Bacon Cinnamon Rolls
Cinnamon rolls have been vegetarian for too long. Too long.
While grocery shopping the other day I picked up a tube of ready-to-cook cinnamon rolls and thought hey, I wonder how these would taste with bacon. As I read the back of the package I was reminded that the rolls are actually un-rolled when you remove them.
Yup, he did it. He made a bacon cinnamon roll. After rolling a bacon strip up with cinnamon roll dough, he just went ahead and baked those suckers. [via Serious Eats community member dithie]

This will not keep well. You have to serve these warm and then thats all.
One shot one serve. If they are super good won't even be an issue.

This sounds like a 'goodie' but I think I would cook the bacon a bit and blot some of the grease out.

i have to wonder about this... if the bacon isn't cooked to a crisp, then its going to be a completely different texture than the roll, and you may get some unpleasant chewiness are you try to bite into the roll. Alternatively, you may wind up with cheese pizza syndrome: where accidentally manage to remove ALL the cheese from the slice in your first bite.

I'd bet my first born son that he pre-cooked the bacon, just to the point where it was still pliable.

Glad this one peaked your interest folks. Nope, I did not pre-cook the bacon. I loved the texture and the bacon was cooked just right with little or no grease. I used Hormel's Black Label bacon and baked according to the directions on the rolls. If anyone makes them, we'd love to hear your impressions over at BaconToday.com!

I ended up making these this weekend - they turned out great and were very popular! Pics at my flickr.
next time, though, I think I'd pre-cook the bacon a little - it wasn't quite crispy enough for my liking.

I would suggest blanching the bacon in water to reduce some of the slippery fat issue as well as insuring the bacon will crisp
