Weekend Book Giveaway: 'Marcella Remembers'

20081011-marcella-remembers.jpgThe first lady of Italian cooking is undoubtedly Marcella Hazan. Is there any serious eater who has not made something delicious from one of her books? I doubt it. I for one am partial to the pork-cooked-in-milk recipe (sooo good).

Hazan has written what is apparently quite a controversial memoir, Amarcord: Marcella Remembers. According to the New York Times, Hazan doesn't shrink from calling out certain members of the food establishment.

Thanks to the good folks at Gotham Books, we've got five (5) copies of this snappish, non-warm-and-fuzzy memoir to give away. Just tell us here in the comments of this post what your favorite Marcella Hazan recipe is.

That pork-in-milk, and a simple tomato sauce with butter and onion. Pure tomato flavor and a silky buttery texture. I love memoirs!

From Essentials I would have to say the Lamb stew with green beans and vinegar. Yum!

The Pea, Bacon, and Ricotta sauce for pasta. Especially made with fresh peas! yum!

From _The Classic Italian Cookbook_: Pan-roasted chicken with garlic, rosemary, and white wine. It was one of the first recipes I ever used and remains a favorite--a simple, but lovely dish.

I love baking, and her focaccia recipe is top notch. I'm also a big fan of the pesto recipe - so simple yet so delicious.

Her pan-roasted spareribs with sage and white wine are one of the most addicting things I have ever tasted. They have to be served with something like mashed potatoes or even bread, the sauce is so good you need something to soak it up...mmm.

The tomato sauce with butter and onion. I was doubtful, since I tend to make kitchen-sink tomato sauces, but it was delicious!

My favorite Marcella Hazan recipe is from Marcella's Italian Kitchen: Ruote di Carro col Sugo di Salsice, Panna e Pomodoro (Cartwheels with Sausages, Cream and Tomato).

As the weather turns colder I cant help but call up the delectable Pasta e Fagioli from her book Essentials of Classic Italian Cooking.

Vitello tonnato -- who knew veal and tuna could be so good together? I confess, the tomato/butter/onion sauce has been my go-to sauce since orangette blogged about it...

Oh, that is easy! it's the Arrosto di maiale al latte, which the first commenter mentioned too. That is just a superb dish, almost infallible, and totally unlike anything I'd eaten before. But Marcella's recipe for Ragu Bolognese is also perfect.

Chicken Fricasee

Just one? Shirley you jest. Let's start with Chicken with Porcini, Bolognese Meat Sauce, Red Snapper with Mushrooms, and Stuffed Calamari.

As a very beginner cook, I'm embarrassed to say I haven't tried any of her recipes. You can be sure I will now though, especially after reading through these comments!

On any given Sunday, "fricasseed chicken Abruzzi-style with rosemary, white wine, chery tomatoes and olives." This one is from Marcella Cucina. Despite the long title, it is really a pretty simple recipe.

A lot of things come to mind - how to handle veal to preserve the texture and how not overcook it -

But, especially, one idea that I've used for several years - a red bell pepper, avocado, celery and black olive combination dressed simply with a classic vinaigrette. It's perfect with pork tenderloin and polenta served with a creamy, slightly mustardy, sauce.

Risi e Bisi was the first Marcella recipe I ever made.

My favorite recipe is her pot roast braised in wine. To die for!

I'm a virgin, so I'll say the next one I try. I know her rep, but not her recipes.

Pork in milk---It was the first thing I ever made for my husband and it's one of his all time favorite dishes--and he insists he doesn't eat pork--heh heh.

Pork and milk, close 2nd is rice and cabbage soup.

Thin spaghetti with anchovy tomato sauce.

Paglia e fieno alla ghiotta from The Classic Italian Cookbook - egg and spinach noodles with cream, ham and mushroom sauce.

I make both of these regularly.

While I do love Ms. Hazan's Lasagna with Ricotta Pesto (P.221 Essentials of Classic Italian Cooking) not everyone in my family is a fan of either ricotta (my son) or pesto (my husband). So far the recipe that makes everyone happy is the Risotto with Beef, Rosemary, Sage, Barolo Wine, Alba Style (P.255 Essentials). Her recipe calls for ground chuck but I like to use finely cubed pieces of left over beef roast of any variety and with this big Italian red wine. I also like to add chopped up cremini mushrooms in with the garlic and pancetta. You must try this!

i love her frittata made with potatoes...

My mom used to make this wonderful potato salad from Marcella Cucina (I think that was the name of the book). It had no mayo, just oil and vinegar as the dressing. It was just delectable. I don't own the book but I remember the salad very well.

I read the book before I gave it to her as a gift. I have her first book and love it but don't have a favorite recipe from it.

im a pretty simple guy so a nice hearty soup always is perfect. my favorite is her pasta e fagioli from the amazing book "Essentials of Classic Italian Cooking".

From her Essentials cookbook I love and frequently use the basics - the pasta, risottos, crespelle (oh so good instead of pasta for canneloni!), gnocchi, and polenta recipes. I couldn't pick an absolute favorite. There are so many recipes from her book that we love - and it's so much fun to recreate food memories for my husband who spent time in Italy while in the Service.

I love her no nonsense style - and the beautiful simplicity of so many of her recipes shine in the incredible flavors. It's a well read book, with lots of pages with book marks!

Clearly pasta e fagioli -- I can hardly wait for a the first snowstorm of the year to make it. It is the perfect "storm" food because I almost always have all of the ingredients on hand!

I have cooked many of her delicious recipes, but my favorite is still the first one I cooked back in the 70's, the lemon Roast Chicken.
