Marinating Beef in Beer or Wine Slashes Carcinogens

Unfortunately, it also cuts down on the amount of beer you can drink with your steak by about 100%. Unless you have more than one beer.

They've got it all backwards - after you compounded a few beers, then its time to cook the steak.

As if we needed another reason to pair liquor with beef?

I marinate my streak with beer quite often. Nornally I let the steaks soak between 20 and 30 minutes, no longer. Dump out the beer, then use the rub of my choice for that evening, and let it sit while I get the grill ready. I use a charcoal smoker grill, and cook other sides along with the steak. That means the steak sits around half an hour to fourtyfive minutes before being placed over the coals. (sometimes I may sear the steak in a cast iron pan before taking it out to the grill. It just depends on what I am useing as my rub. If you do this, the grill doesn't have to be super hot, and the steak need not stay on long, or you'll end up witih it being overcooked)

Gotta have that charcoal flavor though. A gas grill is just not true grillin' for me.

Marinating steak in wine also makes the exterior of the meat mushy and stringy. Don't do it!

What kind of beer/wine would you recommend? Also, what other spices would you add to the marinade?
