Weekend Cook & Tell Round Up: 'Off Cuts' of Meat

Welcome to the Weekend Cook and Tell Round Up. Last week we asked you to cook up some lesser known cuts of meat and share your experiences and photos. We got some pretty tasty looking responses.

Paula Maack chose deckle, a fatty and wonderful that she has dubbed "the pork belly of beef." She braised in wine and stock and served it with some fantastic sounding buttermilk Cheddar horseradish mashed potatoes with Swiss chard. The results look delicious—check them out on Paula's blog.

Palmsey chose the marinated roast eye of round. Sliced thin for sandwiches and served with some apple horseradish spread and Swiss, it was a hit.

Football foodie grilled up some lamb shoulder blade chops with asparagus. The chops were quick to prepare and inexpensive, definitely worth making again.

Maggiej made lamb blade chops as well, "[t]hey were SUPER juicy and delicious, though quite fatty and slightly difficult to eat. Probably not appropriate for company, but really great for a weekend dinner at home."

ChefDJen went all out with grilled pork loin with picadillo-seasoned mango stuffing.

Not everyone had great success, Vox8ight found something called beef chuck eye steak in the market. After marinating it and broiling it, the cut was deemed "not bad, but not woo-hoo either."

Also, I wanted to let the readers know that I actually prepared the deckle two ways. The simple method described above, and as a tart and sweet balsamic braised version served over pappardelle pasta - both recipes are featured on my blog.

This was a lot of fun! I look forward to the next challenge.

I'm sorry I missed it :-(. I made some guanciale from a local heritage pig jowl and then carbonara. That picture's not from the weekend but I made it again. Its a classic for a reason ;-)

@Paula - So glad you are enjoying the feature! I made red wine marinated eye of round, roasted and served cold over arugula with some lemon and parmesan. It was delicious!

Such an awesome idea and great entries!

We weren't in the mood to cook this weekend so we didn't participate. Maybe next time...? This piece is definitely something I look forward to, whether or not I would participate.
