As a part of our Celebrity Chefs Holiday series, some of America's best-known chefs and food television personalities share their favorite holiday dishes, provide recipes for them, and even tell us who will be at their holiday tables. Today we talk to Mario Batali.
What's your favorite part of the Thanksgiving meal and why? I love the stuffing and the gravy, they represent the most personal components of the meal. I don't think I'm alone in this regard. Doesn't everyone love stuffing and gravy?
What are you doing for Thanksgiving this year? Who's going to be there? What is the menu going to be? We're going to my sister-in-law's house with my wife Susi's family. I do not know the menu. It's really fun to go to somebody else's house and just enjoy the holiday.
Could you share a favorite Thanksgiving recipe with the Serious Eats community? My Goat Cheese Truffle recipe. It's good any time of the year, but somehow it just feels right to serve it at Thanksgiving.
What's your favorite part of the Christmas meal and why? The smell of the tree and the feeling in the house of pure fun lead me to the best cooking. I love the Christmas ham I bake in my wood burning oven in Michigan and the biscuits and truffle honey I serve them with.
What are you doing for Christmas day and/or the holidays this year? Who's going to be there? What is the menu going to be? We will be in Michigan for Christmas and Sun Valley for New Year's. For Christmas the guests will be friends from our little town in Michigan. We will be cooking New Orleans-style dishes from Emeril's books. For New Year's we'll just be hanging out with Susi's friends from college and their family. My sons love snow and skiing and everything that goes along with them.
Could you share your favorite Christmas recipe with the Serious Eats community? Here's three recipes that I invariably make during the holidays. Asking me to choose my favorite between them is impossible. You can't go wrong with any of them, in fact. Happy Holidays, everyone. --Mario
