Cook the Book: 'Martha Stewart's Cooking School'

20081117-marthastewartscookingschool.jpgWords by Michele Humes | Martha Stewart doesn't do things in half measures. Whether it's cookies or canapés, Stewart aims to be comprehensive and definitive. (She succeeds—I consider her Hors d'Oeuvres Handbook to be the font of all finger-food knowledge.)

Her latest enterprise, Martha Stewart's Cooking School, is downright encyclopedic. Only Martha could pull off a textbook that looks like a glossy magazine and reads like a conversation. And what a conversation. In this book, you'll learn how to sharpen a knife, make fresh pasta, identify cuts of meat, and master the soufflé. The book stays current by supplementing the traditional French curriculum with American and international flavors: There are detailed guides to Indian and Southeast Asian spices, dashi gets equal billing with classic French stocks, and the Great American Hamburger has its very own section.

Each day this week, we'll be posting a classic recipe that will stand you in good stead this Thanksgiving. Perfect Turkey Gravy, Garlic Rosemary Mashed Potatoes, and One-Bowl Chocolate Cupcakes aren't going to blow you away with innovative flavor combinations—the wow factor is in the flawless technique.

Win 'Martha Stewart's Cooking School'

Thanks to the good folks at Clarkson Potter, we are giving away five (5) copies of Martha Stewart's Cooking School. In the comments below, just tell us your favorite Martha Stewart recipe of all time—we all have one!

Contest will end and comments will close at 3 p.m. ET, Monday, November 24, 2008. One entry per community member. The standard Serious Eats contest rules apply.

Pumpkin cookies with brown butter icing...I saw this recipe a few years ago and make them every Halloween. Always a hit at the office.

Okay, let me admit that I've never been a Martha fan, personality-wise. But I'm willing to change.

On the other hand, there was a cookie recipe that was mentioned somewhere, and I looked it up and it was on Martha's website. And it was, indeed good. No clue at the moment what it was, but I'm sure it will surface again as I start making more cookies for the holidays and after.

Mmmmmmm....cookies.......

I think it's more of a trick than a recipe, but soaking 4 layers of cheesecloth in butter and white wine and covering the turkey with it before roasting. My husband and I did it last year for our first thanksgiving, and it came out perfectly brown and wonderful! :)

Her mac and cheese is the only recipe for mac and cheese that I like.

Duck matzoh ball soup

Can I have two? Her meatloaf and her Chewy Chocolate Gingerbread cookies. I haven't tried her mac and cheese yet, but judging by the number enthusiastic votes for it, I will make an effort to try it very soon!

Love her recipe for Boston Cream Pie

She had a segment a few years back where she made a New York Crumb cake and it is delicious.

i just loved her 'recipe for disaster' !!

Her spaghetti. She made it super garlicky and I love it!!

her snickerdoodles are absolutely delish!

Pear and dried cherry pie

Another vote for mac and cheese.

It would have to be something from Everyday Food -- Cheesy Hash Brown Bake. My whole family loves it.

This would be my first Martha cookbook, although I do watch her show. A couple of weeks ago she did a nice demo on how the cut up a chicken and then created a wonderful rustic roast chicken dish.

She has a recipe for rosemary pine nut cookies I have made the last few years, they are DELICOUS

One more for Mac and Cheese!

Everyday Food's Easy Eggs Florentine with Goat Cheese is my latest go-to recipe.

Martha's mac & cheese rocks!

Every cookie recipe I've ever tried, especially the cinnamon spritz!

Add me to the mac & cheese fan club!

I don't think I've been disappointed by any of her recipes that I've tried. I love her mac & cheese, I bought a potato ricer because of her mashed potato episode, and, oh god, I can't believe I'm going to admit this, but I learned a lot about making fried chicken at home from her Mahogany Chicken episode.

mac and cheese! yum :)

I love the mac & cheese as well, mmm and lemon pound cake. I will tell you one to avoid, Edamame soup... yikes, not good. But its from Everyday Food so its probably not 'Martha tested'.

I love her chocolate pecan pie!

Definitely the mac 'n' cheese.

While the mac and cheese recipe is definitely a keeper- I really love her cookies- particularly the Christmas biscotti recipes, Madellines, even her Chocolate Chip Cookie recipe for Alexis

Meat Loaf 101 from her magazine many years ago. It's the only meat loaf I'll bother to eat.

In one of her Christmas cookie magazine editions, there is an amazing recipe for Nutella thumbprint cookies...I make them every year and everyone always loves them!

linguini with clam sauce

classic ny cheescake

chocolate cupcakes!

For the baker in me, I love her snickerdoodles... for my husband, the comfort food fanatic, it's definitely her mac 'n cheese.

soda biscuits!

My favourite crazy thing that she did was on her show at least ten years ago - I would never make it but it cemented by love of Martha. She took tiny flowers and with a paintbrush coated them in egg white, and then dusted them with super fine sugar, for decoration. It was such an insane thing to do that I couldn't help but appreciate her.

I do use her snickerdoodle recipe, among others. Her comfort cooking book from the late 90s is still one I cook from. Crazy as she may be (and that's why I love her), she sure does know food!

In my house we use her sugar cookie recipe every christmaPr

Any of her dips are great (I do especially like the spicy red pepper and walnut), but the "most Martha" part is the hollowing out of the purple cabbage and multi-colored peppers for display!

Her chocolate cake (with peanut butter icing). I don't care for the icing, but it's the best darn chocolate cake I've ever had.

I have yet to find a better shortbread recipe....but I haven't ever tried the famous mac & cheese everyone seems to be in on. This is the first time since elementary school that I've heard mac & cheese hyped up to this extent - I'll definitely have to try it!

So many people like her Macaroni and Cheese. So do I!

I'm slowly working my way through the Baking handbook; but I love the peach ice cream with ginger cookies from her website.

Snickerdoodles are the best!

Mac and cheese please.

Though I've never tried a bad dessert recipe from Martha, I must say that her beer braised beef (try saying 3 times fast!) is exceptional!

I've made many of Martha's recipes, but one that is "the most fun" is Severed Fingers -- a cookie for Halloween that is rather starteling when first seen.

Banana Bread from her baking book. With chocolate and coconut added. My favorite banana bread!

Oatmeal raisin cookies. Everyone raves about the chocolate chip, but I'm more of an oatmeal girl.

Pasta carbonara.

My favorite Martha Stewart recipe is a new take on my favorite comfort food, Mashed Potatoes with Golden Onions and Roquefort.

I know a million folks have already said it, but there's a really good reason...

Mac and Cheese!!! (it's the BEST!)

My favorite is the Cream Cheese Pound Cake made in her scored tube cake pan (no longer available . . . I bought two and loan them out to friends) from K-Mart. A simple, easy to make, moist pound cake that is wonderful alone or with fruit on the side. Freezes well and is great toasted. One Christmas I made 28 to give as gifts for family and friends. People still request it as a gift or as a take along for parties.

Her onion soup - she makes the wonderful beef broth from scratch, starting with the roasted bones. Martha was the first one who showed me you needed to roast the bones first for a nice rich beef stock.

Her pie dough recipe!

her white cake was amazingly moist fluffy, everything a cake is supposed to be.

Pan fried chicken cutlets with Indian yogurt marinade

I believe the recipe belongs to Alexis but MS featured it on her website....chocolate chip cookies

The mac n cheese,,,,,,yea

roasted strawberry cheesecake-it always blows them away!!!

The Garlic Rosemary Mashed Potatoes are wonderful.

In the 1980s, Martha Stewart had a beautiful menus cookbook, the name of which escapes me. It was filled with lots of beauty shots and great recipes, including her buttermilk fried chicken. But my favorite recipe of hers, found in that book, was a salad composed of avocados drenched in a warm tomato dressing. So delicious! Unfortunately, that cookbook is at my mom's house and we constantly tussle over who should have it (she, who does not cook regularly, or me, who does).

Because I'm Polish like Martha, I like her recipe for pierogi. Also I use her popover recipe as well.

Several years ago, I followed her recipe for the perfect Thanksgiving turkey. It involved using a cheesecloth. It was the first Thanksgiving I had ever hosted for my family. My mom cried because of how great everything turned out for my first time. I had very little leftovers :)

another mac & cheese fan.

Martha Stewart's Pumpkin Whoopie Pies were outstanding! In addition, I also used her turkey recipe that includes draping a turkey with a wine/butter-soaked cheesecloth and--although it was an intensive process--it produced amazing results.

She has a really easy and delicious Asian salmon recipe that I can't get enough of.

Spinach and cheese puff. No problems getting everyone to eat their spinach with this one.

Her Mile High Apple Pie, I've been making it for years now for Thanksgiving.

Her asparagus-gruyere tart using frozen puff pastry.

My favorite Martha Stewart recipe is her Roasted Turkey recipe, where she uses the cheesecloth while cooking the bird. I've never had as crisp and light turkey skin (which I don't eat, but still...) and moist meat. Thanks for the chance to win.

Chocolate pecan pie

Have to go with the Mac & cheese.

Her mac and cheese is hands down the best!

I tried her recipe for Red Velvet Cake. It turned out beautiful!

Chunky Peanut, Chocolate and Cinnamon Cookies! They rock!

I made my first pie using her pie crust recipe so I would say that one, but I have to say, I love that you can take any of her recipes and it will work.

Years ago I watched Martha make some Whoopie Pies on her show and I was sold. I now make them for special occasions for my kids and they LOVE them. Gotta love Martha!

So... I don't actually know if I've made a Martha recipe before because I get a lot of my recipes from other people, some of whom might have gotten them from her. BUT, some bakers from my town were on her show and they make darn good cupcakes.

OH! But I just remembered we made the roast chicken and potatoes recipe that Jean-Georges made on her show. Does that count?

peanut butter sandwich cookies... they have become one of my go-to cookie recipes!

Lime meltaways are a fav here too.

Mrs. Millman's chocolate frosting. Easy, delicious, and no butter or cream cheese (I don't think either one belongs in frosting)!

Pasta with asparagus and goat cheese. Yum.

My favorite is actually this one - I've been using it for years for cupcakes and topping it with everything from quick icings to swiss buttercreams to coconut buttercreams and whipped chocolate ganaches. Ummmm. Now I want cupcakes again. :)

Her strawberry and cream cheesecake. It's the best cheesecake I've ever had.

macaroni and cheese

molasses cookies and/or chilaquiles (sp?)!!

I'm having a hard time deciding on just one Martha recipe - I'm a longtime fan. Her mother's recipe for Pecan Pie is the one I make most often - it's frequently requested by friends and family, and is a must serve or bring for the holidays. And her mom's Polish Mushroom Soup tastes just like my grandmother used to make.

Ditto on mac & cheese.

The traditional apple pie recipe is the best- the crust always comes out perfectly and the filling is delicious!

I agree that Martha's hors d'oeuvres recipes are amazing. I especially love making her leek and olive tart with two cheeses; whether it's for breakfast, a snack, or an appetizer, it's bound to please.

I make the kolacki cookie and krusciki every Christmas. They are at the top of the list for our family christmas dinner

Her pate brisee... it is so simple and foolproof.

Her babka recipe. It tastes like my great grandma's.

Although I grew up on Betty Crocker's recipe for Chocolate Crinkles, I fell in love with Martha's version called Crackles (I keep the old name though, I like it better). What makes it wonderful is the classic Martha touches - a more precise procedure, better quality chocolate, etc. These cookies are wonderful and a huge crowd pleaser!

Crumb cake. The "New York style" one with tons of butter and that really yummy crumb topping....

Martha's Boston Cream Pie - it's my husband's favorite!

I love Martha's Cookies!
I really want to learn how to cook well!
Who better to learn from than the incomparable Martha Stewart!

I made the Blackberry Peach Trifle one summer for a teachers' picnic; the picnic was held a couple of blocks away from my apartment, so I made an elaborate foil-swan-like topping to shield the trifle from the rain and walked (to the delight of onlookers) over to the party...where I knew absolutely no one and was a new teacher, to boot.

To make a long story short, my colleagues went nuts over the trifle, and it was a great icebreaker. (Apparently I'd found my niche, since I approached every school-related baking activity after that as though it were tryouts for Top Chef.) :) But I still have a soft spot in my heart for those colorful layers of the trifle.

As wonderful as her brownies are, I've never understood the appeal of box brownies.

mac and cheese
