Vegan Crepes for Breakfast

I am not vegan, but would totally eat these. Over at the blog Method, they used soy butter and soy milk for the crepes, and mixed berries, apple cider, and honey for the pink drizzle. Soy products in a classically French recipe? My inner mad scientist is fascinated to see this actually worked.

The angry vegan police are going to jump out of the woodwork any moment and declare these non-vegan for having honey in them.

However, they look amazing and this vegan would totally scarf them down.

Hey! I made these, so thanks for posting them! . . . and I know . . . the vegan police wouldn't agree with my inclusion of honey (I'm not currently vegan, but when I was -- I did eat honey).

However, maple syrup would be a fine substitute (I just didn't have any on hand).

I use plain soy milk in recipes all the time. I probably wouldn't use it to make a milk-intensive item like a custard, but you can't really tell the difference when cooking or baking most dishes

Agave nectar would make a fine vegan sub for the honey. I'm not vegan or even vegetarian, but I love agave nectar and use it in conjunction with maple syrup, apple cider, and chopped berries to make pancake syrup.
