Not bacon!

Happy World Vegetarian Day! The holiday was founded in 1977 by the North American Vegetarian Society and kicks off October as Vegetarian Awareness Month. If you're vegetarian, check out some of these select vegetarian (and vegan) recipes on Serious Eats. If you're not vegetarian, try to lay off the bacon for one day—it's not so bad. Though many people have gone through vegetarianism flings, who out there feels like a real, true vegetarian? Recipes after the jump.

Ginger fried rice may be my favorite thing ever posted on this site. I use leftover rice from chinese take out and eat it for breakfast. Great recipe!

I've never understood the whole 'vegetarianism and bacon thing'--isn't bacon the meatiest, most unhealthy form of animal protein, taken from one of the most intelligent and personable animals used for food?

Anyway, I have a feeling that given the economy, there will be more vegetarians in the next few months perusing the store aisles!

@HeartofGlass -- I TOTALLY get the "bacon thing". I've been vegetarian now for a couple of years, and I have found it a snap to turn away from all animal protein EXCEPT bacon and pancetta. I still dream of them from time to time, and the smell of either of them cooking still makes me *swoon*. Don't get me wrong, I don't eat either of them, (I share your respect for the animals from which they come too much), but my taste buds still lust after them.

The only thing I would have found harder to give up would have been chocolate.

Oh... I forgot! Happy World Vegetarian Day to everyone! This is truly a day to celebrate the world's bounty that comes from the soil to nourish us all.

I became a vegetarian in 1999. I started eating fish again in 2005, so I'm not really a true vegetarian. I've been trying to go back to true vegetarianism by only eating fish when there are no other options.

I've been vegetarian 26 years, 3 of those have been vegan.
