What a surprise! I just made four jars of new strawberry jam this morning!

I read the written recipe prior to watching the video and thought, "Boy! Somebody is out of their freaking skull." Then I watched the video and realized that the written recipe/process really does work. We just finished making a strawberry cobbler this afternoon, but now I have to make jam as well.

I heard you weren't supposed to up/down-size jam or preserve recipes, but I've made small/tiny batches without problems.

One of vanilla apple jelly (one 250ml jar from ~3 apples), and another grapefruit marmalade (two 500ml jars from ~6 grapefruits and one lemon)

I make my jam in pretty much the same way, but never, ever, have I heard of anyone putting jam into a hotwater bath! Between clean jars, sugar, and lemon juice, it's unusual to have any problem with mold or spoilage.

If you don't use organic strawberries, you are canning a bunch of farm chemicals along with your bland, genetically-modified fruit.
