Awesome! I've been looking for something like this. Unfortunately, it says I should have cooked my fava beans 2 days ago...damn.

StillTasty is rather overcautious in the guidance it gives. Most of it comes from US government sources (the same sources that try to convince us that medium-rare steaks are cooked until they are brown).

This website tells me that pineapples continue to ripen after being picked. While Harold McGee tells me that pineapples will soften after picking but will not get any riper (or sweeter) after picking...mmmm
I am going to stick with Harold
