How to Make Homemade Vanilla Extract

20090205-vanillaextract.jpgIf you don’t already know how to make your own vanilla extract, it’s easy. Clotilde Dusoulier gives you a great walk-through at her blog, Chocolate & Zucchini. All you need are some vanilla beans and some high-proof alcohol—vodka or rum work nicely. [via Lifehacker]

I have a bottle of sherry that I toss my spent, scraped vanilla bean pods in. I top the bottle off with more sherry as it runs low and have an endless supply of extract better than most commercial brands. The older your bottle of liquid gets, the better.
