. heaven.

Hmmm... hard to pick just one ... but a very memorable one was at a BBQ at a friends' house - inside out hamburger (cheese in the middle) w/ chipolte mayonnaise, lettuce, tomatoes - served with grilled corn on the cob with chipolte butter. Yummy!

Open faced lamb burgers on grilled sourdough with a apricot (or peach) pistachio relish. It was from a bon appetite a few years ago. Yum and yum.

The grilled cheeseburger at Rotier's in Nashville. It's the most deliciously juicy burger stuck between two pieces of very buttered toast then melted like a grilled cheese sandwich. It tastes like delicious cow fat. I like mine with pickles and mustard...I'm a ketchup-loving freak and even I wouldn't ruin this perfect burger with it!

Our favorite burger is homemade actually. Ground turkey to cut down the calories, 1 egg, Italian seasoned bread crumbs, dill weed to taste, salt, pepper and garlic powder. Grilled till done. With various accompaniments - pizza sauce and mozzarella cheese to make a pizza burger; chili and cheddar cheese to make a chili cheese burger.

My favorite burger is the Rexburger from The Backyard in Rexburg, ID. It is a large patty served on a Kaiser roll with fresh tomato, onion, and lettuce then topped with "Backyard Sauce" (mayo mixed with Dijon and BBQ sauce). Cheese is optional, but delicious.

Best burger ever is the green chile cheeseburger at Manny's Buckhorn in San Antonio, New Mexico. Bar none. It's just south of me and I don't get down there enough....I could eat that burger every day.

I love a good burger. But Ray's Hell Burger in Arlington, VA was my burger epiphany! 10 ounces of fresh ground beef a la Michael Landrum (DC's premium steak purveyor). Served up on a brioche bun with sesame seeds, ray's heck sauce, lettuce tomatoes, sherry sauteed mushrooms. Best burger. EVER.

I love the burger at Prune. It is so simple and so perfect. Part beef, part lamb with fantastic cheddar, a bit of scallion butter and all on a toasted english muffin! The Best!

I make them myself at home. Take 1/3 lb of smoked bacon and freeze it. Take 1 lb of sirloin and run it through a meat grinder. Take the bacon out and slightly thaw. Chop the still slightly frozen bacon in a food processor. In a bowl mix the finely chopped bacon with the sirloin. Run this mixure through the meat grinder a second time. Chill in the fridge. Take it out and form into whatever size patties you prefer. Cook to your desired doneness. Griddled or grilled this is the most juicy, delicious burger ever. You can even smell the bacon aroma as you bring the burger to your mouth.

I make my own barbecue sauce, so whenever I get the chance to eat burgers, the first thing I go for is the sauce. I pour it in to an extra lean/lean mixture (1:1 of each), 1 egg per 2 lbs, garlic mash, pepper, salt, and diced onion. Make it into 1/4lb patties and grill them up. If you think it's not heaven, trust me, this is truly a "Burger of the Gods".

I can't choose just one: pimento-cheese burgers, feta-stuffed burgers with Tzatziki, and cilantro turkey burgers are three of my favorites.

When I make my own burgers I like a toasted sesame seed bun, a heap of red onion, cheddar, American or a smoked cheese, a tiny bit of lettuce or argula. Medium well.

I cleaned a grass fed bison heart and ground it with raw bacon. To that we added some egg, chopped garlic, salt and pepper and formed fat patties. Even though it was propane grilled it was honestly the best burger I've ever had.

My favorite burger of all time was purchased at a greasy spoon in Albuquerque, NM. I was about 5 years old and my family and I were traveling by train from CA to KS. My first introduction to serious burgerage was in college. I don't remember the name of the diner in my quaint small New England collegetown. But I do the remember the name of the burger "Bacon Cheese Truck Burger." It had bacon, cheese and a fried egg on top. It was very juicy and "cured" hangovers.

I used to go to a place in London where they topped the burger with a giant portobello mushroom and creamy blue cheese. I became so addicted that I craved them weekly. I blame the blue cheese.

Picking a favorite burger is like picking a favorite child -- impossible! My preferred summertime choice is ground beef with DH's mix of spices, topped with onions that have been brushed with barbecue sauce and then grilled and finished with a little roquefort mayo on a healthy onion roll. The healthier choice is turkey burgers spiced with thyme and lemon peel, stuffed with goat cheese, topped with homemade red pepper relish (and maybe a smidge of mayo) on a nice ciabatta roll.

50% sirloin, 50% chuck seasoned with a heavy pinch of salt. Formed into 1/2 lb patties and cooked 4 minutes each side in a cast iron skillet. Topped with a thick, hand cut slice of American cheese and (sometimes) sauteed button mushrooms and sweet onions. Placed on a lightly toasted French hamburger roll with nothing but a swipe of mayo on the bun. Absolutely amazing.

There is a place in Newport RI that made one of the best burgers I've ever eaten in my entire life. It's called Yesterday's and it was just an amazing burger. Unfortunately years later (ie now), they've pulled it from their menu. But it really was phenomenal.

that being said - Make a nice 1/2 fresh patty of 80/20 chuck, add a little Guiness, a touch of breadcrumbs to hold it together, and a splash of Worcestershire sauce, and let it sit for at least an hour. Heat up your coals, throw it on and grill it up. Oh, don't forget to toss a few slices of Taylor Ham on the grill to top it off (a breakfast meat - think of it like bacon on your burger). Smear a little Horseradish on your toasted bun and enjoy!

So many favorites...Father's Office is the best gourmet burger in the world. But there's something to be said about a simple beef burger with just cheddar cheese and ketchup. My favorite burger is homemade. I start with about 6 oz. of 85% lean ground beef, seasoned with salt and pepper. It's grilled over charcoal and topped with cheddar cheese, a slice of tomato, yellow mustard, a couple of pickle slices and caramelized yellow onions. The kaiser bun is toasted as well. French fries and a root beer on the side make it complete.

I still miss the burgers cooked on the blackened flat top at my parents' restaurant. The freshly ground patty would be seared to a still-juicy medium, the dark crust taking on the flavors of the sirloin steak, the pork chops, the bacon from breakfast...whatever had been cooked on the grill! The edges were crispy and black, salty and crumbly. The oversized bun would also spend time on the grill, getting a drizzle of butter and yes, all those other wonderful juices. Cheese? Sedonia would always put the cheese on too early, making sure it would melt and run off, creating a fabulous, gooey mixture of burnt cheese and grill runoff. You felt lucky if you had all those crunchy bits of goodness on your burger.

As someone originally from San Diego I suppose I'd have to say the In-N-Out double double...but the royale with cheese at Royale on Ave. C is honestly the best burger I've had in the city...and I've had my fair share here. Perfectly cooked to order medium rare and proportioned to the toasted sesame seed bun. I hate when the meat overtakes the bun.

I've yet to find a really great one too :( I've heard that In-N-Out have great burgers tho.

In Orlando I like going to Backyard Burger and getting the black and blue burger. It is a blackened burger with blue cheese melted in top. It is delicious.

I'm going to cheat: I have two favorites! 1) The Carl's Jr. Double Six-dollar western burger is AMAZING (even more amazing that it falls into the "fast-food" category!) Tangy BBQ sauce, melty cheese, bacon, and onion rings make this oh-so good. But, no surprise, it is not the healthiest option...

Which leads me to 2): A kobe-beef burger topped with melted gruyere cheese, caramelized onions and arugula, on a toasted garlic bun ... I had this at a Spanish-American restaurant last week, and made me re-think that burgers can be "fancy food" as well as delicious!

ooh this is difficult. i'd have to say this burger at my family's restaurant, Boondockers. it's got cilantro, pepperjack cheese, and garlic chipotle aioli on a burger patty with lettuce, onions, and tomatoes on a kaiser roll. mmmmmm.

I usually like the ones I make at home best - ground sirloin, a dash of mixed spices on the top, toasted buns and onions. but there's one exception.

On a trip into NYC, we got wrapped up in a walking tour, and lost track of time. We ended up disoriented and hungry in the Village, when the scent of burgers led us to Silver Spurs. One thick, medium-rare, meltingly tender Jr. Bonner later, and I was ready to hike back uptown to the train again.

Burger should be cooked no more than medium.

Cheese has to be yellow. Mild cheddar or colby preferred, but American would work in a pinch. Ketchup, tomato, lettuce, and a thick slice of raw onion are a must. Speaking of must, mustard, mayo, and grilled onions are optional. If you want to be really fancy, grilled mushrooms.

I actually don't eat burgers that often...don't really know why because I do like them...maybe health reasons? Or maybe it's just that it's rare that I find one that blows me away. Anyway, the last one I had (several months ago, and I couldn't tell you when I had one before that) was amazing, but that could have been because I had really been watching what I ate for about a month before that - meaning high fat, high calorie, and high carb items were extremely limited and burgers didn't make the cut. Anyway, my perfect burger is on a soft bun that's been toasted, beef cooked to medium, a homemade bbq sauce (sweet, hot, & tangy simultaneously), perfectly cooked bacon, grilled sweet onions, a perfectly ripe tomato slice, and some kind of melty cheese (Cheddar? smoked Gouda maybe?). Homemade pickles and fresh fries/homemade chips on the side. And an old-fashioned milkshake to wash it down.

Yea, A Red Coat Tavern Burger in Royal Oak, MI with Zip sauce! Hands down!

A burger cooked by my dad in his cast iron "hamburger pan'. The pan was bought in 1943 and was used exclusively for cooking burgers and what he called hamburger gravy-ground beef, onion, and green pepper served on toast. Dad passed away 23 years ago- I inherited the pan and it's still used just for burgers. His were better than mine ever will be.

The best burger is fresh made with a ground chuck patty about an inch thick cooked on charcoal medium rare / medium with a little char on the outside. Put it on a toasted sourdough bun with yellow mustard. Serve it with a cold beer and a green onion picked from the garden. Alternate between bites of burger and onion and sips of beer.

Like many others here, I am partial to Shake Shack (on the occasions I am in NYC), but in my current hometown of Madison, WI, there is a little locally-famous bar called the Blue Moon that serves delicious burgers. My favorite is the Blue Moon Burger which comes with blue cheese, garlic and raw onions. (I loathe onions - sorry - so I leave them off when ordering.) And you can order it medium rare too! Their fries are also crispy and delicious.

I've recently been digging the burger that's made at a little cafe in the hospital I'm currently doing a rotation ate. Of restaurant burgers, I kind of like the Tons of Fun burger from Cheesecake Factory.

But homemade with a crust on the patty, American cheese, fried egg and fry sauce. That is good stuff.

A burger from Wonder Bar in gloriously dirty Asbury Park, NJ. Saw my favorite band on the waterfront there 3 years ago, got late-night hunger pangs after and decided to check this place out on the way back to my hotel. Just your standard, East Coast pub burger, executed to absolute perfection.

Best burger here in Austin was at the now gone G&M Steakhouse--the infamous "cheeseburger platter":1/2 lb grilled patty, a mountain of grated sharp cheddar, mayo, lettuce, onion, pickles. No tomatoes offered. Steak fries on the side. They charged extra if you did not want cheese. This place was legendary and is where I learned what a real burger was all about.

Maybe it's childhood nostalgia, but my favorite burger ever was from the Fireside Pizzeria in Schenectady NY. It was as big as a dinner plate, on a big doughy roll, and covered in mozzerella cheese. Yes, absolute blasphemy based on the usual criteria for a good burger, but it was a fantastic mix with excellent fries, and one of the best pickles ever.

The best burger I make at home is a Chicken-Chorizo Burger. Although a heart-attack-in-a-bun, the burger tastes great and grills beautifully. I make it with ground chicken, mild-beef chorizo, some greens, and other typical burger ingredients (onions, seasonings, etc.) I top it with a slice of pepper-jack cheese, lettuce, tomatoes, etc.. I'm not picky about the buns, but I tend to use whole-grain buns. Overall, the burger tastes great and for those people who love things spicy, this burger will appeal to you. Cheers!

The best burger I've ever had was made with ground chuck with some garlic powder and barbeque sauce mixed in, cooked to a mouth watering medium rare on the grill and topped with a bit of blue cheese which just starts to melt as the burger makes its way from the grill to the table. Pair that with some crispy matchstick fries and that is one tasty meal.

Brent's Soy Sauce and Wasabi burger packs a flavorful punch. I enjoy burgers too much to say one is my favorite. Le Tub in Hollywood, Florida is quite good, too.

I love a simple burger: a 1/3lb ground chuck patty seasoned with salt, pepper, worcestershire, and chopped garlic and cooked medium rare over hardwood coals. Topped with grilled onions, pickles, jack cheese and chipotle mayo on a good wheat bun. You know it's perfect when the first bite requires an immediate cleanup!

Agghh...I have to revert back to the Californian in me and say that my all time favorite is how In 'n Out prepares their burgers. If you hand me a burger with a soft bun with a nice crisp grilled touch, crunchy lettuce leaves, a thick juicy tomato, and hearty onion slices, I'll be golden. Drizzle it with maybe a sriracha ranch type of dressing, and I'll be even happier!

I'm fickle - I don't think I have an absolute favorite burger. I like 'em with onions, pickles, ketchup and mustard (fast food stylie), but I also like 'em with chipotle mayo, green chile sauce, bacon, etc. There was a restaurant in Baltimore that served burgers with bacon and Boursin cheese - man, those were delish!

Best burger I ever had was at the Washington House in Mt. Joy, PA in 1969. This was an old "hotel" now called a bar and grill. A friend and I got the house cheeseburger - a char broiled 1/2 pounder that was so marvelous, as we were finishing we both looked at each other and said, "that tastes like another!" Which is what we did.

There's nothing better than caramelized onions and blue cheese on a soft homemade bun, with a heaping pile of skin-on fries and a goodly amount of Heinz ketchup alongside. Oh, and an ice-cold draft Sam Adams. Man, I'm hungry now-- where can I get one in Las Vegas?

There was a burger walk up place in Highlands, NC about 40 years ago. I think it was called TasteFreez. The burger was always juicy and hot, wrapped in the white wax paper. Came with mayo/mustard, tomato, lettuce, pickles and onion. Very simple but have yet to have one as good.

I stole my ultimate burger from Hodad's in Ocean Beach (San Diego, California). The secret is ultra-thick layer of "cooking bacon" they use: there is as much bacon as there is burger, and a slice of cheese on each. At Hodad's the double comes with its own personal defibrillator!

To me, my dad makes the best burgers. He buys the finest meat, uses great potato rolls, and makes sure that he cooks it perfectly. All it needs is a slice of American cheese.

Rossi's in Trenton, NJ is my current favorite burger, but the burger at Trinity in Keyport, NJ with a slice of foie gras on top is pretty good too.

I love a simple hamburger and I use a recipe my father uses. I use ground round because it doesn't have a lot of fat, but it tends to hold up fairly well so long as I don't make the patties too thin. I drizzle Worcestershire sauce (Lea and Perrins) and some garlic powder, a little kosher salt and black pepper to each side. I prefer to cook it on a charcoal grill but since I don't have one, a frying pan is what I tend to use. Many people like cheese on their burgers, but I can't have a cheese burger because it isn't Kosher. When the burgers are medium well, I put them on a pareve (non-dairy) Kaiser Roll (Aunt Millie's is great!) that has a light layer of garlic butter on it and has been toasted in the broiler. Then I place the burger on the bun and add just a little A1 steak sauce, some yellow mustard and ketchup and chow down. I usually serve it with roasted potatoes or Near East long grain and wild rice herb and garlic or Near East cous cous herb and garlic. Yum!

My new favorite burger is a nice juicy med rare beef burger topped w/ tziki, tomato, onion and gyro meat. I thought it was crazy when I first heard about it, but you have got to try this!

there are so many to love! My favorite is the one my dad made me special as a kid! Grilled onion and bacon cheese burger- the bacon and onions sauteed up and served UNDER the cheese! Yum, and to complete the meal- always eaten on a large english muffin- perfection!

I also don't think that a burger has to be huge, just good meat and good ingredients, no need for anything half pound for me!

The perfect patty must be swathed in mayo or one of its brethren sauces, and adorned with raw onion and pickles. Oh, and the inside of the bun must be toasted and buttered, just to up the grease/juice/fatty factor.

Depends on when you ask me. Some days, the bacon cheeseburger with hot sauce from Five Guys is just right (and right around the corner). I will also make the drive to a Red Robin for some crazy thing with blue cheese, bacon, and onion straws; or to Cheeseburger in Paradise for a Pressed Burger-- kind of like a Fatty Melt.

The best burger I've had would be my homemade bacon burger. Grind up some lean bacon and make that into a patty. Add some melted cheese on a toasted bun with spicy mayo and you can't go wrong.

Aside from my own home-made hamburgers cooked on the grill, my prefect hamburger exists in childhood memories of Chesler's in Queens...an archtypical New York corner candystore. Thin burger on a griddle...bun shining with a patina of grease...melted cheese and, of course, an egg cream on the side.

I wish my favorites were from a restaurant, just because I hate cleaning up, but homemade just can't be beat. Very lean, but fried with a bunch of butter in a pan, seasoned heavily with onion and garlic powder and hot sauce (and salt and pepper) while cooking. Pretty much any melty cheese will do--generally get pre-sliced cheddar. On a toasted and buttered croissant. They're so fragile that the croissant usually shatters before it gets to my mouth, but whatever bits do survive the trip are just so dang tasty.

Some of the best burgers I've ever had, believe it or not are at a major chain restaurant. Champps Americana used to have a hamburger called the City Burger. It was a double patty with cheese, lettuce, tomato and a special sauce that basically was thousand island. They built it like the Big Mac, but it was far better than anything Micky Ds would ever put out.

They soooooo need to bring it back.

Take Angus Beef, mix it with chopped onions, a little paparika and cardomen. Then grill it and top it with Jarlesburg Cheeese. You can't beat it.

Nothing beats making your own ground beef though. That's what sets it apart!

There is a little drive-in in the town where I grew up-they make the BEST cheeseburgers in the world! They are grilled to perfection, and they put a blob of butter on the bun! Oh wow! Carlorific and delicious! Thank you!

The best burger I ever ate, was the ones I used to grill out growing up, we had our own beef ground, and there was nothing like it, juicy, tender, can't find anything near it in the stores today, to many chemicals etc.

I'm happy with a good bakery bun, cheese, crisp lettuce, mayo, pickle, onion and homegrown tomato - hold the beef.

My special burger - Sirloin beef seasoned with steak sauce, worcestershire, garlic powder, onion powder, pepper and one egg yolk. Sprinkled with seasoned salt. Top with mushrooms sauteed in wine and colby jack cheese. Big kosher dill on the side. Yum yum!

As long as the beef is fresh from the local butcher shop and it's not overcooked, all I need is a little mustard and I'm happy.

Cheap ground beef, grilled to perfect medium, slice of cheddar, good bread, pickles, mustard, ketchup, iceberg, eaten with my kids, in the backyard.

Wow... I actually don't eat burgers very often, but am finding myself craving them more now than I ever have in my entire life after reading this post and seeing all of the recipes being posted from this book.

My favorite burgers are and will always be the ones grilled by my father... made from ground sirloin, cooked all the way through (I know, I know, I'm sorry... I just can't seem to appreciate "rare"; just the thought of it makes me a little squeamish), on a "mountain roll" (basically a soft white bun with flour sprinkled on top) with nothing but ketchup and mustard. A slice of cheese is optional.

I am surprised by how much I want this book. Yum...

Now I make my own burgers but they have never been as good as my Dad's but I'm getting close.

My favorite burger is a chili cheeseburger from The Beacon in Spartanburg, SC (second largest drive-in in the U.S.). I've loved it ever since I was around 9 years old (am 28 now), and it still tastes just as wonderful now as it did then. The burger is super thin (the only way I'll eat them), the chili is awesome, and with the melted cheese on top... perfect! No need to add anything here - it'd just get in the way.

The best burger Ive had in a long time was at Bobby Flay's restaurant Bobby's Burger Palace, a bacon bleu cheese burger. The pistachio shake was pretty good too!

My all-time favorite burger is the Bull Burger from Bullfeathers in Washington, DC.

It's a fresh (not frozen) patty topped with Swiss cheese, cole slaw, Russian dressing, lettuce and tomato, served on a toasted bun.

When we lived in DC, we lived half a block away from Bullfeathers and Monday night was half price burger night. Guess what I did almost every Monday night?

Green Chili Cheese Burger from a local diner. Ground chuck, cheddar cheese, green pork chili, grilled onions, jalapenos, shredded jack on a toasted onion bun. Best eaten with chili cheese fries and a full tree's worth of napkins.

I love the Portillo's cheeseburger in Illinois with everything on it...very tasty!

Currently I am very into this burger at a local restaurant which is bison, goat cheese and banana peppers. Simple and so good.

I can't remember the name of the joint (I think I may have been 13 y.o. at the time and that was 20 years ago) but it was in N.E. New Jersey. It was very simple...Two slices of perfectly melted swiss, one on top of the burger one underneath, thick slices of pickle, 2 slices of peppered bacon and a kaiser bun lightly buttered and toasted to perfection. Nothing has ever rivaled it. Bummer.

Dairy Queen makes a flame thrower burger that is pretty rockin. Also, the Juicy Lucy is a amazing burger.

I found the recipe on epicurious a while back and could eat them every week. I also make a bbq bacon cheddar stuffed burger with provolone on top. huzzah!

I love the pork burgers from Suzanne Goin's Sunday Suppers -- smoked bacon, chorizo, and ground pork all rolled into a delicious grilled patty, topped with delicious manchego and a little salad with avocado. Yum!

Wow. This really depends on my mood and my adherence to health. Let's say I'm in a great mood and also in denial about my heart disease - then let's have a black and bleu burger with roquefort, jalapeno's, applejack bacon, red onion, swiss chard and a perfect slice of tomato finished with cilantro mayonnaise. I feel guilty typing this.

My favorite is a bleu cheese bacon burger. Extra crispy bacon, tomato, lettuce and be generous with the bleu cheese dressing.

2 thin patties, with a little crust from the hot griddle, melted american cheese on each, served on a toasted and buttered plain white bun. mustard and pickles. killer!

Homemade--A1 and a tiny pinch of cayenne in with the meat, and then served rare with one slice each of Cheddar and American, topped with pickles, caramelized onions and mushrooms, and plenty of mayo slathered on the bun. Seriously unhealthy, seriously delicious.

Maybe because we don't have a Carl's Jr anywhere near here, I don't get them often enough to tire of them, but I love their burger with barbeque sauce and onion rings (on the burger). (My DH hates them!)

The patty has an inner pocket of goat cheese. On the outside of the patty there are spinach and basil leaves in a mustard vinaigrette, and heirloom tomato slices. Simple and juicy!

I love adding just about a teaspoon of Worcestershire Sauce per pound of ground beef... try it.... you'll love it too

The most satisfying burger I've ever had was at Ted's Montana Grill in Columbus, Ohio a few years ago. I was in Columbus for a conference and it was the end of a long day and I was really hungry and craving meat. Ted's (across the street from the convention center) had exactly what I was looking for - the "Kitchen Sink." A half-pound of bison meat perfectly grilled to rare perfection and topped with grilled ham, mushrooms, onions, fried egg, bacon and Monterey Jack cheese on a delicious kaiser roll. It was magical.

Here are my favorite ingredients on a burger: Guacamole, Ketchup, Mustard, Mayo, Bacon, AMERICAN cheese, tomatoes, lettuce, that's it! Nothing else will do! There are rumors A1 sauce is great with burgers, but I have yet to try that out. I get the impression fried plantain would be good too, fried, thin and juicy! The most important thing in a burger is well-seasoned, tasty meat. For some reason, Canadian burgers taste better, and I have no idea why.

One time I asked this waitress in Australia for American cheese on my burger, and I got the dirtiest look! I didn't have decent burgers for one month there. I don't count McDonald's and Hungry Jack's as decent burgers, none of the decent places had that cheese. It really is the best cheese for burgers IMO, and I'm not being jingoistic or anything, so don't hate me!

IMO, the less sophisticated burgers are, the better. That's my opinion!

If it's done right, I've got a soft spot for a mushroom and Swiss burger. Otherwise, a mild cheddar with the standard lettuce, tomato, pickle and (sometimes) ketchup works for me. No mayo, though.

last night in preparation for the 4th, I made 1/3 lb. burgers with organic beef stuffed with a fat piece of stilton bleu and topped with grilled onions, arugula, beefsteak tomato, and sweet/spicy mustard with sweet potato french fries. The meat was perfectly pink on the inside, with the bleu cheese just oozing out with every bite.
Probably one of the best outdoor meals i've experienced EVER.

While in Australia I had the most delicious burger....a nice thick patty that had been marinated, a thick piece of pineapple, some sort of sauce on a whole grain bun!

1980...my first trip to L.A. to visit a friend, also my first airplane trip. Lots of firsts, but that's another story... : ) My friend and his witch of a fiancee were working, but his roommate was an unemployed actor who had nothing else to do but show me around the town, which he had grown up in (his mom was an agent).
He showed me where the good burgers were....a little sidewalk joint run by a nice Mexican gent on the Strip, a bowling alley somewhere in Hollywood, and Barney's Beanery, where I played my first game of Asteroids, long before it showed up on the East Coast. Fun summer!

my all-time favorite burger was when i was a kid and my dad made a spicy concoction of steak sauce with mushrooms as a topping for burgers cooked medium rare. yum.

I have always been a big fan of mushroom and swiss burgers, so I ordered them a lot when I was little. I don't remember where this was or how old I was, but the first time I was ever asked how I wanted my burger cooked I said medium since that is how my dad always got his steaks cooked. My parents said to make it well done and I protested. The waitress told me to listen to my parents and then proceeded to order it medium for me. It wasn't all that special, but it was the juiciest burger I had ever had since my dad usually overcooked burgers and smashed the juice out of them. Needless to say, when I cook burgers now, I cook them the way I like them, medium!

You know its been so long since I've had a burger at a restaraunt. We have a toddler so don't go out to eat much - we probably would more if we lived near relatives.

I love a burger on the grill. I adore it rare but don't have it like that as its unehalthy. But no matter how its cooked it will taste good! I like it on a bun with grilled onions and ketchup. Someone mentioned putting garlic butter on the bun and that sounds great. Wow don't remember the last time I had a hamburger!

I'm a minimalist. I take mine with just cheddar cheese and ketchup. It's always been my feeling that quality beef can stand on its own without a lot of dressing up.

The waiter handed me a menu. I pretended to peruse through it, but I knew what I wanted. The menu could've listed "Young Virgin Goddess.", and I wouldn't have flinched.

"I'll have the Minetta Tavern Special, Black Label Burger, medium-rare, with sautéed onions." Waiter retorts, "you'd like cheese with that?, we have cheddar, we have..." To which, I promptly interrupted, "Nooo cheese!" And, just in case he didn't hear me, I threw in a Mutumbo finger wag. (phew!)

Now, one doesn't just go out and order a $26 burger. Who does that? After four weeks of pining & lusting, moving some finances around here and there, I finally came up with a financial plan that allowed me to put my mitts around this gourmet burger.

With much anticipation, my precious burger finally debuted itself. I stared, hard.

"Looks just like it does in the online pictures! Perfect bun-to-patty ratio. Toasted buns. Thick beef patty. A glop of sauteed onions." Ahhhh, yes!

Hard eye contact?, check! Over-eager grin?, check! Drooling?, check! Ugh! I was flirting with my burger :( Embarrassing, kinda/sorta, until I remembered my priorities (Burger!), and no one else in that room even mattered (yes, that means you, cute bookworm girl on the right, and you too cute office lady on the left).

I waited another agonizing minute for my burger to collect itself and its juices before finally, sinking in for that first bite. "Ohohhooohhhh! Oh my god, this is good." The bite is sufficiently juicy, and more importantly full of robust beefiness. The beef is the prime flavor hit to your palate. And, that's exactly how it should be, and how I imagined.

The infamous Pat La Frieda beef combination consists of dry-aged Rib-eye Steak, Skirt Steak, and Brisket. The prime grade beef patty is so flavorful it reminds me of a dry-aged porterhouse, only this burger is much more tender. The first bite left a pool of burger juices on my plate (swiftly sopped up with my burger bun, of course). Speaking of which, the brioche bun breaks away perfectly with each bite, and the sautéed onions magnify the tenderness of the patty. What a well-orchestrated combination!

As I'm reeling from the first bite, staring incessantly at my burger, I noticed, like a great steak, it has a char-grilled crust, a thin medium-well inner ring, and finally, a warm pink center section; such beautiful colors and layering, that which only a bona fide carnivore would love.

As I progressed into my happy meal I increased rest times between bites; my feeble attempt to prolong this most perfect of burgers. Alas, the time with my lovely burger couldn't last an eternity. However, I did bask in the serenity of knowing that this perfect burger will be mine once again, 4-weeks, and a whole lot of budgeting later.

As I reluctantly departed from Minetta Tavern, crossing the street, I couldn't stop thinking to myself, "Oh My God! That was a good burger!"

Costco ground beef, softly made into a burger patty, fire up the BarBee.... medium hot, grill for about 4-5 minutes on each side, do not press it down!!!.... put cheddar cheese on it for the last minute of cooking....put that on a great sweet bun, with grilled onions, mayo, BBQ sauce, sliced sandwich pickles, lettuce, and tomato.... plain and simple, fab!

A New Mexico classic: A green chile cheeseburger! You can get them anywhere here, even McDonald's, so you have to know where to look to find the best. Santiago's butters and grills the bun, and tops their delicious beef patty with cheese and green chile just perfectly.

There was an Iron Chef show once that had hamburger as the secret ingredient. Chef Simon Perry was cooking and we have tried to duplicate his burger with bacon, set on Brioche bread and accompanied by fries cooked in Truffle Oil. While our version is probably not even close to his version (we improvised where we had to...a recipe was not posted so we took it from just watching the show), it is still absolutely delicious.

On the 4th, I grilled us up some burgers from store bought frozen burger patties. The above are everything a burger purist would never do. But, something about the 4th of July, hot weather, and the company made it all, well, perfect!

For the Fourth I tried hamburgers with grilled red onions, gorgonzola cheese and a tarragon, rosemary, garlic aioli. I must say, it was one of the best homemade burgers I've made yet. Definitely will be using the homemade aioli again!

It must have been said before, but Minetta Tavern NYC. Good Lord! That's last meal on Earth material. But the Mesa Grill Burger with that delicious horseradish sauce ain't nothing to shake a stick at either.

If I'm not at home and making hamburgers from scratch, In-N-Out Burgers are great, especially with their available off-menu options.

We actually made our favorite burger recipe for the 4th of July. It is a simple Blue Cheese Burger Recipe. We season the ground beef and add chopped onions and green pepper to the mixture. We sprinkle in some breadcrumbs and add an egg. We grill the patties and top them with blue cheese crumbles and bacon.

I love burgers topped with Montreal Steak Seasoning, red onion, lettuce, tomato, gourmet mustard, and either ketchup or bbq sauce. I also love ot add cheese, usually cheddar.

I love a burger with bacon, pepper jack cheese, a bold, rich bbq sauce and that's it. Simple, spicy, and oh so right.

This is a tough one! There have been many "best " burgers but they would always have to have been juicy rare with oozing cheese, S+P, sauteed onions, and friends around the table laughing and having a great time.

My nephew made up a burger that he calls a Squeezal Burger. I know it is not "good" for you. It is delishous. I don't know exactly what is in it. I know I saw him grinding the beef with a pound of bacon and adding loads of spices. I know that one of his secret ingredients is morel mushrooms dried and then ground into a powder. Once I had the oppurtunity to obtain some fresh road kill.Cant say what kind it was for fear of offending dog lovers,but i cleaned the meat up,removed any obvious road debris,boned it out.Ground it up with a coarse blade,mixed some fine pig fat in with it for moistness and flavor,then proceeded to make the worlds best onion burger,on a toasted sesame seed bun with pickles an special sauce. MMMMM
