Cook the Book: 'On the Line'

20090223ontheline.JPGYou’d think that a chef with three Michelin stars would guard his secrets. But Eric Ripert, with Christine Muhlke, has written the restaurant equivalent of a tell-all memoir—well, minus the sordid love affairs. The establishment in question is Le Bernardin, the phenomenally successful fish restaurant now in its 23rd year; the book is On the Line.

The sweeping narrative takes you all the way from the front of the house to the back of the pantry, providing “day in the life” timetables for everyone from the porter (“8:41 a.m.—Sorts and smells squid, turning plastic gloves inky”) to the pastry cook (“10:30 .a.m—One hundred dozen petits fours are finished for lunch.”) Dishes are described in detailed play-by-plays (“1:37:54—Flips fish”), kitchen jargon decoded (“Giuliani” is slang for “julienne"), and enormous quantities of raw ingredients recorded (250 pounds of butter and 500 pounds of black bass a week).

And then there are the recipes, more than 40, straight from Le Bernardin’s kitchen—scaled down but in no way simplified, for the home cook. We’ll be posting one of Ripert’s dishes every day this week, from meaty braised halibut with asparagus and wild mushrooms and filler-free crab cakes with Dijon mustard emulsion to an Asian-influenced tuna tartare “sandwich." Come back, too, for pastry chef Michael Laiskonis's dark chocolate, peanut, and caramel tart.

As simple as possible!

With friends, and lots of butter and lemon and capers, please.

Pan-seared, finished in the oven, nothing but s&p and a squirt of lemon.

Or, ceviche.

My favorite way to prepare seafood comes from a Cooking Light recipe, actually. It's grilled salmon with a mustard-apricot-honey glaze served with parmesan-spinach-orzo pilaf... I've served for dinner parties, Christmas dinner, anniversary with my boyfriend and just casual dinners and it always gets rave reviews - great flavors. When we go on vacation to the Oregon coast are favorite thing to prepare is Macadamia Nut encrusted fresh Halibut Fillets with a Red Curry Coconut sauce.

whole steamed fish Cantonese style - steamed with sliced ginger and green onions and drizzled with a light soy sauce and hot oil mixture so the freshness of the fish really shines.

My favorite way to prepare fish is tonight's dinner....blackened fish tacos!

If I had to choose just one, my favourite way to eat seafood would probably be sushi & sashimi. But there are so many others I truly love, too!

I had a scallop dish at the Dining Room at the Ritz Carlton in San Francisco and just about fell off of my chair it was so good-- fresh sea scallops seared to perfection with caramelized salsify and shallots with creamy buttered wild mushrooms and a delicate natural jus. So amazing.

Really simple, either broiled or sauteed, maybe with some lemon.

Prepared:

Grill/Broil with a little soy sauce (all fish tastes better with soy sauce!).

To eat:

The Rut and Lek Seafood (Bangkok Chinatown) way--sitting at a plastic table on the side of a busy street, tossing the bones and shells over your shoulder onto the road.

I swear by a tuna tartare mixed with avocado, lime juice, cilantro a little minced jalapeno and a lot of sea salt. It's so fresh and tasty . . . and it never fails to impress.

The simpler the seafood, the better, in my opinion. Fish is usually broiled or grilled, with an herbed butter and a squeeze of lemon.

Baked, with mango salsa.

Mussels, steamed in white wine, butter, and garlic. I could eat them every day.

As simple as possible to highlight that particular seafood's profile.....although there nothing wrong to be said about a good ceviche or almond crusted calamari steak with lemon dill buerre blanc

Shrimp Scampi with tons of garlic!

Honestly.... I love fried anything. I don't feel guilty for this.

Sea Urchin, raw with a little soy sauce.

Grilled or pan-fried. Sometimes poached. The best is freshly-caught trout from the lake, lightly floured and then grilled over a campfire...mmm.

How about, lobster, on a picnic bench in Maine overlooking the ocean, dodging sea gulls.

Flash-sauteed calamari in good extra virgin olive oil and a healthy dose of red pepper flakes.

My new favorite thing is raw tuna tostadas: tuna with chopped chipotle, lime, green onion, tequila, and cumin mixed together and mounded on freshly baked tortilla rounds.

Probably grilled salmon, it doesn't get much better than that.

Marinate some fresh tuna steaks in a bit of olive oil, tomato, cilantro and garlic. Bake for about 10 minutes per side, serve alongside boiled fingerling potatoes tossed with good olive oil and sea salt. Serve with a nice Sauvignon Blanc. Perfect every time.

lime/lemon (sometimes both), adobo seasoning, my fish of choice, wrapped up in aluminum and cook in the oven, always produces a tasty, and succulent piece of fish ;)

miso and sake lees marinated black cod, broiled for 10-15mins.

lightly seared, almost always, with flavor-highlighting herbs and aromatics: best is seared salmon with white wine and tarragon. yum!

Well, it depends on mood and ingredient, but in general, simplicity is better - sushi or sashimi for really fresh, flavorful fish, maybe a quick sauté in butter for a nice flaky white fish - but then, a spicy brick-colored gumbo full of crawfish, crab, and clams is delicious on the right day. Today: gumbo.

For the most part I like tilapia ceviche. For shrimp, I like them salt grilled. I like my walleye battered and fried.

As fresh and as raw as possible. I do love lightly seared tuna or salmon, or plank-grilled in the summer. Yum!

If it has to be cooked, it has to be bouilliabaisse.

Pan-fried white fillets in an Asian garlic sauce is quickly becoming a favorite at my house.

I prefer my seafood raw and fresh, which is why Tokyo is probably the best place to be jetlagged. Right now, I can't think of anything more enjoyable than having a 5am sushi breakfast at Tsukiji Fish Market. I guess it has something to do with the pre-breakfast stroll, gazing at fish so fresh that they look like they can come to life and eat me, but knowing that its me who will be eating them. Also, spooning uni deliciousness fresh from its shell into my mouth makes for a fine dessert.

Depends on the fish. I love fried shrimp w/tartar sauce, cold poached salmon w/hollandaise, almost any other not fishy fish cooked with lots of butter and some lemon. Tuna either raw in a sushi/sashimi/tartare thing w/ponzu or out of a pouch for tuna salad.

I really love boiled shrimp with cocktail sauce. I could eat it all the time. I know it's basic but I love it! I also make the best cocktail sauce too. I love to steam clams and sear scallops. I don't cook a lot of fish but I make up for it in the shellfish/mollusk department!

I sat there visibly drooling over this book at Borders the other day. WANT!

Japanese sushi handrolls. Super easy and great for a crowd! Everybody can customize their own meal.

I'm Italian and we eat our seven fishes every Christmas Eve. My favorite ways to eat seafood are from that meal here are few I've loved over the years.

Shrimp, Scallops, and Smelts - lightly breaded and deep fried. Served with lemon and fresh parmesan cheese.

Anchovies - added to dough balls and deep fried and tossed with pasta with garlic, olive oil and crushed red pepper seeds.

Fish soup - whitefish (whatever is on sale!) cooked in a rich broth with beans and pasta.

Parmesan and Salmon skin crackers. slice some salmon skin, top with fresh Parmesan and bake until crispy.

Any seafood prepared simply and dunked in butter is just about the best thing ever. Mussels are my current favorite and obsession- I've been buying the New Zealand ones that are frozen on the half shell.(Hey, I live in the Midwest, we don't get them fresh.) I just pop them in the oven and a few minutes later I'm dunking them in melted butter. Oh, my.

It depends on the seafood, but I always keep it as simple as possible to enjoy the flavor and texture of the seafood. As an example, butter poached lobster is orgasmic!

Fresh as possible, cut into long strips, and rolled into some seaweed, rice, and random vegetables... plus some tasty spicy mayo. ;)

As for shrimp, panko or batter crusted with the same way as above. Nothing like a good sushi roll. ;)

Generally very simply prepared. I usually just broil or saute it a little with some salt and light herbs. Then, of course, there's my love of sushi.

S&P, pan seared on one side in just a hint of butter and olive oil (50/50) and finish under a broiler. A squirt of fresh lemon juice and chopped parsley at service. This method works well with almost any fillet or steak. Potatoes Au gratin makes a fine accompaniment beside steamed asparagus. It all comes together with friends around the table.

I love roasting fish, especially salmon w/Asian flavors. Yum.

Something simple I've been doing a lot lately is simply gently steaming some super-fresh trout until its just barely cooked. Once its done, the skin slips off easily for a more attractive presentation, and I usually add some sort of elaborate sauce.

I love a yellow tail fillet, pan fried in a little break crumbs and some lemon, reminds me of home.

I like to take our gorgeous Copper River salmon and cook it in parchment paper. I slather on some Hoisin sauce and toss a handful of julienne scallions, carrots, and fresh ginger. Bake it in a 400 degree oven for 10 minutes; and be sure to open the parchment at the table so your guests get the full effect of the aromatic steam.

I like my fish raw. Whether creating interesting new sushi combinations, making a nice ceviche on a hot summer day, or maybe my personal favorite tuna tartare.

Salmon with honey/balsamic glaze.

marinate in some lemon and pepper and microwave (cooks perfectly in the microwave). Then add some rosemary/oregano/thyme. Accompany with sauteed spinach & flavored rice.

Sushi or crudo, when the fish is FOB, can't be beat.

A steamed lobster, a cup of clarified butter and a couple of lemon wedges. It doesn't get any better than that.

Raw, sliced thin, a spritz of lime, a drizzle of extra virgin olive oil, a sprinkle of coarse sea salt, fresh ground pepper, and matchsticks of something with crunch: celery, apples, radishes, whatever.

Touch of butter, salt and lemon.

Raw. With wasabi or citrus where appropriate.

Only eat seafood that is fresh, and the simplest preparation is always the best. That means sashimi or steamed with just a touch of soy or salt.

Scampied, but very lightly--then over biting greens, watercress or arugula.

A ceviche is my favorite... a scallop ceviche especially. Followed by a tuna tartar. The less cooked the better for fish for me; cooked fish starts tasting too... fishy. An indulgeant crab melt is also always good... or just steamed crab w/ drawn butter.

Nothing wrong with a salmon steak, seared in a cast iron skillet and then served with Mark Bittman's All-Purpose drizzle sauce.

My favorite way to eat seafood is raw. Just love fresh oyster and sashimi. But I also like simply boiling or steaming (shrimp, lobster, crab, etc). Just dipping it in a vinegar/sesame oil/cilantro/garlic/green onion (Asian way) dipping sauce. Yum!

I love salmon, but I always aim for the best quality otherwise it'd be too fishy. I like it poached or broiled with a drizzle of lemon juice and crushed garlic. Serve it with a side of steamed dandelion.

i love scallops with a light shake of paprika....seared perfectly on the stove. i swear i could sit down and eat two dozen...but of course, i don't :)

On a charcoal grill, sprinkled with some yuzu and salt.

Sushi. I love breaking out my starter kit and playing around with rolls.

I don't eat a lot of fish at home, but I love seafood--especially scallops. My favorite prep is simply pan-seared until it gets a nice crust on it. If I'm feeling ambitious, I'll make some kind of butter-tarragon sauce.

For my seafood, all I need is salt, pepper, good olive oil or butter. Maybe a little lemon too. Drool.

I had a tuna tartare last night that knocked my socks off. Give it to me raw -- tartare or ceviche style any day!

I love pan-fried tilapia, served with a chili-lime compound butter. It never hurts to throw a little minced shallot in the butter either.

To me my favorite way to eat seafood always sashimi! This is the only way to enjoy is true flavor. Isn't flavor what it is all about?

Steamed whole with ginger, scallions, lemon juice, and a little bit of ponzu sauce!

To prepare:
My all-time favorite meal, hands down: a whole steamed fish, drizzled with hot scallion-/ginger-infused oil and a tiny bit of soy sauce, with a big bowl of steamed rice. I'll admit to occasionally gilding the lily with a fried egg on top of the rice...but only on bad days.

To eat:
A hot calamares bocadillo from a cerveceria madrileña -- freshly fried calamari, impossibly light breading, stuffed inside a crusty loaf of bread. Some aioli if you want to get fancy, but a squeeze of lemon and you're good to go.

Simply grilled.
Maybe some lemon.

Superb quality: raw. Everything else: grilled outdoors OR poached in olive oil with garlic and herbs and finished with a squeeze of lemon.....lovely.

Seafood dynamite - perfectly sauteed scallops, shrimp and calamari tossed with giant chunks of lump crab meat, mayo, scallions, chile paste and sesame oil and then run under the broiler until browned and bubbly. Serve over perfectly steamed short grain white rice with lightly cured pickled cucumbers. Don't forget the sake!

Salt, a grind of pepper, great olive oil, a white-hot cast iron skillet and about 4 to 10 minutes. A beautiful seared crusted and perfect flavor!

Growing up in Ecuador, a city of "mariscos", I love my fish (mahi mahi) seasoned with salt, garlic, and cumin... dredged in flour, and fried until perfectly golden. I plate it on a bed of lettuce and top it with fried (green) plantains, tomato slices, and a red onion sauce.

As nature intended it to be - raw, simple and fresh. Sushi, oysters, and ceviche are so beautiful and straight-forwardedly satisfying...these items make a strong argument against "cooking" food!

Broiled or fried with butter, lemon, salt and pepper. Good fish doesn't need much else.

As a japanese man, raw is the way to go with fish. Otherwise, A quick sear (tuna, salmon, scallops, etc) with a little white pepper does wonders for me.

Raw if fresh enough. If not, poached in saffron-tomato broth, or seared and sprinkled with tangerine salt.

When it comes to seafood, I think simpler is better. This could mean raw with a sprinkle of smoked salt and swipe of yuzu zest or skewered, salted and grilled over charcoal.

My favorite way to prepare and enjoy seafood is to begin with the best quality seafood and do the bare minimum, both prep and cook-wise, to let the flavors shine.

Most of us seem to have the right idea - good seafood shouldn't be overly fussed with. Depending on what we're talking about, I generally like my seafood steamed, grilled, baked, lightly sautéed, or raw. I am admittedly very fond, though, of my Chinese grandfather's "hong shao yu," or "Red Braised Fish," which is first marinated, then fried, and finally simmered in soy sauce and spices.

My family has always had a soft spot for sashimi.
As for cooked fish, we love fish that can be roasted whole. Clean out the guts, descale, keep the head on, and the bones in. Season liberally inside and out with sea salt. Roast or broil. There always seems to be enough fat in the skin and flesh of the fish to bubble and brown the skin to a lovely crisp. I love to accompany the fish with a bowl of rice, sesame spinach, kimchi (cucumber kimchi is esp nice), crisped nori sheets, and pickled daikon radishes.

Grilled or broiled, and usually with lots of garlic, fresh herbs, and lemon.

I don't eat it as I'm Veggie - but I did make a salmon paté that I was told was delicious this weekend for a baptism

Homemade gravalax is what I crave.

We love to grill, so usually we marinade shrimp and veggies and make kabobs.

My favorite way to prepare seafood is the way my mom used to make it.
It is a rice dish with no name. She would put raw rice and tomato sauce in a skillet, cook the rice until done. Then she would put in uncooked shrimp and when they were almost done she would put slices of cheddar cheese on top and cover the skillet and cook just a few minutes until the cheese was melted. To this day I love that dish without a name.

Crabs! Steamed! Boiled! Maybe some butter, but not necessary.

My favourite way to prepare seafood is to grill it. Sometimes we marinate it in a little chilli, garlic and soy sauce.

Any seafood is wonderful. I love salmon roasted with miso on just about any day though.

I love both seafood and Eric Ripert so this is perfect for me! Having been trained in Cajun/Creole cooking I love a good crawfish gumbo but I also love just a simple broiled trout with a little butter. I will eat any seafood except bluefish.........never acquired a taste for that one!

tuna sashimi, coat tuna w/sesame seeds. drop into a sizzling hot frying pan, cook 30 seconds (or less) on each side. slice, serve on a bed of greens with wasabi and soy sauce and sliced ginger.

Scallops dipped in egg and potato starch, lightly fried, then mixed with a lemon/sugar sauce.

I love it boiled, broiled, fried, etc. oh and raw. pretty much just love seafood.

For any fish I can get with the skin still on (thickly cut, bones removed). I place the fish (skin side down) on a slightly oiled grill and cover the top with cut lemons or brush it lightly with a spicy barbecue sauce.

For the fish that come in thin fillets (especially white fish) I like to make cod cakes.

When I'm in a hurry, I just pan fry the fillets with a sprinkle of fresh ground black pepper and some lemon, lime or orange juice. Sometimes I add green onions, 1/2 clove of garlic, and some butter to the pan juices (to make a sauce); but most often I just serve the fish with extra citrus.

I love cooking mahi-mahi on my good ol George Foreman grill. And while doing that, I'll pop open a can of diced tomatoes into the pot, cook it for a little bit, add lots of spinach to it and finally 2 tablespoons of home-made marmalade. Add pepper and salt to taste. When the mahi-mahi is perfectly grilled, remove and set on dish. Pour tomato marmalade sauce over fish and garnish with parsley. Voila! You have a colorful, healthy and gourmet looking meal in less than 10 minutes!! (you can replace the mahi-mahi with salmon too and add some grounded pecan nuts to the fish for grilling.... but marmalade really complements the mahi-mahi really well!)

Like other commenters, I like my seafood as simple as possible. A little salt, pepper, ginger, some good quality olive oil and heated through in the oven.

On the pier in Damariscotta, Maine, with paper towels, a hammer (BYO), some kitchen shears (also BYO), and melted butter (BYO butter and pan, but the lobster coop will put it atop the steamer to melt for you). Then watch the lobster shells fly!!!!

I grew up in Vancouver, so the fresher, the better - wild salmon caught that morning and grilled on the beach, or spot prawns off the Granville Island dock in the summers. You should be able to taste the ocean!

My favorite seafood is steamed clams dipped in their own broth and then just melted butter. Simply perfect.

I live in Galveston, so here off of the Gulf of Mexico, we love flounder. Stuffed -- with fresh breadcrumbs, lump crabmeat, and a bit of segmented lemon -- and then broiled is amazing; but fried is, of course, the traditional way. Breaded in cracker meal and egg, a crispy, still steaming fried flounder fillet, with a squeeze of lemon, is heaven! Homemade tartar sauce with fresh dill in it takes it over the top.
And it's so very easy to get fresh flounder if you live near the water! We go 'gigging' all the time -- you don't even need a rod and reel, just a lantern, a stick, and some free time after sundown.

When I was in japan, my three favorites: tiny jacko on rice, sliced shikoku tataki, and when they would just serve you a whole fish and you would have to dig into it with your chopsticks. My boss ordered it the first time I met her, it made for a bit of a barbaric meeting.

For a foodie meetup I recently developed "Mme Pele's Fish" (the theme being a recipe inspired by a diety), which involved a cranberry-based marinade and a cranberry-pineapple sauce to accompany. With a suitably strongly flavoured fish involved it was quite good. The cranberry is the closest I can find on the mainland to the 'ohelo berry associated with Mme Pele in one story.

In the summer, next to a salmon river in Talkeetna, Alaska, with the barbeque ready. Cast a fishing line into the river, catch a 30+ pound salmon. Run up 25 feet to the table next to the barbeque, thank the salmon for giving it's life for me, and filet it then put it on the grill. Sprinkle on a dash of salt, a squirt of lime, and a smidge of fresh ground pepper. Pour a good homebrew pale ale into a tall frosted glass, take a sip, and enjoy the scenery, smells and laughter of friends. Now that's how you eat seafood in my world!

I love simple preparations for most seafood. My dad's barbecued salmon is absolutely to die for. He makes a brown sugar rub for it that is a closely-guarded family secret.

As nearly everyone else has said, simple is divine! (And ALWAYS fresh). But it depends on the seafood in question. I do so love shucked oysters, with a little lemon or without. Pan-seared scallops. Roasted whole fish. Fried fresh anchovies. But given the choice, I'd take steamed crabs, seasoned with Old Bay. There's something about the messy experience, finding every last bit of meat hidden away, that improves upon the experience of its cousin experience: a well-made (broiled) crab cake.

I love how in Chinese restaurants, they steam a whole fish and just pour a little soy sauce over it and sprinkle with scallions and a bit of sesame oil. So simple, fresh and delicious!

Truthfully, I don't care for seafood other than Van de Kamps fish fillets.

My dad taught me his way of preparing lobster and that is cutting down the belly, cracking the claws covering with a letuce leaf and putting it under the broiler. When the letuce turns black the lobster is done. Way better than boiling or steaming them in my oppinion.

I love seafood marinated and grilled, but the way we eat it most often is "Low Country Boil" because we don't have a grill. Shrimp, sausage (or veggie sausage), corn and potatoes in a big pot with a bunch of Old Bay Seasoning. It doesn't get much easier.

lobsters: boiled or steamed in water (use the eggs as butter for my french fries)
crabs: (get on my boat, go to Great South Bay, and catch em!) then throw 'em in my pot for steaming and use the eggs as butter for whatever starch i have lying around.
clams: get on my boat, go to Great South Bay and dig for 'em! then grill 'em with a few cold Anchor Steams and some good pals.
mussels: head to Point Lookout and pick 'em off the jetties, then steam em in white wine, garlic, and whatever herbs.

simple, simple, simple. With a unique salsa on top. No bones please, I'm lazy that way.

As a girl who grew up working in Maine restaurants, I will always have a soft spot for shrimp and lobster rolls. Maine shrimp is the sweetest in the world -- beautifully pink and simply dissolves in your mouth -- mix it with fresh tarragon and a wisp of mayo. The lobster, of course, requires barely a spot of mayo to bind, and should be stuffed into a buttery toasted hot dog bun and a jaw you can unhinge (one lobster per roll please!) Perfect.

it's a toss up between sushi and on the BBQ. Right now at the tail end of winter I will have to go with the BBQ since I so long for the warm days of summer right now. With Lent starting coinciding with Halibut season my mind has been flipping through recipes trying to decide what to make Friday. I think I'm going for the halibut with asparagus from this book :) Thanks!

Tough question because there are soooo many choices but, a perfectly cooked swordfish steak about an inch thick on a hot grill with a fresh salsa with some kind of fruit in it like orange, mango, avocado sounds like heaven to me.

Fish, layer of pesto aioli, potato crusted either shreds on top or thin slices wrapped around, fish is seared and finished in the oven. You have crunchy texture, tasty flavors, and perfectly cooked fish!

On the grill. My father bought a grill and became kind of obsessed with grilling everything for a while. We'd grill salmon and sometimes a thicker flaky white fish that I don't remember. Really simple, just with lemon and pepper or marinated in a little soy, ginger and scallions...it was so delicious, but a mess to clean the grill afterwards. Eventually, he got tired of the grill. Man, do I miss that fish though...

Well lets see, I love all seafood so that's a tough question. About the only seafood I ever prepare are breaded shrimp from the freezer though since it is either too hard to find good seafood around here or I am too cheap to buy it. Everything is fair game though when I go out to eat.

The simpler the better. Sauteed in butter and garlic works for just about every type of seafood. Oysters are the only seafood I like fried.

I went to Eric Ripert's restaurant, "Blue", on Grand Cayman and it was out of this world. For me the simplest preparations of fish are the best - light sear, salt, pepper and acid. And I love steamed mussels or clams with a flavorful broth that can be sopped up with crusty bread. I want this book!!!!

Depends on the seafood - white fish, steamed Chinese style with ginger and scallions; clams with chilli and basil; mussels with garlic and white wine; boiled lobster with plenty of butter; crabs with black pepper or plenty of chilli sauce... and the best, freshest seafood shouldn't need cooking at all.

I prefer mine grilled with lemon juice, salt and pepper.

Lately, my preference has been raw in a maki roll. But traditionally, particularly for things like walleye, nothing is better than a simple cornbread batter and then fried in cast iron.

I do not have one particular favorite way of preparing seafood, but I do prefer the fish to be the the taste focus of the dish, with the other ingredients solely accenting and/or highlighting the fish. When recipes' other ingredients overpower and/or hide the seafood, the resulting dish is often disappointing.

I love fresh seafood but my all time favorite are called "O-Ah-Chien" in Chinese its basically an Oyster omelet. Fresh oysters are mixed with bean sprouts then added to eggs. These are great with ketchup!

I like to eat fish baked (if I'm being healthy) or fried if I'm not. I'm not much of a cook, so I never had the nerve to cook lobster, which I love, at home.

Well here is where Hawaiian shines steamed in a foil pouch basted with best foods mayonaise, chopped scallion, minced ginger,minced garlic and Aloha Shoyu and set in a 400 degree oven for about 15 minute for a filet 20 to 25 for a whole fish. Dis is magical! No Ka Oi

seafood's the best when its simple. steaming any kind of seafood brings out its natural sweetness and flavor. with lobster, have butter on hand. with shrimp create some kind of savory sauce. mussels and clams are amazing with herbs or just plain lemon.

If it's trout, I love to douse it with lemon, coat it with a seasoned flour mixture, and pan fry it in olive oil. But I mostly prepare seafood with olive oil, lemon, Lawrys, and pepper.

It depends on the seafood. My favorite is usually grilled or sauteed, but also love smoked, steamed, fried, baked, etc! I also don't like thick sauces or heavy batters, and prefer fresh herbs and good seasonings.

My favorite way to eat seafood is at Red Lobster where someone else does the work!

I'm not much of a seafood eater, but I do like fresh perch, or haddock, that is battered and fried in butter and served with homemade fries and coleslaw.

I have never cooked fish my self, so I would have to say the favorite is when someone cooks it for me. I would love to learn how to cook seafood.

I am a big fan of boiling shellfish with Old Bay Seasoning. It's old school but it is so good!

Broiled with olive oil, lemon juice and garlic. If I'm feeling like a little spice, I go for the blackened seasoning as well.

I love to eat seafood that's deep fried.

Mahi-Mahi with a macadamia and panko crust - served on a coconut milk reduction with a Thai garlic/chili paste.

For a little bit fresher and healthier taste, halibut steamed in parchment paper along with some lemon slices, rosemary sprig, white wine and asparagus.

That's a difficult question, because I would say it depends on the fish and depends on the mood. Really fresh, flavorful fish would be beautiful as sashimi or perhaps ceviche. Salmon, tuna, and swordfish are excellent girlled, both in terms of flavour and texture. I do like roasted salmon, though. Often I will roast it with just some butter, salt, and pepper, but I also like to roast whole salmon stuffed with fennel and orange. More delicate fish, like sea bass or trout, are better steamed or pan-fried in butter and served with a splash of lemon juice.
