Comic Strip is Skeptical About Sous-Vide

20081221achewood.gif

The bad news, Thomas Keller, is that Achewood's description of prime rib cooked sous-vide borders on libel: "the anaerobic bacteria in that bag must by now have a soccer team". In this zany comic, the customer (a, uh, talking dog) declines the dish, citing the risk of motor neurone disease.

The good news is that, to be appearing in web comics at all, sous-vide cooking must be gaining recognition. As for fandom, just give it time. [via The Gurgling Cod]

I do not see what the big hype is about sous-vide. I like my food to have crispy edges....browned bits....that's where all the flavor explodes. Without that, you have boiled meat. No thanks.

Achewood is the best web-comic ever. I've been reading it for seven years. Check it out; Chris Onstad is one of the funniset guys out there and he's a "foodie".

Achewood is the best comic ever created ever. I even have an Achewood tattoo. and Juliebugsmama, sous-vide is just a part of the process. You don't usually serve sous-vide food straight out of the bag, most of the time you *would* sear it afterwards. It is about precision temperature control, not squishy food. I sous-vide my steaks all the time. A nice tri-tip in a bag with marinade at 132 for a half hour, dried off and seared quickly in cast-iron will change your mind completely about sous-vide. The perfect medium-rare top to bottom.

Not only is Chris Onstad the funniest guy ever, he's also created an Achewood cookbook: http://achewood.com/shop/product.php?prod_id=43

totally NOT a dog! cornelius is a stuffed bear.

Someone sent me an e-mail on how to cook "omelettes" this way--by scrambling your eggs and putting them, and your vegetables or whatever, in a ziploc bag and then cooking it in boiling water. Um, hello--that is not an omelette. I'm not sure what exactly to call it. Ideas, anyone? Perky?

yessssss, so glad to see some achewood on here :) best comic ever. its very frequently food related.

@chrisfurniss - An Achewood tattoo? Tell us more.

@aargh - A cookbook! Awesome, did not know this. Is it a "serious", i.e. functional cookbook, or more of a humor thing?

@monicabg - Sorry! Totally my bad. Now it makes perfect sense :)

@buffy - If it's boiling water, it's not technically sous-vide, which typically uses much lower temperatures for long periods of time.

I love Achewood! I'm glad to see it here.

@michele- I have the cookbook and it's funny and functional!
