Search for the Perfect Brownie Recipe

20090320-brownie.jpg

Xanthe Clay of Telegraph tries to recreate the legendary brownies—"as close as I've found to perfection"—from London cafe Ottolenghi. After searching for the ingredient that gives the brownie its "divine praline flavor" and the baking technique that results in the perfect ganache-like center with a crispy top, she comes up with a final recipe that involves praline chocolate bars and an ice water bath.

My favorite brownie recipe is the one from the "Baked" book classic simple brownie, but i have to say a praline infused bar seems like a pretty good idea will have to try one next time im in London

Use the two bag recipe. Easiest and most delicious brownies I ever made!

what is caster sugar?

According to Wikipedia, it's a finer grade of white refined sugar. You can probably get about the same result by running white sugar through a food processor for 5 to 10 seconds.

thank you ,Wally East

@winebill -- that looks like a great recipe. I'm going to attempt homemade brownies for a change. Yes, I have to admit, I'm a box brownie cheater...and I have to agree that Ghiradelli makes the best brownie mix I've tasted so far. They are dense and rich and very chocolately. Perfect warm with a scoop of vanilla bean ice cream on top.

Buy "bakers sugar" in the US for a caster sugar sub. You should use it for all of your baking anyway.

Great recipe!! They look delicious!! I will have to bake these tonight!
