Cook the Book: 'Kneadlessly Simple'

Irish Soda bread. My mom taught me, but somehow it's still best when she makes it. I look forward to making some for St. Patrick's Day!

Half-whole wheat sandwich bread. It's one of the few that I like better when made at home than when purchased in the store.

Cinnamon Swirl Bread. This title may include simple, but the recipes are far from it. Most recipes take 2-3 pages each.

Biscuits- especially 1/2 butter 1/2 bacon fat. For bread that rises, it's a food processor french bread recipe from some Cajun-Creole cookbook that was long ago lost

My favourite bread to bake and to eat is multigrain bread - with flax seeds, oats, cornmeal, wheat germ, whole wheat flour, etc. My OH is firmly a French loaf fan though, so I end up baking French loaf with 1/3 whole wheat flour most often.

Another vote for half whole wheat sandwich bread. We make this weekly and pretty much never buy store-bought bread anymore. Also good with various add-ins like oats, and with molasses, honey, brown sugar, or regular white granulated sugar for tiny change-ups.

I love Mark Bittman's no-knead bread recipe. I probably make it once a week. So easy and so good!

appropriately enough, the no-knead bread recipe from the New York Times. it smells great, tastes delicious, and got me to start buying yeast.

My favorite bread to bake is Peter Reinhart's pain a l'ancienne. But my second favorite, and the one I make most often, is challah. I'm eating some right now...

A tie - challah and focaccia. I've made focaccia with the NY Times No-Knead bread recipe from about a year ago, and it worked out OK. I'd love to find a no knead challah recipe!

My all-time favorite is sticky buns, from a 1950s Betty Crocker cookbook recipe. But, I also like to make sandwich bread, biscuits, any quick bread, pizza, no-knead bread, the list goes on...

I love most of the bread recipes from Peter Berley's 'The Modern Vegetarian Kitchen'. They are in fact the only reason I keep that book around, now that I am eating meat again. I rarely bake because of time concerns though. I need to try the no-knead recipes because I love baking. Most of all I love bread. :)

I like jalapeno bread... with some cheese perhaps? Yes, some cheese would be nice.

Hmmm tough choice....my mother's cinnamon bread, for something that reminds me of home and my childhood; biscuits, because I'm from the South & they just go with everything; and chocolate-peanut butter-banana bread, because it's like having bread and dessert all in one.

My mother's recipe for date-nut bread. Toast and spread with cream cheese for breakfast. Mmmm mmmm good!

favorite yeast bread - sullivan street no-knead.

Current favorite is rustic sourdough, that is, sourdough lite, not so much tang. It's fav mostly because it's the first venture into yeast breads and using a starter (as opposed to mix 'n quick breads). But I'll be branching out. Pumpernickel is next up. If I can pull that off, it will then be the favorite!

Ciabatta -- I remember the first time I had it at the bakery across the street from my apartment. The ciabatta in the display case looked as perfect as a beautiful, floury slipper. I asked for a loaf of the see-a-ba-ta, learned how to pronounce it, and couldn't go back to bagged bread again. I never get tired of trying different little tricks with this relatively straightforward bread.

zucchini bread -- as far as yeast breads, I haven't really explored that area much yet.

Definitely either Irish soda bread or my mom's special whole-wheat bread, which she made when we were growing up and which I hated at the time, but cannot possibly eat enough of these days.

Smitten Kitchen's Potato Rosemary bread. it was my first real yeast bread and I truly enjoyed the experience of bread baking for the first time. (plus, I pulled something out of the oven that I would have sworn I bought from a bakery!)

I love making all kinds of bread, but I especially like sourdough and rye breads like pumpernickel.

Having recently taken a 6 hour bread class, I would say my favorites are Challah and pita. Watching the pita puff up on the stove top is so cool!

My kids call it "Crazy B-Bread" It's basically banana bread with the addition of dark and milk chocolate chips, walnuts, and chunks of carmel. The flavor combination is amazing...the chocolate really adds a sweetness and compliments the banana, the walnuts add some bitter notes that counteract the sweetness and the carmel adds a salty component and creaminess to the banana bread. My kids need to do something really special (like all A's on a report card) for me to make this for them!!!

I've started using Artisan Bread in 5 Minutes a Day and my ability to bake bread and now love baking bread. My favorite bread to bake is Challah.

the first yeast bread I ever baked - a simple honey wheat bread that has become the stand in for store bought bread. It came out wonderfully even on the first try.

Since coming back from Ireland I also do enjoy baking (and consuming!) Irish Brown (Soda) Bread. yummmm

i'm a huge fanatic for quick breads. i know that doesn't really "count" as bread, but banana bread and apple bread are my favorites. for yeast breads i'd have to say challah.

My fav is chocolate zucchini bread and pizza. I always made them with my mom growing up.

Beer batter bread. Makes me feel like a genius every time. Especially good with homemade preserves.

My great grandmothers white bread. I use my Grandmother's bowl to mix the dough. It is probably the only bread I don't make in the mixer.

Saffron Rolls

White bread with about 1/3 semolina. It gives it a deeper flavor than bread flour alone. The basic recipe can turn into bread, rolls, breadsticks, crisp crust, soft crust. After the ingredients, it's all technique.

Of course, challah. Especially at Rosh Hashana, when we make it round with rasins, but challah is amazing year-round.

Beer Whole Wheat Bread

Onion Lovers' Twist. I am not sure where my mother got this recipe - probably Betty Crocker - but I actually loathe onions, and this bread is the only thing I really LIKE them in! The bread itself is a basic white yeast bread, filled with chopped onions, garlic, poppy seeds and butter, braided into a lovely twist loaf. Even if you accidentally overfill the three "braids," like I often do (oops), and the butter leaks out, it still makes for a wonderful buttery, flaky bread that is best eaten warm.

I like to eat the bread, not bake it as it is always flat and dry when I try. I need to take a class to see what is the secret of baking good bread.

My attempts to make any sort of yeasted bread have all ended in failure. Quickbreads on the other hand are another matter. I love making Cranberry Orange Bread and Nutella Banana Bread.

My absolute favorite is my mom's Christmas stollen. We bake it together on christmas eve, and have every christmas since i can remember. She uses a traditional french brioche recipe with all the citrons and raisins and currants that make stollen so delicious thrown in. topped with a lemon glaze. it is beautiful to knead.

I make a Polenta Millet and Sunflower bread that is unbeatable, it makes the crunchiest toast known to man and still stays soft and squishy enough to make a killer sandwich. Try grilled sharp cheddar with sliced tomato and a fresh basil leaf (or more). The possibilities are endless!

although it probably wouldn't be classified as simple, my favorite bread to make is sourdough. i've heard that you're supposed to name your starter, and i think i'm going with barack dough-bama. :)

Favorite to make is crossaints, as the trouble of making/folding the butter block really is worth it when the crossaint puffs/flakes up perfectly.
Still working on naan (indian bread) and figuring out whether I can get my oven somehow hot enough to make the naan come out texturely correct. This one may never work...

Irish soda bread has always been my favorite bread to bake--it's hugely fun to make and the result is one of the most delicious things in the world. In addition, it reminds me of baking with my grandfather when I was a child.

A 'mixed' sandwich bread, mostly because of the memories of baking it with dad. It uses mostly white flour, but also as much wheat flour and/or cornmeal as you feel like adding that day. Always good, but always a bit different.

My favorite type of bread is this type of chocolate bread that I was only able to make twice, successfully. Every other time, it has failed in some way, usually not rising. But it was amazing. It wasn't so much sweet as flavorful, and I would classify it as a dinner bread as opposed to a dessert. It tasted great with soup, too. I miss it...

I like baking plain white bread using the "no-knead" method. It tastes like something from a baker's shop.

I do have some favorites, but when I think of bread I remember the cinnamon raison loaves I used to make as a child. I just loved rolling them up and then when I'd eat it, I'd sit there and unroll it. I do like to play with my food!

My very favorite recipe is the one that is beautifully brown on the outside and NOT soggy on the inside! Seriously, I think a lovely French loaf is my favorite. It is so versatile and can be used for so many recipes.

I created a sundried tomato cheese Italian bread which is to die for. Chopped garlic, parm reg or pecorino romano cheese, italian herbs, and oil packed sun dried tomatoes. My husband trades loaves of this bread for pies and cakes from his co-workers. He would take it to work and they all wanted some, so he would say...ok, what is it worth to you!!

NY Times "no knead" bread

I love making a variety of breads. Everything from a simple Anadama bread to braided herb-cheese breads to crescente (kind of like focaccia with diced pancetta) to wild-caught sourdough. I worked for a while as "the loaf maker" at a natural bread bakery. It was one of my favorite jobs ever. I even baked homemade bread for my Italian father-in-law in Bologna - who commented (in Italian - didn't speak a word of English) that he didn't know Americans knew how to make "real bread".

My favorite bread is Pain Viennois, a sweet dough bread you can eat with almost anything. Best is with a small chocolate bar... I grew up in France and this is what we would eat for after school snacks... so yummy!
But you can add chocolate chips to the dough and you have double the chocolate :)

I love a fantastic savory sweet bread to accompany dinner. My favorite since childhood has always been Anadama. There was nothing that beat the dense, but airy bread, and the crisp, sweet crust. And it's never nearly as good unless my Dad makes it.

I have to confess I don't have a favorite bread to bake simply because I don't bake bread. But my husband has been baking bread for the last 30 years, and I love to eat everything he bakes. If I had to pick just one type of bread that he bakes, it would have to be challah. The recipe is not his own - I believe it is a Craig Claiborne recipe - but my grandmother taught him how to braid the loaves. So besides being just plain good, eating his challah always evokes warm memories of my grandmother. But my husband's challah has become even more special. In January 2006 my husband sufferred a stroke which left him pretty much paralyzed on his right side. For over a year he was unable to cook at all. One day, he told me he wanted to bake challah which meant he sat in his wheelchair coaching me through the bread-making process. The challah was ok, but I know he missed doing the work. About a year later, we tried it again. I was expecting to be "coached" once again, but this time, after I measured all the ingredients and proofed the yeast, he told me, "move over", pushed me away, and stuck his left hand in to knead. Although I had to provide some assistance cutting the dough and rolling it into strands for him to braid, he did all the work. He has been baking bread ever since, and aside from my measuring the ingredients and getting the utensils out for him, he now does it all with just his left hand.

And I love it.

Sourdough bread is a fav at our house

I have a recipe for refrigerator rolls that keeps well in the refrigerator for several days and I can bake just the amount I need for the meal coming up and save the rest to bake as needed.

The same goes for Bran muffins, that recipe has no yeast and can be used for breakfast.

Recently, I developed a fast recipe for a junior-sized banana bread - using a 3 x 6 loaf pan that I have - I use some brown sugar in it - makes a rich result with less than 10 minutes mixing time and about 25 minutes in the toaster oven.

It is definitely challah, brioche, and ciabatta. Then of course there are the profiteroles, and all sorts of quick breads. The bread making bug has taken hold, and if I see yeast, my mind starts to ferment immediately.

The most fun I ever had making bread on my own was Challah. Definitely. Of course, it came out tasting horrible, but it was a great afternoon. Any bread making that ends up feeling more like I'm just playing with play-doh is up there on my list... perhaps that's why the bread itself sometimes comes out tasting like modeling clay. Oops! : )
