Blogwatch: Whoopie Pies with Salted Caramel Buttercream
I was never a fan of whoopie pies as a kid. There was usually an icky, blobby filling I couldn't stomach that was sandwiched by bland, vaguely chocolate-tasting rounds. Jennifer, of Foodess, bakes a delicious adult version of the whoopie pie of my youth. How can anyone deny something filled with salted-caramel buttercream? Bookended by chocolate that is "thicker than cake, but lighter than cookie," these are indulgent treats for your inner child.

I loved whoopie pies as a kid, but sadly I can't anyone who makes them the correct way anymore. Well, the way my grandmother made them that is. Her's were not bland tasting cakes with iky blobby filling. Hers were perfect. My measure of a good whoopie pie, is how much cake sticks to your fingers. If the cake doesn't stick, it's a lame attempt at a whoopie pie. It has to be moist and finger licking good. The filling not to strong and the cake extremely tasty.
This sounds good, but the ones in the picture look as if a brownie recipe was used to make the cakes. Either way, it has to be good.
