What she is describing is EXACTLY what Chef Dustin does at Art of the Table here in Seattle. My favorite restaurant of all time. Carla should totally get in on that action.

I used to work with Carla when she taught classes at Sur La Table! She was super nice and upbeat. And I actually ran into her a few weeks ago in DC :)
Don't have cable, so will have to find out who wins tomorrow.
