Cook the Book: 'The Bon Appétit Fast Easy Fresh Cookbook'

With a little creativity, the book urges, you can eat well and soon—without recourse to convenience foods.

How? Keep the ingredients list short but high-impact, and add depth to relatively basic dishes with the spices and aromatics of East Asian, North African, and Latin cuisines. The Bon Appétit Fast Easy Fresh Cookbook offers 1,100 recipes along these lines, complete with a shopping guide and a wealth of tips.

Any steamed seafood (like fresh fish or crabs or lobster) with ginger, scallion, and soy sauce. This usually takes less than 5 mins. Plus a bowl of rice, a simple healthy delicious dinner!

Leftovers would be the fastest, but from-scratch would be pasta served with fresh tomatoes, basil, and fresh mozzarella, all just warmed, but not cooked.

Depending on what else is on hand and what I feel like doing, the tomatoes might start with sweated onions and garlic, or I might add olives, capers, or more herbs and spices at the end. No fresh mozz? I might grate in another cheese or add some leftover chicken. Or other veg or beans or....

if we're including not from scratch (quicker!) i'd say chicken and broccoli tofu curry (thanks to trader joe's red thai curry sauce) with garlic naan and rice. if they stopped stocking it at tj's i would have a heart attack!

I make a big batch of pesto occasionally, then freeze in an ice cube tray.

An omlette - I fancy/schmancy it up with herbs and whatever cheese I have in the refrigerator. I also prepare some extra mushrooms when I'm using them in a recipe so they'll be on hand for a quick dinner.

Chickpeas w/whatever's around...sometimes even in the tomato sauce.
Things in cans combined with things that are fresh.

A quick Texas-style chili - made into Frito pie

Roasted chicken, steamed rice, blackeyed peas.

Sauteed brocolli rabe in olive oil, garlic, hot pepper flakes, with a dash of white wine, chicken stock, over penne or farfalle pasta.

I live in Florida, so can easily throw something -- fish, marinated chicken pieces, burgers-- on the grill most of the time.

Lately, it's been grilled tuna steaks with lemon-dijon sauce and capers, usually with couscous or something else suitably quick. Add some steamed vegetables, and the whole meal can be put together in about 10 minutes.

In winter there's usually either a pot of leftover soup or chili, which goes great with a sandwich.

Pasta with the pesto I have frozen from the height of summer.

BLTs with peppered bacon, heirloom tomatoes, leaf lettuce from the garden, sourdough toast, and dijon and Hellmann's mayo mixed. The George Foreman cooks the bacon in the time it takes to pick and wash the lettuce, slice the tomatoes and toast the bread!

Nuked russet and leftovers as topping.

I've started making pizza dough on the weekends and freezings a few portions. In the morning I move it to the fridge and when I get home I'm within 20 minutes of fresh homemade pizza.

In the summer I love to saute zucchini and squash with onion and garlic... that in and of itself is the best meal ever. Takes 10 minutes tops. To make a heartier meal for friends and guests I do a zucchini and squash pizza using pre-made pizza dough from Trader Joe's. Yum.

A poached egg over just about anything - salad, chickpeas, bread and tomatoes...

eggs in purgatory! tomato sauce sauteed with olive oil and red pepper flakes til it bubbles...crack in two eggs and cook until the whites are set. serve with toasted bread or pita rubbed with a garlic clove...a warm, hearty, five minute, one pan supper!

Homemade pizza. With dough made the night before, it's super fast.

whole grain pasta + any quick-roasting veggie pureed with olive oil, garlic and onion = mystified friends as they wonder how on earth I worked all day AND made a great dinner.

Ploughmans lunch type meals also work great for a quick dinner, especially in summer: slabs of good cheese, sliced apples or pears, a thick slice of rustic artisan bread... expand it a little with nuts, pickles, preserves or maybe a chunk of salame....

Quesadillas with cheese and beans, takes 5 minutes at most

Oohhh...me and Brewer are on the same page. But I make my salmon cakes with a yogurt chili sauce. And I AM making it for dinner tonight! :-)

Spaghetti carbonara... The pancetta sautees while the water boils, while the pasta cooks, seperate an egg per person, throw the cooked pasta in the pan with the pancetta and the the egg whites and some parmigano, stir it up, portion it out, and drop an egg yolk onto the top of each plate so you can mix it in yourself. Tasty, elegant, and dead simple.

Skillet chicken and vegetables from 2002 Bon Apetit, made quicker by using frozen onions and boneless thighs. Fruit on the side is all that's needed.

Eggs and toast.

Another vote for quesadillas. Usually black beans and whatever cheese is available. Sometimes chicken, shrimp or other leftover meats. Top w/ sour cream and salsa and you're good to go. Sort of the SoCal version of Jambalaya.

Sear boneless chicken thigh. Saute with onions, garlic, thin sweet potato slices and Chinese five-spice seasoning, S&P. An orange for dessert. Yum.

Eggs with whatever else is in the house. Salsa and tortillas, a little goat cheese and some good toast, or if all else fails, over a dish of polenta.

quick pastas, like zitti with a garlic and parmesean olive oil sauce, roasted asparagas, grilled chicken or mushrooms, and red pepper flakes.

My go-to of late is Heidi Swanson's Ten Minute Couscous Soup. It's quick and infinitely variable to suit what I've got for leftovers or in the pantry and freezer. You can even substitute quinoa for the couscous.

Pasta, for sure- I always keep whole wheat pasta, whole canned tomatoes and onions on hand and throw in whatever leftover meat and veggies I have in the fridge- it's ridiculously simple but I'm somewhat addicted to it.

Spaghetti and garlic bread. Totally simple, totally satisfying.

hot spaghetti tossed with canned tuna, fresh lemon zest, capers, parsley and freshly grated parmesan cheese. Always a winner!

frozen Chinese dumplings with Chinese noodles and spinach (tossed in the pot of boiling water with the dumplings and the noodles).

Chicken parmesan with pasta or soup...a hearty corn and clam chowder or what I like to call pot sticker soup--soup made from whatever is lurking in the veggie crisper, broth and frozen potstickers.

Something egg-based: either an omelette filled with fresh vegetables and a salad on the side, or over-easy egg on ailo e olio (with some greens blanched in the pasta water to add to the final dish).

Sandwiches... just grab a bunch of different stuff from the fridge, add cheese and put on bread. easy, as simple as you want it to be and usually pretty tasty.

A couple of choices:
1) Pasta with Marinara Sauce plus whatever I can find to toss in.
2) Hamburger mixed with sour cream and garlic powder sauteed along with rice and salad

Beans and rice (assuming the beans are coming from a can, and the rice has been pre-cooked!)

When in doubt, breakfast for dinner - either eggs on toast (with some Heinz beans, good ole English breakfast style) or maybe french toast. Eggs are always good for dinner in whatever form.

Fritatta or pasta

I fix quesadillas quite often.........easy to vary the ingredients...onions, peppers and whatever veggies I have on hand.......I like to add shrimp or crabmeat and cheese.......good without the seafood as well.

I make take out.

Penne with chicken or sausage (depending on what's in the freezer) and any veggies I have on hand then all coated in parmesan cheese!

Pasta with vegetables and some sort of pre-cooked sausage, followed by a bag of pre-rinsed salad. Gotta get our veggies :)

Pasta with whatever is leftover in the fridge. It can get interesting...

Sauteed shrimp over soba noodles.

Take 2 chicken cutlets, sprinkle each side with salt and pepper, and cook for 4 minutes. Flip the chicken, and place a slice of cheese (any kind) on top. Cook for 4 minutes. Serve on a Kaiser roll, with your favorite veggie as a side.

Green salad with grilled chicken strips, oranges, edamame, and ginger dressing!

Ramen with an egg poached in the soup.

pan-fried thin boneless pork cutlets with rosemary, garlic & pepper, sauteed spinach and whole wheat couscous cooked in chicken stock.

I make pasta with cannelini beans. All I do is open a small can of tomato sauce, and after I saute garlic in olive oil, I add the sauce to the pan. Cook a pound of bow ties, drain cannelini beans and add to the sauce, then mix the cooked drained pasta with the sauce mixture. Sprinkle with cheese. Yummy.

If there's leftover chicken, chicken quesadillas take all of 10 minutes or so to make with lots of cheese, tomatoes, sea salt, pepper, and sour cream.

Vermicelli noodles (3 mins) in a bagna cauda-like sauce of olive oil, anchovies, garlic and some sort of citrus.

"Skillet Lasagna"...heat up some pasta sauce, stir in some cottage cheese, mix with cooked pasta, then top with mozzarella til it melts. Easy peasy!

My favorite weeknight supper would have to be a fritatta...easy, and you can throw in whatever leftovers happen to be in the fridge!

Super easy one-dish meal (from Mar 18, 2003 The Oregonian newspaper):

Chicken Breasts Oven-Roasted with Red Bell Peppers & Potatoes

2 large red bell peppers, quartered, seeded, ribs removed
4 medium Yukon Gold potatoes, cut into 1-inch wedges
4 cloves garlic, lightly bruised with side of a knife
2 T extra-virgin olive oil
Kosher salt & freshly ground black pepper
4 boneless, skinless chicken breasts
1 t dried rosemary, oregano, or thyme

Place peppers, potatoes, and garlic in large roasting pan. Drizzle with oil, sprinkle with salt and pepper to taste and toss to coat. Roast in 400-degree oven until vegetables begin to brown on edges, turning with spatula once or twice, about 25 minutes.

Remove pan from oven. Push vegetables to one side of pan; sprinkle chicken with salt and pepper and add to the pan. Spoon some of the vegetables over the chicken. Sprinkle with dried herb of choice.

Continue to roast, turning chicken once or twice, until cooked through and juices run clear, and the peppers and potatoes are browned and tender, about 20 minutes more.

spaghetti and white clam sauce. since I always have in the house a can of clams, spaghetti, white wine and butter, this one takes me about 10 minutes and is delish.

Grilled Romaine with roasted peppers, capers, and creamy chipotle dressing...mmmm...smoky good! Don't forget to shave some Manchego on top

Grape tomatoes roasted with olive oil, salt and pepper, tossed with pasta. Top with some good Parmesan, and it's a fast, satisfying meal.

When in a hurry eggs work for me-add in some veggies, toast and bacon or taylor ham and you have a quick complete meal.

My fave quick weeknight supper is simply a wine and cheese night with my husband--bottle of red, variety of cheeses, spreads, fruits and nuts!

homemade lasagne bolognese -- because i always keep some in the freezer for nights i am too busy to prep a meal.

Stir fry chicken thighs with hot pepper over rice. Too many variations to talk about but this is one of those whatever is in the fridge goes into the pan preparations. And if I don't have a fresh hot pepper I always have pepper flakes or a garlic-pepper paste. If the stir fry fails there is always the rice.

Salmon cooked in my grill pan with a hoisin/orange juice glaze, sauteed spinach and rice. My rice cooker was the smartest purchase I made for quick meals especially since it can be set ahead of time.

According to my girlfried, "Puttanesca! It's *so* good!" I'd have to concur.

lately, baked quinoa with spinach and cheese from a recent NYT article.

Stir fried bok choy (or other green) with fresh shiitake mushrooms (or king oyster, reg. oyster, or maitake) with a quick shao-sing/chicken stock/salt/cornstarch sauce. Served with rice from the rice cooker. Put in the rice, go for a run, come back and whip up dinner. I often heat up a few (frozen) potstickers alongside. Couldn't be easier, and variations abound. We eat this just about every week, with no boredom in sight. It helps to have an Asian market on the way home...

I like to make cheese or ham omelets to serve with buttered toast and a side of favorite fruit (canned is good).

Asian stir fry and rice

When I've got bread (which is actually pretty rare) a nice buttery grilled cheese. Barring that, a collection of whatever random items are in my fridge, sauted or baked, depending on what I find.

In the summer, I'd go with a salad of tomatoes and cucumbers with bread and cheese.

Chicken thighs marinated in oil, vingegar and herbs with shallots and garlic.

Lemon pasta with lots of fresh vegetables and garlic with fresh parm.

Eggs over/in X. Most often the bottom of the salsa jar, or some kind of stewed beans, or leftover greens, or roasted vegetables. Usually with bread, but not always.

Stir fried vegetables with whatever meat is handy. We keep pre-marinated chicken and beef cut to stirfry size in the freezer just for nights when we need something quick.

Penne tossed with a quick Gorgonzola and heavy cream sauce, garnished with parsley, lemon zest, and chopped walnuts.

My husband makes a wonderful Chicken Cordon Bleu-we had it tonight. It doesn't take long to prepare and it tastes wonderful.

We like to do a cube steak marinated in olive oil, vinegar and oregano with sweet potatoes and a salad. It all takes less than 5 minutes to make and is very satisfying.

captain crunch chicken (chicken breast strips breaded w/panko bread crumbs and crushed captain crunch and baked in the oven. served with spicy ketchup. spicy + sweet = delicious!)

Fettucini, shrimp & alfredo sauce. Fast, easy & good.

I may have to turn in my serious eats card for this, but my childhood favorite is sausage supper- a hillshire farms kielbasa sliced into crescents, cooked low to reease the fat, and then potatoes and white/brown onions sauteed in the fat. Add broccoli and steam at the top of the pan untiol tender This makes a lovely one dish wonder on a weeknight..

Fish (flounder, cod, tilapia) baked with mayo/parmesan/breadcrumb/herb topping and roasted asparagus.

Chili. It's easy to put together and the leftovers are even better the next day.

I toss pasta with olive oil, garlic, tuna and frozen peas. I make extra to warm for an even faster second meal.

A quick pizza, with a balsamic redux, feta, wilted spinach, and whatever veggies I may have on hand. Yummy!

Cook 2 tablespoons minced garlic in 2 tablespoons olive oil. Stir in 2 tablespoons tomato paste and cook until ruddier. Stir in 2 tablespoons white wine. Salt and pepper, then toss with 1/2 pound cooked thin spaghetti, and 2 tablespoons pasta water if it needs it.

I recently found a recipe with cooked chicken, tortillas, chicken broth and various spices. It makes a very tasty and EASY Chicken and Dumpling Soup.

Any small pasta, cooked, rinsed and put back into the pan with added cottage cheese, butter and salt, pepper and fresh mint......delish.

My son is super picky so if hes around for dinner I cut up chicken breast and marinade it with soy and chili oil and garlic. then toss it in pan searing flour and put it in my wok with a touch of oil. it gets crispy on the outside. Some uick couscous goes well.

Not my favorite, per se, but let's be honest: when I'm starving and too tired to cook, it's frozen potstickers all the way.

Lately it's been kale, sauteed with garlic and a drizzle of olive oil. Otherwise it's scrambled eggs and toast.

We like to drain & rinse a can of white beans, add 1 can seasoned, diced tomatoes, & 12-16 ounces cooked, shelled shrimp. We heat until boiling and then toss in about 6 ounces fresh spinach until wilted. Quick and tasty.

Tonight it will be pasta tossed with a garlicky sundried tomatoes, half and half, parmigiano and bacon, served with garlic bread.

Joodles (kosher egg noodles, haha get it?!) in a cream sauce with fresh steamed veggies!

Stuffed baked potatoes. I bake a couple of nice big russets in the microwave, then top with butter and sour cream. Then I add grated cheese, bacon, or ham - whatever is handy or left over from a previous meal.

Corn tortilla quesadillas with roasted red bell pepper, scallions, scrambled eggs or whatever leftover in the fridge sounds right to my mouth. Add green salad if you can wait for it.

Fish, couscous, and steamed vegetables. If I don't want a lot of dishes I like making a quick salad with a poached egg too. Yum.

We like breakfast for dinner: scrambled eggs, toast, and fruit or sometimes waffles (savory or sweet).

Chicken Fajitas. Stir fry bought chicken strips with onions and bell peppers. Serve in flour tortillas with salsa, and a bag of Mexican blend grated cheese on the side. Takes about ten minutes and everyone loves it. I sprinkle a little chili and cumin powder in the stir-fry.

Grilled balsamic/olive oil marinated boned and skinned chicken breasts, snap peas cooked in butter and herbs, roasted baby potatoes.

Winter: soup! If you don't have a crockpot of beans going (shame!), use chicken broth, and add orzo and greens, top with shaved Parmesan--takes about 20 minutes.

Spring: "sort of" sandwiches--I like pita bread filled with sliced radishes and cucumber, parsley and tzatziki, or broiled open-faced ww bread with tomato slices and cheese (top with crumbled oregano and call it "almost pizza").

Summer: fruit, cubed and doused with lime juice, maybe a bit of hot sauce and cilantro; ceviche (finely diced takes only 30 minutes to "cook") and tortilla chips; Romaine leaves with a sour cream-mayo-herb dip or mustard vinaigrette; potato salad (OK, this has to be made the night before, but I suggest one always make plenty as leftovers taste better).

Fall: crusty sourdough bread with cheese, seasonal fruit, roasted veggies (sliced thinly, and cooked in a high oven, they take about 30-45 minutes).

Like choosing a favorite child, this is tough! Obviously, having things like twice-baked potatoes, chili, etc. in the freezer would help. If one has fresh fruit and veggies, or bread and cheese, or even nut butter and jam, the prep-to-table time is about 10 minutes max. Likewise, it takes no time to flame-heat a tortilla, add shredded cheese and peppers or whatver you like.

Turkey tamales from our freezer! We made them from leftover Thanksgiving. Just pop a couple into the microwave and open up a can of enchilada sauce. YUM! (Yeah, yeah, we could MAKE enchilada sauce, but this is our QUICKIE dinner!)

Picadillo
(A cuban dish using ground beef, spices, diced onions and garlic, green peppers, olive oil, green olives, beef bouillon cube, little bit of cumin,oegano, small can of tomato sauce, a couple bay leaves, and a splash of either cooking wine or white wine. Sometimes it can have peas and/or small pieces of cooked potato as well. You then serve it over rice with a fried egg on top. It's delicious. From saying, "Lets make picadillo!", to putting the egg on top, it takes about half an hour. If you want to make traditional picadillo, you also add thinly sliced plantain chips to the side.)

I like to make fish over rice.

I marinate a whole chicken overnight in teriyaki and garlic, then the next night it's ready for roasting - scrumptious! I serve it with steamed brussel sprouts doused with lemon and a side of basmati rice.

I love to make fajitas as a quick fix dinner. I often make a large pot of rice at the beginning of the week to use for any meals throughout the week. So all I need to do to make the fajitas is to grill the meat and veggies, warm up the rice and tortillas, and I'm set!

Pasta tosses are always my favorite. Either pasta w/a little olive oil and broccoli or if we're looking for a protein some diced italian sausages.

I sometimes use the small individual loaves, then quarter the recipe.

Meatloaf in a Loaf
1 (8-oz) can tomato sauce
1-lb extra lean ground sirloin
1 small onion, diced ½ tsp crushed garlic
Salt & pepper to taste
1 round French bread loaf
Slice top off bread. Scoop out inner bread leaving approximately ½ inch in bottom of loaf. Reserve 2 cups of soft bread crumbs and mix with the tomato sauce. Mix ground meat, onion, garlic, salt and pepper well. Add bread crumb mixture and mix well. Stuff back in French bread loaf and add loaf top. Bake at 350 for 45-60 min.

In the winter, it's usually a big plate of homemade spaghetti with sauce, served with garlic bread and a salad and in the summer, it's a big plate of chef salad, with fresh vegetables and hard cooked eggs and strips of ham or chicken. Thanks for having the contest!

Omelets with whatever I have in the refrigerator, usually some combination of mushrooms, spinach, tomatoes, pesto, mozzerella. Served with a side of turkey bacon if I'm feeling ambitious!

Steak Tartare: 1 pound of cubed sirloin buzzed in the food processor, blended with minced onion, worcestershire, soy, and Tabasco sauces, 4 super-fresh egg yolks, minced parsley, a little olive oil, a good squeeze of lemon, and salt and pepper. Spread on toasted and buttered pumpernickel, and you've got a fast and fantastic weeknight dish.

Paninis are a quick favorite at my house. We can use whatever we have on hand and it can be individualized for people with different tastes. Thanks!

quiche or fritatta -- fast and flexible

I make a quick beef stir fry with steamed rice, add a few pot stickers and hot tea and everyone is satisfied.

Spaghetti tossed w/ butter and fresh Parmiggiano Reggiano I'll occasionally take an extra few minutes and add sauteed mushrooms.

Grilled chicken breast ~seasoned with rosemary & Mrs.Dash gralic & herb & a little spirnkle of Zartarins Cajun Seasoning.
Avocados mix with just a dab of mayo. Sweet pototes with brown sugar & a little pancake syrup.
A lite salad with precooked bacon & slice roast beef lunchmeat, sprinkled with shredded chesse & a few cherry tomatos w/ dressing.
A Dinner roll.

chicken salsa rice - chunked up chicken & onions seasoned with whatever & sauteed up, mixed with some salsa & some rice from the rice cooker. topped with cheese, because cheese makes everything better.

Pasta primavera

Probably grilled chicken with bbq sauce, steamed broccoli and salad.

Home-made macaroni and cheese with a tossed green salad.
