Cook the Book: 'Osteria'

20090202osteria_rick_tramonto.jpgThe colder the weather, the more I crave bold, straightforward flavors. And if they're delivered with lashings of rich, warming sauce, so much the better. This is just the sort of food that restaurateur Rick Tramonto delivers with his fifth cookbook, Osteria. Written with Mary Goodbody, it's a collection of more than 150 Italian country-style recipes from Chicago's Osteria di Tramonto, laid-back sister restaurant to the award-winning Tru.

In Tramonto's kitchen, laid-back doesn't mean simplistic or slapdash. It does mean flavors that are more comforting than delicate, and portions that are meant to be ladled rather than stacked precariously. Think of the dishes in this book as very high-end family food—food, that is, for a family celebration and not a school-night supper.

And what gathering of family or friends wouldn't rejoice at a meal of pecorino custard with tomato sauce (essentially an intensely cheesy bread pudding) followed by red wine-braised short ribs? Speaking for myself, I've already earmarked Tramonto's spicy skillet-baked eggs—cheerfully named "eggs in hell"—and goat cheese and ricotta pancakes for my own brunch among friends. We'll be posting these recipes and more, every day this week.

Does scotch count? hehe. I'll go with a spicy stew...perhaps curried. I made some curried cauliflower soup last week that was really good.

Chili - my current favorite is "white chili" which is really kind of mildly spicy white bean and chicken stew.

Um, seriously, that dish on the cover of the book looks delicious. But I am a pasta with red sauce girl through and through. A nice homemade bolognese, maybe.

this winter I've been on a soup-making tear. if it's not nailed down in my kitchen it has probably been used in a soup in some way or another this year. Highlights have been a Pinto Bean Soup, a Pumpkin soup and always, Chicken Vegetable Soup with a nice warm crusty bread and a small green salad, is my go-to meal for cold weather.

S L O W braised short ribs.

I've got to say some braised short ribs always hit the spot...

Just about anything braised.

Pot roast with carrots, mushrooms, onions, on top of a baked potato.

Korean Kimchi chigae! It's savory, spicy and satisfying. The spices warm you up so quickly, it cleans out your sinuses and, I believe, builds the immune system. It's like nothing else .

We don't get a lot of cold weather here in the desert, but if it ever is cold, chili is good.

Chinese curry, but not before drinking some of the soup before converting it curry. My mom would always let me sneak a bowl of the delicious soup, and now I find myself giving myself a generous taste before I change it from a soup to a curry. =P

A HUGE bowl of pho with fried tortilla strips across the top and a cup of smoldering hot chocolate melted from an Ibarra bar (a great Mexican chocolate-- has cinnamon!). My boyfriend is Asian and I'm Latin, but we don't see the choosing of food as compromise-- we see it adventure!

The cold weather brings out the stews. Favorite changes but currently, it's Japanese beef curry.

As sad as it sounds, a good bowl of chocolate malt o meal (http://melindaschwakhofer.files.wordpress.com/2008/02/chocolate-malt-o-meal.jpg), heavy on the butter. Butter up some toast, crumble crispy bacon into the bowl, and spread on the bread. Roll like a taco and eat.

For me, it would have to be turkey with stuffing, mashed potatoes, gravy, fresh cranberry-apple and orange relish, oyster casserole, fresh baked rolls with honey butter,and all the other necessary sides commonly referred to as Thanksgiving dinner at my house.
I could not imagine going through the cold weather months without having this meal at least once. We often cook a pared down version of this meal throughout the fall and winter, and it always gives me comfort.

This is easy ... Caldo verde, which is conveniently mentioned elsewhere on the blog today. Now give me a book!!

For the Scot in the family, oatmeal ... "porridge" to be precise. I go for luscious and light matzoh ball soup, especially if someone isn't feeling well.

Growing up in Buffalo there was always a need for cozy meals to get you through snow storms -- my favorite were golumpki, Polish cabbage rolls. Nothing like coming in from playing in the snow or sledding to one of my Mom's best dishes.

My husband's family makes crepeaus (which may not be the proper word, they speak "family french", a cross of English and Quebecois). This is a soft spongy flour dumpling poached in maple syrup, which must be served as soon as the first run of maple syrup comes in for the year, but they break it out anytime the family comes together.

Soup and a hearty bread. There's a Ukranian cabbage soup in particular that is totally hitting the spot this winter.

One of my favorite winter comfort foods is Beef Stew. Simple, but very satisfying, and it's fun to experiment with.

My homemade chili is always called for when it gets really cold.

Steel Cut oatmeal cooked overnight in the crockpot with dried apples, apricots & raisins. Makes it a lot easier to get out of bed on a cold morning.

I love spicy black bean chili when it's cold.
I also sometimes make lentil soup with fennel.

My favorite is chili, the hotter the better.

I make a turkey/pumpkin chili which is my favorite hearty winter comfort food.

However the food I make at the first snowfall (and frequently thereafter all winter) is home-made chocolate chip cookies. I know that's a dessert, but it comforts me tremendously. As soon as the weather gets cold I need to make cookies and have warm cookies and milk.
