Cook the Book: 'Bottega Favorita' by Frank Stitt

bottega.jpgItalians and Southerners have one important thing in common, a love and respect for food. Both cultures share the belief that nothing can compare with the food that comes from your land or out of your kitchen. Think about it: Georgia peaches, San Marzano tomatoes? Frank Stitt has taken this reverence for the best ingredients and opened three definitive restaurants in Birmingham, Alabama.

According to the late, great R. W. Apple, Stitt has turned Birmingham, Alabama, into a "sophisticated, easygoing showplace of enticing, Southern-accented cooking." In 1982, after studying philosophy at Berkeley and cooking all over San Francisco, and in France in Burgundy and Provence, Stitt returned to his hometown and opened the French-accented Highlands Bar and Grill. Cooking with Alice Waters at Chez Panisse and working as an assistant to Richard Olney helped Stitt realize that the agricultural bounty of the American South was ripe for the picking and ready to be put to use in something a little more refined than classic Southern cooking that he had grown up with.

After a few years of cooking up French classics with distinctly Southern ingredients, Stitt branched out. His goal was to marry Italian and Southern traditions, and so he opened Bottega, a grand Italian restaurant housed in a former department store. Bottega serves regional dishes from all over Italy using local and sustainable ingredients from the South. Bottega has a an expansive patio that is perfect for an apertivo, a casual cafe serving wood-fired pizzas, and a formal dining room for more elaborate meals.

The recipes in Bottega Favorita, taken from the menu of Bottega, are simple, fresh, and delicious. As is the case with most Italian cooking, the success of a meal depends on the quality and freshness of its ingredients. This week are are going to be bringing you a full Italian meal—apertivo (cocktail), antipasto (appetizer), pasta, secondo (main), contorno (vegetable side dish), and dolce (dessert). We are also going to be making good use of seasonal spring vegetables in dishes like Garganelli with Spring Onions, Asparagus, and Pea, Crushed Spring Pea and Ricotta Bruschetta, and Lamb Ragu with Artichokes, Oven-Roasted Tomatoes and Basil. —Caroline Russock

i love to make ricotta cavatelli with all sorts of sauces. recently, i made it with a spicy vodka sauce with crab. another good one to try along the same lines is crab, green chilis, and white wine sauce.

a bastardized version of a Carbonara. Spaghetti tossed in an egg mix with ham, garlic, onions, peas, and mushrooms. And, when the fiance isn't around, a ton of kalamata olives!

Pasta with whatever's in the fridge/pantry. Usually lemon juice, artichoke hearts, maybe some sun-dried tomatoes or olives, a couple handfuls of spinach, some goat cheese. Different every time, but quick, easy & delicious.

Linguine alla vongole. Pasta made with a Pasta Queen from the 70's and sauce made with fresh NC clams. Yum.

I'm a sucker for carbonara too, usually with bucatini.

A lot of olive oil, a little garlic, anchovy and red pepper flakes, some chopped olives, when I have them, and a lot of Parmigiano Reggiano, tossed with whatever fresh strings of noodles I have on hand

A recipe I got from Giada- meyer lemon infused olive oil sauted with thinly sliced red onion and tossed with pasta, feta cheese, and fresh thyme.

This is boring and plain but I love farfalle with browned butter and parmesan. It's just so easy and nutty and delicious.

Roasted eggplants, a few tomatoes, some garlic and whole wheat noodles. Made even better with a little homemade mozzarella on top.

I LOVE just simple spaghetti with tiny little homemade meatballs with gravy. They are never the same twice and always the best thing to comfort me and mine....

A simple Carbonara is my favorite- bacon, pepper, EVO, Parm, and a cracked egg at the last minute. The best.

My mom's "Pasta with Tomatoes." Lots and lots of diced fresh tomatoes, cooked with olive oil, loads of garlic, oregano, and basil. So easy and delicious, and it makes me feel like I'm at home.

A simple marinara made with red wine, and some fusilli.

I'll usually render some bacon, throw in some onion, garlic, red pepper flake, deglaze w/ red wine and throw in some good canned tomatoes. Finish w/ basil. It works with almost any tubular pasta. What could be better?

Pasta with prosciutto, peas,cheese and cream. Not the healthiest dish but damn tasty.

Pumpkin/sweet potato gnocchis or raviolis with a sauce of browned butter, reduced balsamic vinegar, sage, and a few walnuts or pecans on top. Or....last year I made a lemon basil pesto (all traditional ingredients - olive oil, parm, pine nuts) that was good on pretty much everything.

i love pasta just about anyway.. from simple spaghetti with parmesan and butter, tortellini with pesto, to penne with arugula, crushed red pepper and tuna.

I just found these freshly made pastas from a "neighbor of mine" called nudi pasta. As soon as I get my hands on my freshly made batch I will most definitely make some fettuccini alfredo or mix it in with marinated tomatoes.

Carbonara. I was so happy when Marcella Hazan's recipe worked. I substituted some lamb bacon that I cured myself for the pancetta in my most recent batch. Very nice.

I have been lurking on this blog for about 6 months and this is my first comment. I just made this pasta last night.... fresh herbs from my garden (basil, thyme, a tiny bit of mint and a tiny bit of onion chives) chopped and simmered in a concoction of cream, butter, and lemon juice. Poured on pasta and topped with a bit of freshly grated parmesan. YUM.

Freezer pasta: whatever's in the freezer and/or veggie drawer (ground beef, sausage, peas, demi-glace, carrots, broc rabe, etc.) plus onions, garlic and maybe some tomato sauce.

My favorite pasta has to be drunken pasta (garlic, red wine, linguine, butter). Easy and delicious!

Shrimp, lemon, garlic, olive oil, and maybe some peas if I want a little greenery. Over linguini, by preference.

Lasagne with tomato meat sauce (including italian sausage), and besciamella, mozzarella and parmesan. Using homemade pasta noodleswhenever possible.

Spaghetti all'ubriaco is my newest favorite, but for sheer comfort and indulgence, it's gotta be shrimp scampi. Tons of delicious melty butter and fresh plump shrimp -- amazing!

i actually just had my fave for Mothers Day - my husband makes this wonderful Chicken dish that has angel hair pasta which a delectable mushroom cream Alfredo sauce. Very heavy, very rich, very fattening, but oh so delish.

Pasta is a go to for me because you can use whatever you have on hand and you can make one serving easily. Usually my pasta dishes rotate to whatever is on season. Right now a good italian sausage and asparagus is perfect.

When I feel good and lazy nothing beats tossing some pasta with mushrooms sauteed in butter and olive oil. I grate in some Parmesan and end up lightly frying the pasta.

Pasta with fresh tomatoes - just put chopped fresh tomatoes and plenty of garlic in a pan and fry it down for a bit. Omnomnom.

I like to use a whole wheat spiral pasa and then add homemade sauce with seaonsal vegetables. Zuchini is a favorite.

my friends and I have an annual ravioli party- everyone comes over around 3:00 and we start making dough. When thats ready we move onto the fillings- butternut squash and pancetta with tomatoes and wine. Delicious!

Marinated artichokes (drained), big can of coarsely chopped plum tomatoes in sauce. Diced onion and garlic. Saute it all together with some parsley, basil and crushed red pepper. Stir in pasta and add goat cheese. The melting cheese makes the spicy sauce creamy. Ready in less than 30 minutes.

chopped raw tomatoes, garlic, basil, salt, pepper, olive oil, a little balsamic - let marinate for 4 hours - put on top of penne and add a big spoon of ricotta and a dusting of parm. This can only be made in late August.

At least once a week during the summer: Penne tossed with arugula, cherry or grape tomatoes, and grated Parmesan.

I love to make campanelle with veggies like asparagus or peas that kind of get scooped up inside the bell shape - usually with a simple lemon butter sauce.

I do a great pasta ------ (my last name, sounds good because it is Italian). I make a classic alfredo sauce from scratch and at the last minute add diced vine ripened tomatoes and crumbled bacon. It is sort of like a b.l.t. in a bowl.

Fried spaghetti. Heat a little oil in a frying pan, take leftover spaghetti mixed with sauce and fry it for a few minutes until hot. It is delish.

It depends on the sauce, but I usually finish mine with fresh lemon zest. Delicious!

The day I don't have garlic, lemon, parsley, red pepper flakes & parmesan on hand will be a cold day in hell! I probably make garlic pasta (preferably with linguine) at least once every two weeks.

Today I invented "pizza mac." The lower layer is noodles with mozzarella, provolone, asiago, ricotta, eggs, a little basil and diced kalamata olives. On top of that is a thin layer of red sauce and pepperoni, topped with more mozarella and cheddar--a pizza like top. Bake until bubbly.

Homemade spinach and cheese ravioli with slow-cooked red sauce. Mostly because I only make it with my husband, family or a couple of my best friends--nothing like reserving a whole Saturday afternoon in the kitchen with good food, wine and the people I love most!!!

Well I have only actually made pasta at home once, and by chance that was just last night! It was just your standard spaghetti, but it is good. The next pasta I am going to make is a home made cheese ravioli. Yum! Thanks for the giveaway!

Caponata and pasta make a flavorful dish. If it's too intense add some prepared tomato sauce. Trader Joe's has a fantastic caponata (tastes like my grandmother's). Progresso has some but in a small can, but tasty.

I love to go out to the vegetable garden in the summer and pick whatever looks good, saute it in olive oil, add some herbs, and mix it with fresh pasta.

I never buy jarred pasta sauce since it is so easy to make a marinara. I can add anything to the base of San Marzano tomatoes, olive oil and garlic, but one of my favorites is Puttanesca made with pepperoncini, anchovies, black olives and capers added to the marinara.

I love a simple bowl of buttered noodles & aged cheese. Sometimes I go Old Spaghetti Factory on it and do browned butter and Mizythra, sometimes just a good quality parmesan or asiago.... maybe a touch of cream, bacon or basil if they are floating around the fridge....

I love homemade spaghetti with fresh pesto, green beans and potatoes. Pesto should always be made with a mortar and pestle - it's just not the same in the food processor. This is why I hardly ever order it out, and rely on my own two hands to do the mashing.

My passion in food is always pasta, even down to the bite and mouth feel. However, although i do love it with different sauces, i enjoy making different noodle dishes that i remember from my childhood. Wide noodles with cottage cheese and butter. Noodle kugel made with medium egg noodles, raisins, cinnamon, sugar and vanilla. Or even the slightly less common kugel with medium noodles, cream, onion soup and spinach.

My gravy and meatballs tonight was fantastic, 3 kids dont lie!

A fortuitous experiment! I recieved a huge amount of greens in an early-spring CSA box a few years back. Blanched and shocked kale, chard, and dandelion greens were pureed, pesto style with copious amounts of goat cheese, toasted walnuts, and olive oil. This concoction was tossed with whole wheat penne and thinned out with a little pasta water. The creamy richness of this dish is a perfect foil for a still cool and blustery spring evening.

I made lasagna for the first time on Mother's Day and it was delicious.

I know that whole wheat pasta is considered best served with a cream or pesto sauce, or for salads, but I confess, I am hooked on it for any type of pasta dish. It's like trying to go back to white saw-dusty bread, once you've tasted the artisan 27thousand grain option. My palate is now spoiled.

Oh, I made a lovely, sinfully tasty spinach lasagne where I first made homemade noodles (it was my first time, so easy) and then layered them with bechamel sauce (steeped w/thyme and minced shallot), sauteed mushrooms, and goat cheese. YUM.

I am a citrus fiend, so I like to make spaghetti with lemon juice, zest, great olive oil, parsely and parmesean cheese.

Without a doubt, spaghetti with some anchovies, garlic, purple cauliflower, bread crumbs and a little pecorino siciliano. Sometimes, a few raisins are added in as well when I have them on hand. A can't miss dish.

i enjoy making a basic tomato sauce, it pairs with any shape pasta

I like a simple linguine with evoo, heirloom tomatoes and basil from the garden, and parmagiano reggiano on top.

Fresh chopped tomato sauce with garden tomatoes, fresh herbs, sweet onion and lots of garlic. Saute the aromatics with salt and pepper, deglaze with a bit of red wine vinegar and red wine, then add the fruit, herbs and al dente pasta until just warm. Add a little parm and enjoy al fresco if you can.

I like to make beef tips and noodles in a creamy mushroom sauce made from wild mushrooms.

Cold pasta salad with diced green olives, pimentos included, a small handful of cheddar, tomato, dill, basil, rosemary, mixed in oil and red wine vinaigrette infused with garlic and rosemary.

Saute thin slices of garlic and chili flakes in some olive oil and butter, add shrimp and saute until done, add cooked spaghetti, a little bit of the pasta water and a chiffonade of basil. So simple and so delicious.

How can anyone have a favorite pasta? There are soooo many delicious variations.
Here's one of my favorites:
It's a fresh linguine with a mushroom cream sauce.
Sweat one minced clove of garlic in butter and olive oil. Add half a sweet onion, sliced. Cook until it starts to carmelize. Add sliced cremini mushrooms (as many as you like and I like a lot) and saute until the mushrooms are done. Add a good pinch of salt and black pepper, deglaze the pan with some white wine and chicken stock, simmer two minutes. Reduce heat and add about a half cup of cream and stir to heat through. Remove from the heat and serve over fresh buttered linguine.

One of my other go-to pasta dishes is very quick and simple. It's divine with fresh off the vine summer tomatoes.-- Pasta with fresh tomato sauce.

Sautee one or two cloves of fresh garlic over low heat in olive oil with until soft and the oil is infused. Remove from the heat.

Add a 1-1/2 pints of cherry tomatoes, halved or four large tomatoes, diced. Chiffonade or chop fresh basil to taste and add to the pan. (I love basil, so I use at least ten large leaves). Season with salt and freshly ground black pepper.

Cook 12oz. to 1 pound of pasta in salted water.
Drain cooked pasta, reserving some of the cooking liquid. (any pasta will do, but fresh is BEST).

Toss the pasta with the garlic-tomato-basil mixture, adding a small bit of the cooking water if you want it more "saucy".

Serve immediately with grated parmesan, asiago or romano cheese.

(good with a fresh herb blend of basil, thyme, roasemary, chives and parsley too.)

My favorite "make at home" pasta, hands down, is gnocchi. I springboard off the Todd English recipe I've been using for years and it's never let me down. I can serve the gnocchi poached with tomato sauce, even a heavy ragu or pan sauteed in brown butter with sage.

As far as using dry macaroni at home, the sky's the limit. My dad was from Naples (Italy, not Florida) and my mother was an extraordinary Italian cook being first generation American of Italian descent. Cavatelli, rigatoni, ziti, farfalle, penne, lasagna, mafalde, orrichiette, radiatore, fusilli (the long curly stuff, not short rotini which eveyone confuses for fusilli) - you name it. We ate macaroni with gravy every Sunday at 2:00 p.m. Sharp.

Mac 'n Cheese!

Make at home pasta eh? I know my girlfriend's is primavera, she's always asking me to throw one together (great refrigerator Velcro).

My favourite though is a good marinara over vermicelli or spaghettini. Taking the time to make a really good marinara from scratch always pays off, add a couple homemade mini meatballs or a good sausage. One of my favourite things to eat.

I'm a fan of the horribly cliched and potentially un-foodie Chicken Alfredo Lasagna. Made with real cream, freshly grated parmesan, and bacon, it is absolutely criminal in its fat content.

Simple and delicious. Angel hair pasta with lemon, garlic, butter and pecorino.

Crawfish Italiano - fry mushrooms and crawfish tails (with fat) in olive oil with garlic and lots of crushed red pepper till the mushrooms are softened, stir in heavy cream, parmesan and green onions, and serve over slices of toasted italian bread. Magnificent :)

Homemade ricotta stuffed ravioli in a sauce of lemon juice with olive oil and basil is totally my favorite meal.

Saute red and yellow peppers, zucchini in EVOO until soft. Add al dente rigatoni to the saute pan and mix well. Add a tablespoon of anchovy paste and 1/2 cup italian breadcrumbs. Season with s&p.

I love capellini tossed with unsalted butter, Beecher's Flagship cheese, freshly cracked black pepper, diced tomatoes, and shredded basil.

My mom makes this amazing bacon mac and cheese with charred peppercorn bacon and lots and lots of garlic!

I like making a cold spaghetti salad in the summer. I use whatever I happen to have on hand at the moment. Cooked spaghetti mixed with some diced tomatoes, red onion, green pepper, black olives, etc. Add some EVOO and red wine vinegar with some garlic salt, pinch or two of sugar, some salad supreme and some parmesan cheese. Yum!

Lasagna is always a favorite at my house.

I like to make my own homemade pasta. It's time consuming but worth it.

My favorite make at home pasta is any pasta, I just love pasta. I am craving pesto at the moment though. I'm a southern girl who loves Italian food so I'd love to have this book.

Easy italian here means also making fresh pasta in the time it takes to boil the pot of water. I use Jamie Oliver's friend Gennaro's method to make pasta in about 3 minutes - check out this podcast:

While the pasta rests 5-10 minutes before rolling and cutting, I pull out the food processor and mix 1 cup of toasted walnuts, 1/2 cup of fresh basil, a clove of garlic and olive oil (adding slowly, probably around 1/2 to 3/4 cup in total) until I get a decent pesto. I usually season it, adding salt and ground pepper.

Now the pesto's done, just quickly roll out the pasta, roll it up into a tight jelly roll and slice to the thickness you want...easy!

Boil the fresh pasta (takes far less time - watch it), top with sauce and freshly grated grana padano.

A very easy way to impress your date!
