Blogwatch: Sassy Radish's Red Velvet Cupcakes with Cream Cheese Frosting
I think Olga of Sassy Radish is a genius. Why? Because she pinpointed the problem with Magnolia's red velvet cupcakes: the vanilla icing. With her Red Velvet Cupcakes, Olga opted for the Magnolia cake recipe but created a traditional crown of cream cheese to establish red velvets as the king of all cupcakes. She used an entire bottle of red food coloring—how's that for royal blood?
Olga is adamant that homemade cake is as easy as purchased mixes. In her words, "The whole thing was a cinch—and a delicious cinch at that."

yuck. i've had a cupcake from a batch made with a whole bottle of food coloring. not even cream cheese frosting can save them!
they turn your mouth red and taste like food coloring.
please people, use concentrated gel paste! less used, better taste, no vampire mouth!

Not crazy about the whole bottle of food coloring idea, but I definitely agree that cream cheese frosting is the way to go. The slight tang of the cream cheese is a nice off-set to the sweeeeet red velvet.
Am I the only one who ALWAYS thinks of the red velvet armadillo groom's cake in Steel Magnolia's every time red velvet is mentioned? I cannot get that image out of my head, and frankly it's made me not a huge fan of red velvet cake as a whole.

@juliebugsmama - That was my first exposure to red velvet cake, so it's ALWAYS what comes to my mind. My hubby loves the stuff, though, so I've become a fan as well.
And yeah... how can you even think about red velvet without cream cheese icing? Totally non-negotiable in my book. :)

Purists will say that red velvet really needs that whole bottle of food coloring and cream cheese frosting. And only Sauer red food coloring please for any place south of the Mason Dixon Line.
But I oughta try that gel paste...looks like less mess. Whenever I have an order for these I really , really need to be careful with that food coloring.
