Looking at these pictures it strikes me that there really might be too much of a good thing and that this is where the whole "bacon with and on everything" mania may have jumped the shark. Frying cheese for sale as an appetizer was over the top but wrapping cheese with bacon had to be developed by a cardiologist whose practice wasn't bringing in enough money. That is sick and it's got to be the most unhealthy thing every displayed here. Please tell us that this is a joke that first appeared in The Onion.

@steveTV, funny you should mention this dish being conceived by a cardiologist, that's exactly how I responded when a friend posted this dish on his Facebook page today. Grease city!

All I can say is my new way of eating must be working, because this looks disgusting.

Haha...I saw this last week. It was kind of gross, so I didn't submit it as a suggested post. Lo and behold, here it is anyway.

Cheese and bacon taste great...but this is a bit much.

Gross. Gross. GROSS. I absolutely LOVE bacon, (its the only reason I won't become a vegetarian), but this looks like it really is just digustingly greasy.

Okay, it may be a bit much, but think about this (stay with me here):
Take that woven bacon mat, place it into a Pyrex casserole dish, and bake it off until crisp. Drain it, and now you have a tremendous centerpiece. Fill it with cheesy mashed potatoes, garnish with some chopped scallions or parsley, and surround it on a platter with tomatoes.

Who amongst you could not see yourself cutting a wedge of this to the delight of your guests? Okay, maybe the vegetarians, but I challenge all others to resist!

I like the weaving concept, but all that bacon weirds me out. Bacon looks SO gross when it's uncooked--all that fat!

I think it;s because I'm a feen for bacon, but I think this dish looks absolutely beautiful. It screams "Eat Me", but at the same time, it also screams "Heart Attack." Yikes!

i actually made this about a week ago, on my roommate's suggestion/demand (he can't cook even the simplest of weaved-bacon treats). it was, for all you haters, delicious--even if it's not possible to eat more than one or two pieces.

it really does make a pretty novel hors d'oeuvre, especially if you drain the bacon adequately (!), so give it a try. and quit being so damn uptight!

That is just clogging my arteries just looking at it. Gross.

oh, and i'd also like to remind people that one instance of excess is not fatal or artery-clogging. if you're to the point where two bites of bacon and cheese will cause cardiac arrest, that is indeed very gross.

I'd be tempted to roll up a scrambled egg and cheese mixture to fill it out a bit more.

I'm not uptight. Bacon and cheese are great. I just can't imagine eating much of it. Which you clearly agree with.

It's a novel idea. Don't think I'll be preparing it myself, but what if you cut super thin slices and put it on some toast? No more than one piece of bacon per serving. Would it be ok then?

Not so much with the cheese filled roll, but I think the bacon weaving is pretty clever.

Made this a few weeks ago, but with turkey bacon. Deeelicious, but it cooled off a bit too quickly, at which point it was congealed cheese and cold bacon. Still delicious, so it was all eaten.

Breakfast idea. Order of the layers:

Weaved bacon
Shingled pork roll
Cheese
scrambled eggs
sausage links

roll then slice...Yummy!

I guess I'm the only one here who thinks this is amazing? I am so making this with eggs in it this weekend. Ooo or a pickle!! Or eggs AND a pickle! And cheese.

OHHH I get it now. Bacon is delicious AND bad for you. Bacon + some other oily/sugary/unhealthy food product = FUN-NEE!! It's done. Move on.

Skip the cheese and wrap the bacon blanket around a beef tenderloin. That would get my husband drooling.

Don't roll it - use it as a pretty topping for baked beans, chili, nacho dip, a gaggle of baked potatoes.

Or stuff it with butter & Oreos, batter & deep fry and send it to Paula Deen.

@dhorst - I like it! And what pretty slices after it's all cooked. You could then serve with cheese fondue, if you had to put the cheese back in...mmm...fondue... =)

How about stuffing the woven bacon with sausage, egg (scrambled?), tomatoes and mushrooms? Serve with toast and coffee and you have the "full English"!

Woven bacon is pretty ingenious, but just looking at that photo makes my heart hurt.

Yeah. I'd eat this while watching a movie. I wouldn't even slice it, just start at one end like a giant meat Twinkie.

because that looks like an incredibly woven and thought out bacon dish. it even looks like the bacon is cooked to the perfect crunch.

This just sounds crazy, but if it were served to several people, it wouldn't be so bad. It's not like you have to eat the entire thing by yourself. I think that is what some of you are forgetting here.

I recently was served deep-fried bacon as part of a tasting menu... That was still the most rediculous bacon appetizer I have seen, but this comes close.

BUT - I love the idea of weaving the bacon... I'm trying to think of how to incorporate that into a different treat for my bacon-loving husband.

See, those of you who are not terrified are generally looking at *adding something else to this* that would break up the bacon and shredded cheese. Because as is, kinda ew. With mashed potatoes, OMGYUM!

almost ALL of you are WAY TOO uptight, and need to relax. Even if for some unseen reason you do decide to make the dish, does that really mean that you are gonna eat the whole thing in one sitting? And if you do make it, there are no laws stating you have to make it according to the instructions. You can use low-fat bacon, turkey bacon, and non fat cheese... bake the bacon so that its not so greasy. Lighten up and relax, its only a dish.

I think it would make pretty cool sandwiches. Add some lettuce and tomato. Serve it on a whole wheat bun. Not so bad.

I'd add a couple of Italian sausages in the middle of the cheese roll for an artistic note and kick it up to the next level.

i'd try a bite, after that i'd have to be taken to the emergency room!

I think the bacon weave is kind of pretty. I'd like to use it on it's own, to "plate" something, maybe an adapted Cobb salad.

On the Smoking Meat Forum woven bacon usually wraps around ground meat that has been seasoned and stuffed with wonderful goodies (cheese, mushrooms, etc.) with various themes - and then smoked to perfect crispy doneness. They are referred to as Fatties, and OMG I need to make one soon it has been too long.

I don't know if I could fight my gag reflex long enough to actually taste this. I had the same problem with deep-fried hot dogs. There's just something so very wrong about that as well. I would want to try it though--if only a taste. I grew up LOVING peanut butter and bacon sandwiches, I don't eat them anymore for health reasons. Maybe it's just TOO MUCH bacon at one times to get our heads around?

Needs more salt.

I think if you scaled it back a bit, the woven bacon would make a great BLT... As is it looks like a bit much, though not much worse than cheese fries or Outback's Alice Springs Chicken.

Those who criticize this bacon roll have not tried it. It is delicious! I made one ... and I intend to make a larger one.

I think this look delicious!! I love bacon and cheese! Obviously you wont eat the whole roll by yourself. I think two 'sushi sized' rolls wil be great for a breakfast extra :)
