I would just like to put my recommendation forward for an amazing steak house in the heart of Paris. It's called Maison de L'Aubrac and it's on Rue Marbeuf just off the Champs Elysées. They're open 24/7 and their steak is simply delicious.

I'm glad you mentioned Clotilde Dusoulier. I love her blog and her book, Chocolate and Zucchini, is a fabulous treasure of poetic deliciousness. I think she's a bit of a genius, not unlike Jamie Oliver. I have her current book, a Paris restaurant guide thing, which seems a little less inspired.
That said, I think Paris is a no-fail restaurant city, just stay away from the tourist areas (like the Champs Elysees and Monmartre, etc)!
