54 Miso Soup Variations

Tired of only adding tofu and wakame seaweed to your miso soup? Try something new after reading Harris Salat's latest post on The Japanese Food Report, in which he lists 54 miso soup combinations, including ingredients such as daikon, onion, eggplant, and kabocha. These suggestions are part of his "Miso Soup Project," which asks friends in Japan to share their favorite miso soup combinations. This first installment comes from friends in Niigata.

i just had some lovely miso soup with black mussels at restaurant hama here in columbus the other day. my friend got long neck clams in her miso. never seen any other variations on it before then-really good stuff.

so weird - LAST NIGHT i made barley miso in chicken broth with noodles, ginger, garlic, green onion and mushroom. absolutely excellent

Mmm... You know what I love? Making risotto with miso and brown rice and mixing in silken tofu until it's all gloppy and wonderful. It's insanely comforting and super healthy. Although I suppose that's adding miso to something and not the other way around.

I make it with spinach and shirataki noodles, sometimes even with corn. Miso is awesome.

red pepper flakes, eggplant, corn, and potatoes are also nice.

#19 is called ton(pork)jiru(soup), my ultimate comfort food.
I miss my mom's tonjiru.

Also miss nameko (slimy mushrooms).

One of our most popular recipes is our Ginger Miso Soup with Kale and Buckwheat Soba Noodles. It is a heartier version of the traditional soup, but we do not deviate that far.
The pungent ginger broth is a great "Get Well" ingredient for anyone with a cold.

My host mom in Ehime prefecture would add sliced onions in the miso soup she makes for breakfast. Ever since I came back home, I've been doing the same, plus pumpkin sometimes too. The onions in miso soup is truly delicious.
