Cook the Book: 'Barefoot Contessa Back to Basics'

1. Her recipes always work
2. They're eminently doable
3. Boy, does the woman know delicious

I also feel that Garten manages to empower home cooks in a thoroughly appealing and noncondescending fashion. Whenever I make one of her recipes, I'm supremely confident it's going to turn out well.

For this week's recipes we chose dishes that are perfect for any kind of a holiday get-together, from a Thanksgiving feast to a casual cocktail party or potluck dinner with friends and family.

Doesn't roast shrimp cocktail sound delicious and easy for an appetizer or a pass-around? Or how about the orange pecan wild rice? Yummy! And this Thanksgiving I'm definitely going to make the roasted butternut squash salad with warm cider vinaigrette.

Macaroni and cheese!

Roasted red pepper dip. It's cheese, mayo, more cheese, roasted red peppers, minced garlic, dash of mustard, baked, and served with tortilla chips or crackers.

Goat Cheese with Rosemary Infused Honey, slightly warm, with the honey poured over the cheese, served with slices of baguette.

Chicken Parmesan. It has been a while, but for the longest time it was the go-to dish for gatherings and it was always an enormous hit.

Well, my first-ever marshmallows were based on a barefoot contessa recipe, and they're in high demand, but I guess marshmallows don't actually count as basics. Hmmm... I think the closest thing I have to a "basic" signature dish is chicken pot pie, but I really make that for myself!

Sweet potatoes mashed with goat cheese and truffle oil.

Gazpacho; what could be simpler than a soup you don't cook. Instead of using a blender, I mince all of the vegetables by hand, which gives it a really unique texture.

Roasted pork loin. Everyone loves they way mine turn out; I think they just overcook theirs.

My friends always like my cheese dip with homemade tortilla chips and my buckeyes for dessert.

Roast chicken. And I love Ina's recipe for it!

Spinach gratin and stuffed mushrooms

Dessert of any kind is usually what people ask I bring, more often than not my chocolate chip cookies

I'm always asked to bring my homemade pico-de-gallo...which is finely diced plum tomatoes, vidalia onions, jalepenos, lime juice, salt & pepper, cilantro and sometimes I put mango or pinapple in there to jazz it up a bit. I serve with hot, crispy tortillas and grilled tequila-marinated shrimp. It's fresh, easy and delish, and a big hit at gatherings.

Black bean, mango, and avocado salad. It's easy to make, and I usually only have to run to the store for the mango and avocado. I start with 2 cans of black beans, 1 can of corn, and 1 red onion. Mix with chopped mango, avocado, cilantro, and green onion. Top with a cilantro/lime dressing. Yum!

actually, it's one of hers. the french onion dip from her first book. people go nuts over it at parties. i dont even eat it anymore because i'm completely over it, but i can't not show up with it anywhere.

Also White Bean and Sage Spread sprinkled with crispy Pancetta.

Broiled dates stuffed with goat cheese and wrapped with bacon.

Mashed potatoes. So good and so simple.

Ina's appetizer platter of pate, salami, brie, ham and olives - served with sliced baguette - everyone's favorite!

Crabcakes or Barefoot contessa's carrots.. always get requests for those two.. :-)

I always get requests from my family for my tomato pie. Simply layer slices of fresh ripe tomatoes, fresh chopped basil, and feta cheese. Dab small amounts mayo in randomly.

Hand-made sicilian braciole, stuffed with pine nuts and pesto.

New Mexican Corn Dip - served with corn chips it is always such a big hit and people cannot believe how easy it is to make!

Roasted garlic mashed potatoes. You roast garlic while the potatoes bubble and together, elegant simplicity!

any type of bread.. i make a mean sour dough bread as well as some rockin' pumpkin bread!

My family insists on my romesco sauce - we use it for dipping bread in, as a sauce for grilled pork tenderloin, etc.

3-meat, 3-bean chili (ground pork, ground beef, ground italian sausage). what up.

Beef Stew is a winter basic that gets requests all the time.

My basic cheesecake is always a hit. I do fancier versions as requested. The one most asked for is a white chocolate/cajeta version with toasted macadamia nuts on top. A real showstopper.

Roasted potatoes

I usually bring something different each time, but bruschetta was recently requested. This time I based it on Ina's recipe, using sauteed green peppers and gorgonzola.

When my family gets together at my house, they request spaghetti and meatballs!

My chicken tacos - great for a crowd. Chicken poached in tomato sauce with onions and garlic and spices and then shredded. Served family style with tortillas, rajas, and on a good day some black beans.

Oven Roasted tomatoes... It was the first recipe I made from Tom Colicchio's Think Like a Chef... And I have been oven roasting a batch of tomatoes every sunday for use throughout the week... its so versatile, just using whatever herbs I might have on hand, and it yields the tomatoes and some amazing tomato juices which can be used for other things as well, such as flavoring risottos or stock...

its the definition of a basic recipe that would seem perfectly fit in an Ina Garten book... Taking simple ingredients, an easy follow through, and ending in tremendously easy, repeatable, dependable, and sinfully delicious food....

Crispy Kale
Toss roughly torn kale (destemmed) with olive oil, pinenuts, "crumbled" goat cheese (yes, it's hard to crumble, more like pea-sized flecks with the tip of a butter knife) and some sea salt and roast on a baking sheet until crisp.

A friend made this for me once and it blew my mind, now it's a regular item. Good as a side dish or a snack, like leafy-green cheese popcorn. Everyone demands it now.

Baked brie - a wheel of brie sliced in two, layered with pesto and sun-dried tomato paste, wrapped up in puff pastry and baked til gooey.

Everyone always requests my enchiladas when we gather at my house.

i make THE MOST incredible salads. not even kidding. i'm required to make them every time my family is together.

White pizza. I keep frozen dough on hand all the time, so it's supremely easy to make.

I make a killer herbed potato salad a la jacque pepin.

Glazed carrots with bay leaf.

Everyone really likes my chocolate chip cookies and blueberry muffins. No non-baked foods yet though...I'm still kind of afraid to cook real food for people!

Every year I am in charge of the Christmas morning breakfast and every year I make the Sausage/Egg Casserole (bread, mushroom soup...).

One year I thought it would be nice to serve something "different".

Well, you would have thought I gave the family dog away with all of the moans and groans not to mention the comments.....

NEVER AGAIN! It makes the planning of the menu easy and it is nice that they enjoy it so much.

Cornbread Stuffing!!!!!!

Recently requested and enjoyed by my family was my aunt's spaghetti sauce, which we made by browning pork steak, then adding tomotoes and simmered most of the day until the pork falls apart and becomes part of the sauce. Add meatballs.

Ina's roast chicken is as simple and delicious as you can possibly get. We are doing our Thanksgiving turkey with the same method this year!

Bean and corn salsa. Every stinkin time!

Around the holidays it's my (/Orangette's) fennel and mushroom salad, which is surprisingly always a hit. Most people say they don't like fennel, then love it when they try it in this simple salad.

Also, my mom's chocolate sheet cake.

Mmmmm, potato casserole...thingie. I don't have a fancy name for it.

The slow-cooker baked beans I make get a lot of requests, especially from people who've only ever eaten canned.

My friends love my "Midwestern" enchiladas...I call it that because it is pretty much the most in-authentic enchilada recipe ever...but we love it! :)

Haha- pink salad is always my responsibility at Easter. Never had it? Red Jell-O, Cool Whip, and cottage cheese. Maybe throw in some pineapple or fruit cocktail. Oh boy ;o) Definitely not high-class!

My tiramisu. It really is basic and easy. Whip some cream into marscapone and sugar, mix espresso with amaretto, layer with soaked ladyfingers.

I'm always in charge of dessert, and ever since a barbeque last summer, everyone asks me to make the lemon tart I made from Smitten Kitchen's website. Definitely a knock-out, and dead easy. I've been asked to bring it to Thanksgiving dinner this year, but citrus dessert at T-giving? I'm bringing pumpkin instead (my grandmother's pumpkin chiffon pie--what people used to ask for before the Great Lemon Tart appeared.)

I can't have anyone over for dinner at my house if I don't make my salad. Simple salad of romaine, red peppers, green peppers, roma tomatoes, cucumbers, feta and red onions. I top it with a quick dressing of fresh ground black pepper, extra virgin olive oil, Lawrey's season salt and balsamic vinegar -it's so easy to make and tastes so good!

I make Indian style fried shrimp that are marinated in yogurt, cumin, lemon juice and chiles and then dredged in flour. They are always a crowd pleaser!

It depends--I prefer to make dessert--so the top contenders would be Marcel Desaunier's Black Gold Cookies, Dorie Greenspan's World Peace Cookies or King Arthur Flour's Best Fudge Brownies. (I know lots of chocoholics) I also make lemon cornmeal ginger cookies that have quite a following, even among lemon dessert haters. But among everything else, my biscuits (I just follow Fannie Farmer's recipe, nothing special) are always GONE in no time--and they're so easy to make! I've already been enlisted to make 3 dozen for Thanksgiving!

That would be my evil red sangria.

I make a great snack recipe that I got from grandma that everyone loves at parties. Little toasts topped with a mixture of mayo, garlic, onion, parmesean cheese and paprika. Broil and serve hot!

Brownies. Specifically, Ina Garten's Outrageous Brownies. They are amazing, and they always go SUPER fast.

I have two go to recipes--grilled tri tip with with a killer soy/ginger marinade and roasted red potatoes. Also, Julia Child's recipe for Zinfandel of Beef, served with creamy polenta---perfect for company on a cold winter evening.

It's not a "dish", per se, but I am always asked to bring the sangria!

Ranch spinach dip, with Triscuits and sourdough bread.

Alternately, vegan-friendly gingersnaps, which are made with pumpkin and lots and lots of spices.

My artichoke spinach dip… with nutmeg and shallots and so many good things. I am not allowed to arrive anywhere without it. The other are my gyoza, which are, admittedly, killer.

In the summertime, it's my guacamole. MY recipe is very simple, only about 8 ingredients, but I think I have the balance of flavors down pat. This time of year, My sweet potato casserole! Yes, it's the deal with the pineapple and marshmallows and all that good stuff, but I have a few secret ingredients and everyone seems to love it.

mashed potatoes - a ricer then butter, half&half and smidge of cream cheese

Ina's recipe for spaghetti and meatballs are to die for! I make it frequently. My son's favorite!

The basic dishes we are asked to bring are
1) peas (obviously very simple), and
2) Roast stuffed turkey -- for Thanksgiving, Christmas or Easter

salmon cakes, or pork schnitzel. A favourite of many of our friends and family.

raspberry black bean dip--raspberry/chipotle salsa (which you can find at nearly all grocery stores now, not just specialty ones), a can of black beans (rinsed and drained) and a package of cream cheese. Spread the CC in a baking dish, layer with beans then salsa and bake on 350 for 25-30 mins (bubbly). DELICIOUS and couldn't be easier--it's always a hit!

Lemon yogurt cake is my signature dessert based on an Ina Garten recipe. My go-to entree is pan roasted chicken.

I make this really excellent spinach and artichoke dip that my family is always asking I bring. For Thanksgiving I am always asked, by my in-laws to bring the green bean casserole. They never had it until I brought it along during my first Thanksgiving with them. I use fresh green beans and mushroom which makes such a difference.

My mother always requests chocolate-chip cookies.

During the holidays, homemade cranberry sauce for sure.

Figs with pistachios and ricotta or mascarpone.

Roasted root vegetables, crumby noodles, and the dessert of my choice - always homemade.. Oh, and anything cooked on the grill, mashed potatoes and gravy. They know I love to cook, so..........

Hershey's Best Brownies. Or for family dinner gatherings, such as Thanksgiving, steamed carrots tossed with butter and flat leaf parsley. Simple but really delicious.

Depending on the event, usually hot artichoke dip, pumpkin dump cake, slow cooked brussel sprouts or chocolate truffles.

Spaghettie with butter, chopped parsley and parmesan reggiano. Can't get much simpler or tastier.

Homemade bread or rolls.

I make a chili spiked, brothy corn chowder that my roommate used to beg for, based on the recipe from the New Basics cookbook.

bruschetta based on a dish served at Mandola's in Austin: grape tomatoes cut in half, olive oil, basil, garlic to taste served on grilled bread of good Italian quality rubbed with a garlic clove

stuffed mushrooms or spinach artichoke dip.

It would be a toss up between either roasted vegetables which are always wonderful with anything or brushetta. Thanks for the chance to win!

Chocolate chess pie. It never fails, it always is delicious, and any issues with cracking in the top can be hidden under a little bourbon whipped cream. I gave the recipe to one of my friends to use the first time she cooked dinner for a guy . . . they now have been married almost seventeen years and I credit it all to the pie recipe.

My deviled eggs get requested the most. Second would be my chicken n dumplings.

Pies or cookies. I seem to be the baker in my group of friends.

Brownies (based on Ina's "Outrageous Brownies") I do lots of variations, but if I show up at a potluck, a family dinner, or a bakesale without them, I might as well go home! LOL!

Definitely Ina's roast chicken recipe. It really really is delicious, Ive never had better gravy too. I have even adapted her gravy recipe to my meatballs, substituting chicken stock to beef stock. Works like a charm :)

Vegan Meat Sauce Spaghetti and Tacos!!

This is why I joined the Barefoot Bloggers! I can't say I really have a dish that everyone likes but people usually like my cinnamon buns and cookies.

Buffalo chicken dip: two sauteed chicken breasts, shredded; a bottle of bleu cheese dressing, a package of cream cheese, and a cup of hot sauce. Combine in a 9 x 13 pan, and bake on 350 for 20 min. Serve with tortilla chips, carrot sticks and celery. It's so easy, and not fancy at all, but AMAZING.

Everyone requests me to make raspberry clafoutis for brunch. Sounds fancy but it's 5 ingredients, mixed together, and poured into a pie pan. 10 minutes later, puffy crepey eggy fruity goodness!

Roast chicken or mashed potatoes. I do both well, I think.

Wild&Original Rice, Three bean and Peppers salad with a lots of fresh herbs and toasted cumin. (WoW! that's a mouthful, but so is this salad which is unbelivably amazing). I take it to work all the time and co-workers request it for the next event before the container is even empty. (about 30 minutes for 24 people to finish a 5 pound batch).

Corn pudding. It's better the next day, but into slices, covered in parmesan and sauteed in butter.

Well, I guess it's not really a dish, per se, but folks are always requesting that I make these pumpkin cookies that are just divine, if I do say so myself.

I make a pasta salad that everyone loves, with orzo and feta cheese. The dressing is a simple olive oil, fresh lemon juice and fresh dill.

The dish that my family always insists that I bring to gatherings (well, in the summer at least) is Ina's French Potato Salad.

Ridiculously enough, that spinach dip you make with a packet of Knorr vegetable soup mix. Its nothing even resembling interesting or original, but lets face it, everyone loves the stuff (including me!)

I also get requests for homemade pickles, marshmallows, and cookies on a regular basis (and no, not all together!)

Roasted chicken breast - skin on / bone in - quickly pan fried to crisp the skin, then flipped and roasted on the pan in a hot oven (450F) until done. White wine to deglaze the pan and create a pan sauce optional. Only ingredients used are chicken, olive oil, salt/pepper and white wine.

Hummus -- chickpeas, tahini, lemon, olive oil and parsley with a bunch of random spices thrown in at the end depending on my mood.

Lasagna. Or Bread. Or grilled veggies.

For Thanksgiving gatherings, my cranberry relish made from just cranberries, sugar, and oranges is always in demand.

Frankly? My cheddar chive scones. Which are based on the cheddar dill scones in Ina's first (I think) book. Everyone loves them. I call them "magic scones" because even people who love them eat these delicious, cheesy delights with passion.

Yeast rolls. Very simple to make, but not many people make rolls from scratch anymore.

Depends on the weather, but in the spring I am usually requested to make banana pudding.. in the winter I usually make butternut squash soup or creamed corn.

For holidays it is always my pumpkin roll. For most everything else, any of my desserts. I love making them and people love eating them. :)

My boyfriend is known for his meatballs. Seriously. Every time work or family has a gathering he is asked to bring his famous balls. I must admit, the crockpot comes home practically licked clean from one event or another.

For dessert, my go-to recipe is fudgy brownies. I also make a super-easy peanut butter fudge that's a big hit around the holidays.

For this big party my friends throw twice a year, my standbys are either my lemon drop mini-cupcakes or some Bailey's Boozemuffins (courtesy of NeverBashfulWithButter). The first is light and refreshing, and the second is super moist and decadent.

My desserts are what people ask me to make. They love my famous cookies: Chocolate chip, Snickerdoodles, Peanut Butter, Oatmeal and Bar cookies.

For the past 7 years, the only request I get from friends is my guacamole. Avocado, red onion, cilantro, lemon and lime juice, kosher salt and cumin. I dissolve the salt in the juice so that it permeates throughout that luscious green flesh. I was at work last night and saw a friend who introduced me to his date as the "one who makes the guacamole". I have arrived!!!

A simple cheese ball, made with just shredded cheddar and cream cheese and served with crackers, always seems to please. I love it as is but toppings can always be added. Also blondies for dessert are loved.

Cornbread dressing to serve with turkey/chicken. I always have to double this recipe.

My hot cheese dip is always requested and so easy! 3 cups of assorted shredded cheese mixed with 3/4 c mayo and a can green chiles and some chopped onion, top with pepperoni and sliced olives. Pop in the oven and serve with torilla chips.

My New Orleans pecan pie never lasts too long once it's out of the oven...
